Eid-ul-Fitr this year is extra special for our family cos it falls on your most special day, #SundayWithAdam 💛 Even though we are celebrating Eid separately this year, we managed to get together virtually last night to make a special prayer for you - us in Birmingham, Dr Auntie in Manchester, and Dadajee & Dadijee in Malaysia.
And you know what, Mamajee? Dadajee and Dadijee took a selfie and sent it to us first thing in the morning. @drauntie.uk said that you would have been so proud of them, cos the lovebirds finally managed to take a perfect selfie with sweet, wide smiles - MashaAllah! And you would have been proud of @drauntie.uk too cos she’s definitely been super-strong, and she hasn’t shed any tears today yet! And you would have been happy to see Mrs Mom putting her favourite red lipstick on today. And of course, she didn’t forget to put on the perfume you bought for her.
And do you remember your wish to see us all wearing the same jubbah as you on Eid? Well, this year, we’ve all decided to make your wish come true! I chose to wear your favourite white jubbah, just the way you like it. And Ali insisted on wearing your old jubbah from your childhood, and he told everyone to call him #AdamdidamJunior. He even asked if he looked as handsome as Mamajee - bless him! And you would be surprised to see what your favourite little girl was wearing…do you still remember that jubbah, Mamajee? Does it look familiar to you? Yes, it’s your special jubbah from when you were little! She requested to wear it since it was a bit too big for Ali. I bet you must be smiling from ear to ear, looking at your beautiful Fatimah!
And of course, our Eid today would be incomplete without Mr Dad’s special menu! He cooked Chicken Kuzi with Roti Jala - yummy! And @drauntie.uk sent us not one, but two cakes - Nutella chocolate cake and Red Velvet cake. Alhamdulillah, even though we can’t be together this year, and you are not here either, somehow, our whole family feels complete in our own way. At least the most important things weren’t missing from our family…LOVE and Allah’s blessings!

今日は、チョコとココアのマフィンを作りました。
食感のアクセントにアーモンドを入れると更に美味しくなります^^
サーティーワンのロッキーロードアイスが好きなので、
チョコマフィンにマシュマロ入れたら美味しそう...と思って
1回目はマシュマロを入れて焼いてみたら
生地に溶けてしまってなくなりました(笑)
生クリーム使いたくない!というコメントをたまに見かけるので
生クリームよりは常備されていそうな牛乳バージョンを作ってみました。
レモンは絞ってもいいですし、ポッカレモンなどでも大丈夫です。
Today, I baked chocolate and cocoa muffins.
Adding the almond would give a nice texture accent to the muffins.
I thought at first.... if I put marshmallow in the muffins, that would be so yummy
So at the first time, I put them and baked but, they melted completely and gone lol
Sometimes I see a comment which is like "I don't want to use a fresh cream! "
That's why I made this milk version of recipe using milk that is more often stored than fresh cream in your fridge.
You can squeeze a lemon or use a bottle of lemon juice as well.
▷Ingredients(6 muffins):
100g unsalted butter
100g sugar
2 eggs
200g cake flour
12g cocoa powder
6g baking powder
50g non-sugar yogurt
50g heavy cream
(or 50g non-sugar yogurt + 50g milk + 5g lemon juice)
50g ~ almonds
80g ~ chocolate chip
▷材料(マフィン6個分)
無塩バター 100g
砂糖 100g
全卵 2個
薄力粉 200g
ココアパウダー 12g
ベーキングパウダー 6g
無糖ヨーグルト 50g
生クリーム 50g
(または無糖ヨーグルト 50g+牛乳 50g+レモン汁 5g)
アーモンド 50g~
チョコチップ 80g~
▶作り方:
準備①バターと卵は予め室温に戻しておく。
②オーブンを180℃に予熱しておく。
1.アーモンドを適度な大きさにカットしておく。
2.無塩バター100gとグラニュー糖100gを白っぽくなるまでよくすり混ぜる。
3.溶いた全卵2個を3回以上に分けて加え、その都度よく混ぜる。
4.薄力粉200g、ココアパウダー12g、ベーキングパウダー6gの半分をふるって加えてさっくり混ぜる。(粉が多少残っている状態)
5.無糖ヨーグルト50gと生クリーム50gを混ぜ、半分加えてさっくり混ぜる。
6.薄力粉の残り半分をふるって加え、アーモンド、チョコチップも入れてさっくり混ぜる。
7.ヨーグルトの残り半分を加えて粉が見えなくなるまでさっくり混ぜる。
8.マフィンカップにグラシン紙を敷いて生地を入れる。
9.180℃に予熱したオーブンで30分~焼く。
竹串でチェックして生地がついてこなければ焼き上がり。

よく頂く質問などについて。
Q.バターは無塩ですか?有塩ですか?
お菓子には基本的に無塩バターのみ使用しています。
無塩バターに塩を加えるレシピは有塩バターではだめなのか?と質問をいただくのですが、狙った塩加減にしたいため無塩バターを使っています。
※一部過去の動画は「バター」のみの記載になってしまっています。
今後は字幕に「無塩バター」と表記するよう心がけますが、
それ以前の字幕に「バター」としか書かれていなくても
「無塩バター」を使用しています。
Q.オーブンは予熱しますか?
焼成温度に合わせて予熱しています。
家庭用オーブンは庫内が小さく扉を開けた時に熱が逃げやすいため、
焼成温度+10〜20℃で予熱し、焼くものを入れてから焼成温度に合わせて焼いています。
こちらも今後は字幕で「〇〇℃に予熱したオーブンで□□分焼く」といった形で表記するように心がけます。

My friend told me that nutella pound cake is really good, so I decided to make it with cream cheese ;)
I was right! It absolutely goes great with the fluffy moist cream cheese flavor. YUMMY!!!

Nutella Swirl Cream Cheese Pound Cake
Difficulty: Easy
Time: 1.5hr
Number of servings: 1 loaf
Necessary Equipment:
18×8cm (7x3inch) loaf pan
electric mixer
Ingredients:
100g (3.5oz.) cream cheese *room temperature
50g (1.8oz.) butter *room temperature
50g (1.8oz.) granulated sugar
2 eggs *room temperature
120g (4.2oz.) cake flour
1/2 tsp. baking powder
vanilla extract *if you like
50g (1.8oz.) nutella
1 tbsp. milk *soy milk or almond milk is OK
almond slices *if you like
Directions:
1. Line the loaf pan with parchment paper. Preheat the oven to 180C (350F).
2. Place cream cheese and butter in a bowl. Mix with an electric mixer until creamy.
3. Add granulated sugar, then mix with an electric mixer for about 3 minutes until light and fluffy.
4. Add beaten eggs 1/3 at a time, and mix well with an electric mixer until fluffy incorporated.
5. Mix in a few drops of vanilla extract if you like.
6. Sift in cake flour and baking powder, then mix with a spatula until just incorporated.
7. In a different bowl, place nutella and milk, then mix well. Then add 1/4 of the batter (6.) and mix well.
8. Add the nutella batter back into the cream cheese batter, then cut through the batter for 3 times to lightly swirl. *DO NOT overmix
9. Pour the batter into the pan and smooth the top. Drop the pan lightly on the counter for 2-3 times to raise the air bubbles out of the batter. Use the spatula to cut an incision lengthwise down middle of cake to prevent unwanted cracks on the surface. Sprinkle with some almond slices if you like. Bake at 180C (350F) for about 45 minutes. *Cover the cake with aluminum foil if it starts to brown too much.
10. Check for doneness with a fresh skewer. Remove the cake from the pan and place it on a wire rack to cool.
* When the cake is completely cool, wrap tightly in plastic wrap. It will last wrapped this way for few days (in the fridge).
* You can also wrap each slices of pound cake individually with a plastic wrap then keep in the freezer for over a week.

The cake is healthy banana rum-raisin cake. I coated it with white chocolate. In this way you can keep the cake moist in the fridge. Yummy!!!

Pink Jewel Christmas Cake
Difficulty: medium
Time: 2 hours
Number of servings: 1 cake
Necessary Equipment:
13cm (5.1-inch) heart shaped cake pan
cookie cutters of your choice
Ingredients:
((Cookies))
50g (1.8oz.) butter (softened)
50g (1.8oz.) cake flour
50g (1.8oz.) bread flour
30g (1.0oz.) powder sugar
1 tbsp. milk
white chocolate pen
sprinkles of your choice (I used silver and pink silver)
((Cake))
1 egg
75g (2.6oz.) cake flour
50g (1.8oz.) butter (softened)
40g (1.4oz.) soft brown sugar
1/2 tsp. baking powder
1 banana
40g (1.4oz.) rum-soaked raisins
((Decoration))
120g (4.2oz.) white chocolate

Directions:
((Cookies))
1. Mix butter, milk, and powder sugar (powder sugar makes the cookie crisp) with spatula until creamy.
2. Sift in the cake flour and bread flour mixture (you can use all-purpose flour) little by little and mix well.
3. Roll out dough between two pieces of plastic wrap to 0.3 cm (0.1 inch) thick. Refrigerate the dough for at least 1 hour to chill.
4. Preheat the oven to 170C (338F). Remove the plastic wrap. Cut out cookies with cookie cutters of your choice. Place on a cookie sheet lined with parchment paper. Roll out scraps, and repeat.
5. Bake at 170C (338F) for 10-12 minutes. Cool the cookies (on the sheet or wire rack) and attach sprinkles (use tweezers to attach) with chocolate pen (Set the chocolate pen in a cup of hot water for a few minutes. Cut the tip of the chocolate pen and use).
((Cake))
1. Preheat the oven to 180C (350F). Mash the banana with fork.
2. Cream the butter in a large bowl with a wire whisk. Add sugar, beaten egg (little by little), and mix well.
3. With a spatula, mix banana. Sift in flour and baking powder a small amount at a time, and mix well. Then add rum-soaked raisins and mix well.
4. Butter the cake pan and pour the mixture in the pan.
5. Bake at 180C (350F) for 30-40 minutes, or until lightly browned. (Depending on the heat of the oven, cooking time may differ, so please watch out.)
6. Place the cake pan on the wire rack to cool.
((Decoration))
1. Remove the cake from the pan and turn upside-down on the wire rack.
2. Melt white chocolate over hot water. Pour over the cake and spread over the side or let it drizzle down the side.
3. Decorate the cake with cookies and meringue Santa Claus, or any sugar decoration of your choice ;)
