【西班牙美食 & 食譜 ~ 海鮮飯(Paella de marisco)】
今天有網友問說,她現在正在西班牙,剛看到網路上近日的文章,推薦馬德里燉牛肚(Callos a la madrileña),所以問我在哪家餐廳可以吃到?
我第一個想到的是:這是冬天的菜耶!
就如我在新書《西班牙,再發現》裡說的,西班牙菜有分季節,夏天吃冷的,冬天吃熱的(有湯汁、熱騰騰的菜),所以冬天的菜跟夏天的菜不同,西班牙人不常在夏天吃馬德里燉牛肚這道菜,如果吃這道菜,也是以 tapas 方式「淺嚐」,因為,西班牙人不會在四十度高溫的夏天吃一大盤熱乎乎的馬德里燉牛肚!(真正認識西班牙的人不會在夏天推薦馬德里燉牛肚這道菜!)
現在是夏天,除了各式沙拉、冷湯之外,西班牙人最常吃的就是海鮮飯(Paella de marisco),事實上,夏天是大家到海灘度假、全家享用海鮮飯(Paella de marisco)的季節。
觀光客都西班牙海鮮飯 Paella de marisco 這道名菜,所以,到西班牙一定要嘗一下海鮮飯。不過,到餐廳點海鮮飯要注意幾件事:
1. 其實 Paella 是指「燉飯」,Paella 有很多,海鮮飯是「Paella de marisco」,龍蝦飯是「Paella de bogavante」,雞肉飯是 「Paella de pollo」,魚肉飯是 「Paella de pescado」,蔬菜飯是 「Paella de verduras」,甚至還有海產山產飯「Paella Mar y montaña」或是「Paella Mixta」,是把海鮮、肉類、魚類通通丟進鍋裡燉飯。
2. 道地的西班牙海鮮飯以我們東方口味來說,較鹹較硬,如果不習慣,可以在點菜時強調「少鹽、煮爛」
3. 海鮮飯最少要煮 20 分鐘,趕時間就別點海鮮飯
4.海鮮飯的份量很大,通常 6 個人點 3 人份就吃不完了。通常很多餐廳規定最好要點兩人份的海鮮飯,如果是一個人旅遊,兩人份的海鮮飯吃不完,可以在星期四到各個餐廳看一下他們的「今日特餐 (Menú del Día)」,因為許多西班牙餐廳在星期四把海鮮飯當成「今日特餐(Menú del Día)」,這樣就可以吃到個人份的海鮮飯了。至於為什麼西班牙餐廳在星期四把海鮮飯當成「今日特餐(Menú del Día)」,請參考導遊新書《西班牙,再發現》:http://www.books.com.tw/products/0010672176
5. 要吃海鮮飯要到海鮮餐廳,別到便宜的、路邊 bar 吃海鮮飯,這是給觀光客吃的,都是冷凍預煮食品(例如這個影片上的:http://youtu.be/sOUiHCID3LU)。

【到西班牙旅行的最佳伴手禮 ~ 海鮮罐頭】
曾遇過幾個老饕客人,千里迢迢到西班牙買海鮮罐頭,很辛苦地扛回去 ..... 還好,他們是商務艙,那些蠻重的海鮮罐頭沒有超重。
我知道西班牙的海鮮罐頭很棒,棒到巴塞隆納有名的 tapas 酒館 Quimet & Quimet 都是直接拿海鮮罐頭來當食材(沒用新鮮海鮮),他們家 90% 的 tapas 都是冷的,直接拿醃製的魚肉(鮭魚、鯷魚)或是罐頭裡的海鮮加上新鮮蕃茄泥、優格、烤紅椒、橄欖油、果醋等東西製成他們家世界馳名的 tapas 了。聽朋友說,Anthony Bourdain 在他的旅遊節目上吃了 Quimet & Quimet 的 tapas 之後一臉驚喜,從此 Quimet & Quimet 就多了很多老饕觀光課客。

Hoy vamos a aprender cómo hacer Tortilla de Patata con Quelpo Japonés. Tortilla de Patata es uno de los platos españoles más típicos. En mi receta yo no voy a freír las patatas en aceite de oliva, porque engorda. Pero al vapor en la olla (o sartén) con una cucharada de aceite de oliva. Esta idea es muy saludable. Espero que os guste :)
Today I am going to show you how to make Japanese-Style Spanish Omelette (Potato Tortilla). Potato Tortilla is one of the typical spanish dishes. In my recipe, I am not going to deep fry the potatoes in olive oil (because it is fattening) but steam them in a pan (or a pot) with a tablespoon of olive oil! This is a very healthy idea. I hope you like it!

Tortilla de Patata con Quelpo Japonés (How to Make Japanese-Style Spanish Omelette)
Difficulty: Easy
Time: 25min
Number of servings: 2 people
Necessary Equipment:
18cm (7inch) non-stick frying pan (or pot is okay if you can flip the omelette over)
Ingredients:
3 eggs
1 (160g=5.6oz.) potato
1/4 (50g=1.8oz.) onion
1 clove garlic
1 tbsp. olive oil
10g (2 tbsp.) Shio-Kombu (salted kelp)
Directions:
1. Cut the potato in half lengthwise. Then cut into thin slices. Thinly slice the onion. Mince the garlic.
2. In a 18cm (7inch) frying pan (or pot), heat the olive oil and saute the garlic until fragrant. Then add onion and potato, and saute until evenly coated with oil. Cover, turn the heat down to low, and slowly cook for about 10 min (stir once if possible) until the potato slices are fork tender. Stop the heat and let them cool until just warm. (You can microwave them at 500w for 5 min.)
3. Beat eggs in a bowl, add Shio-Kombu and the cooked vegetables, then mix well.
4. In the same pan (add olive oil if necessary), pour the egg mixture into the pan and spread over the surface. Cover and cook on low for about 10 minutes until you can flip the omelette without breaking it. Then cook the other side.

Tuna Egg Bite-Size Tamagoyaki Sandwich
Difficulty: Easy
Time: 15min
Number of servings: 8
Necessary Equipment:
18x13cm (7x5.1inch) tamagoyaki nabe (rectangular omelet pan)
Ingredients:
1 egg
1 tbsp. milk
2 tbsp. Panko (bread crumbs)
2 tbsp. (30g=1oz.) drained canned tuna
2 tbsp. frozen green peas
2 tbsp. finely-chopped onion
1 tbsp. shredded cheese (parmesan, mozzarella, cheddar, or any kind is okay!)
salt and cracked black pepper
cooking oil
ketchup
Directions:
1. Beat egg and milk in a bowl. Soak panko (bread crumbs) in the mixture.
2. Add drained canned tuna, defrosted frozen green peas, finely-chopped onion, and shredded cheese. Then mix well and season with salt and cracked black pepper.
3. Heat cooking oil in a tamagoyaki nabe (rectangular omelet pan) on low heat, pour the egg mixture into the pan and spread over the surface. Then cover with aluminum foil and cook until you can flip the omelette without breaking it. Then cook the other side.
4. Let cool until you can handle it. Cut into 16 square pieces. Sandwich 2 pieces of tamagoyaki with ketchup. Then secure with sandwich picks or bento picks if you have.

Wasabi Guacamole Japonés (Japanese-Style Wasabi Guacamole)
Difficulty: Very Easy
Time: 10min
Number of servings: 2 people
Ingredients:
1 ripe avocado
100g (3.5oz.) sashimi grade red tuna
50g (1.7oz.) tomato
1 tbsp. or more Parmigiano-Reggiano
1 tbsp. lemon juice
1 tsp. Usukuchi Shoyu (light-colored soy sauce) *saltier and has a thinner texture than the regular dark-colored soy sauce
1 tsp. or more Wasabi in tube *freshly grated Wasabi is perfect
1 tsp. sesame oil
chopped green onion (or asatsuki) *if preferred
unflavored tortilla chips
Directions:
1. Bring a pot of water to a boil, dip the tomato for a few seconds to soften the skin, then peel. Seed tomato and cut into small pieces.
2. Cut red tuna into small pieces.
3. Using a fork, roughly mash the avocado. Add lemon juice (to prevent browning) and mash some more to coat.
4. Add Usukuchi Shoyu (light-colored soy sauce) and Wasabi mixture and sesame oil. Using a spoon, gently mix to keep the flavor of wasabi and sesame oil.
5. Then, fold in tomato, tuna, and freshly grated Parmigiano-Reggiano.
6. Sprinkle some chopped green onion (if preferred) and serve immediately with tortilla chips.
*Another way to serve: Serve on top of toasted baguette slices with Shiso leaves! Sprinkle white sesame seeds and/or chopped green onion if available.
