Spice N' Pans goes live in public! This is Roland's first live cooking demonstration held at Takashimaya in Singapore. Held on 9 March 2019, Roland demonstrated very easy recipes to prepare Chinese Soy Sauce Chicken as well as Chicken Rendang on the spot. Even though Roland is used to doing presentation in front of hundreds at his company events, this live cooking demo was both a nerve-wrecking as well as exciting experience for Roland because this was his first time cooking in front of so many pairs of eyes :)

Ingredients used - Soy Sauce Chicken

Serves 10 pax
Soya sauce chicken
1kg chicken (thigh)
1 thumb size ginger
4 stalks spring onion
1 whole bulb garlic
3 pcs cinnamon bark
12 cloves
3 star anise
25 grams rock sugar
1 cup dark soya sauce
1 litre water
4 tablespoon light soya sauce
4 tablespoon Chinese rice wine
1 teaspoon salt
Marinade
2 tablespoon dark soya sauce
8 tablespoon light soya sauce
4 stalks spring onion (lightly bruised)
4 cloves garlic ( bruised)
Ingredients for Chicken Rendang

Serves 10 pa
1kg chicken boneless thigh
Cooking oil
2 cinnamon bark
5 cloves
3 star anise
5 cardamon pod
2 cups thick coconut milk
3pcs kaffir lime leaves (thinely sliced)
5pcs kaffir lime leaves (crushed)
1 cup grated coconut (lightly toasted till light golden brown)
Salts and sugar to taste
Spice Paste
10 shallots
1 inch Galangal
1 inch Ginger
4 stalks lemongrass
6 cloves garlic
1 1/2 teaspoon tumeric powder
15pcs dried chilli (reseeded and rehydrated)

Many people around the world may have heard of Singapore. Yes, we're the mini country that hosted Donald Trump and Kim Jong Un in the same breadth. Just to give you a better perspective, United States is about 13,673 times bigger than Singapore or about half the size of Los Angeles, 2/3 of New York City. London is more than two times the size of Singapore and Singapore is only 2/3 the size of Hong Kong. Yes we are really a very small small city.
Home to 5.9 million population currently, Singapore is a multiracial and multicultural country with about 76% of the citizens made up by Chinese, 15% by Malays and 7.4% by Indians. We also have Eurasians in our citizen mix.
English is our first language and depending on which ethnic group we belong to, we take our mother tongue (e.g. Chinese, Malay, Tamil) as second language. The older generation (those born in the 50s or earlier) usually do not speak English because back then, English wasn't made the first language.

This is a roaming night market in Singapore aka Pasar Malam. Pasar Malam is a term in Malay language which literally means....yes you got it - Night Market (malam means night and pasar means market).
Pasar malam started in Singapore in 1950s before modern heartland malls were built. Back then, the first pasar malam in Singapore was organised by hawkers on a weekly basis (to coincide with worker's payday) and set up near the British military bases. This temporary pop-up event sells everything from household items to plants and lotsa food. Usually such pop-up events last about 2 weeks to a month depending on the organiser. Once the time is up, they wrap up everything then head to the next town and repeat what they do. If you get a chance to visit Singapore, do pop by one of these pasar malam.
