Homemade Vietnamese Beef Stew (Bò Kho). I enjoyed this amazing stew by dipping a fresh baguette to absorb all that flavor! ❤️🍲

♨️ Directions (serves 4-6):
⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1️⃣ Marinate the beef
• Buy 3 lbs of beef (shank/brisket)
• Cut beef into 1 inch cubes
• Marinate beef with: 2 tsp sugar, 1 tsp salt, 1 tsp pepper, 2 tbsp bo kho powder (or five spice), 1 tsp chicken stock, 2 tbsp soy sauce, 1 tbsp grated ginger, 1 tbsp minced garlic
• Cover and marinate over night in the fridge
⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀
2️⃣ Cook the beef
• In a pan, heat 1 tbsp vegetable oil and stir-fry 1 tbsp garlic, 4 stalks of lemongrass (cut into 3 inch pieces), 4-5 star anise, and 1 stick of cinnamon with the marinated beef
• Cook beef to medium rare and turn off the heat
⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀
3️⃣ Make the soup
• In a pot, add the cooked beef, 1.5 cups of tomato sauce, 1.5 cups coconut water, and 6 cups of beef broth (or water, but it won't be as flavorful)
• Peel (4-5) carrots. Cut them into bite size pieces and add them to the pot.
• Cover and cook soup until the meat and carrots are tender. Adjust with salt/sugar/bo kho powder as needed.

**optional: cut the carrots into flowers just for fun (see highlights); also optional: sauté the carrots with: 1 tbsp oil, 2 tsp sugar, 1 tsp salt, 1 tbsp oyster sauce before adding it to the soup for more flavor.

4️⃣ Time to eat!
• You can garnish the soup with thai basil, peppers, fried shallots and/or sliced onion.
• Enjoy with a crunchy baguette, rice, or noodles. 👌🏻

This is a very simple recipe that you can put together in a rush. Better yet, it is very healthy and vegan. Use a variety of mushrooms like oyster mushroom, enoki (golden mushroom), shiitake, straw mushrooms or any other edible kinds that you can find in your region. It must be exciting to try out this dish in the fall after a mushroom harvest!

Ingredients
1 tablespoon minced garlic
3 tablespoon vegetable oil
1/4 cup tomato sauce
1/4 cup soy sauce
2 teaspoon sugar
1/4 teaspoon chili flakes
1 2/3 pounds (750g) fresh pho noodles
7 ounces (200g) various mushrooms, roots removed and separated or sliced2 shallots, thinly sliced
Salt and pepper
2 scallions, chopped
2 tablespoon roasted sesame seeds
1 tomato, sliced
Instructions
1. Heat a wok on medium, add 2 tablespoons vegetable oil and fry the sliced shallots till golden brown. Remove the fried shallots with a slotted spoon and transfer to a small bowl to use for garnish.
2. Into the remaining oil in the wok, add half the minced garlic and sauté till fragrant. Then add the tomato sauce, soy sauce and sugar. Stir well and simmer for 30 seconds till smooth. Add chili flakes if desired. Turn off the heat. Transfer one third of the sauce to a condiment bowl to serve as dipping.
3. Separate the noodles with your fingers and toss with the remaining sauce in the wok.
4. In a pan, add 1 tablespoon vegetable oil and sauté the rest of the minced garlic till fragrant. Add the mushrooms and quickly stir-fry for 1 to 2 minutes. Depending on the kinds of mushrooms you use, you might add the ones that take longer to cook first (like king oyster or beech mushrooms) and then the others like enoki (golden mushrooms) or straw mushrooms. Season with salt and pepper and take off heat.
5. Divide the noodles into serving plates. Top with the sautéed mushrooms and garnish with chopped scallions, roasted sesame seeds and fried shallots.
6. Serve with the tomato slices and the dipping sauce as the side.

INGREDIENTS / NGUYÊN LIỆU:
- 150gr round beef/ thịt bò mông hoặc thăn bò
- 200gr noodle/ bún
- Peanut/ lạc
- 1/2 carrot, 1 kohlrabi/ cà rốt, su hào
- Salad, coriander, marjoram, mint/ Xà lách, mùi, kinh giới, bạc hà
- Salt, pepper, fish sauce/ muối, tiêu, nước mắm
- Dry onion, garlic/ hành, tỏi khô
HOW TO MAKE/ CÁCH LÀM:
Follow the steps for the best taste/ Làm theo các bước sau để có bát bún bò ngon nhất
- Cut beef into small pieces, season with garlic, salt, pepper. Keep for 30 mins for better taste (Thái thịt bò ngang thớ theo miếng nhỏ vừa miệng, nêm củng tỏi băm, hạt nêm và tiêu cho trộn đều ngấm gia vị khoảng 30 phút)
- Make sweet and sour carrot and kohlrabi by soaking in a bowl of: water, sugar, vinegar, and some salt. Keep for 30 mins (Làm gỏi và rốt và su hào bằng cách ngâm trong dung dịch nước, đường, dấm, và 1 chút muối, ngâm khoảng 30 phút )
- Crush roasted peanut (Giã nhỏ lạc rang)
- Make sauce with: 5 spoons of water, 2 spoons of fish sauce, 1 spoon vinegar and 3 teaspoons of sugar (Làm nước mắm trộn theo tỉ lệ: 5 thìa nước, 2 thìa nước mắm, 1 thìa dấm và 3 thìa cà phê đường )
- Add vegetable salad, noodles for one portion (Cho rau thái nhỏ vào bát, rau gồm: xà lách, kinh giới, rau thơm húng và cho bún cho vừa 1 suất ăn )
- Stir fry beef with garlic and beansprout on high heat, just quickly for better taste then put to the bowl (Xào thịt bò lửa to cùng với tỏi và giá đỗ, thịt bò cho trước, giá đỗ cho sau, xào vừa phải để thịt mềm ko dai. Sau đó cho thịt bò vào bát )
- Topping with carrot and kohlrabi, crush roasted peanut, fried dry onion and coriander. Pouring sauce for the last step (Thêm gỏi, lạc giã, hành khô phi và 1 chút rau mùi. Cuối cùng là trộn cùng với nước mắm trộn và thưởng thức !
