每個季節,其實都有各自的美,各自的好。春天有溫暖的風,新年新氣象、新的展望、美好的開始。夏天有眾人爲之「瘋狂」的菓王「榴蓮」及其他夏熱帶水菓如:龍眼、山竹(菓后)、紅毛丹、荔枝、芒菓等等。秋天有中秋佳節,正所謂:月到中秋分外明,吃餅賞月千情趣。還有提燈籠及賞楓葉。冬天有吃湯圓過冬至,麻辣火鍋大派用場。哇!真是快樂得不得了。當然也有不好的一面,但這裡祇介紹好的,這器世間本來就是一體兩面。
是的,每個季節都有其健康譜,不是唯有夏天才有。那爲何師父您獨寫夏天,而不寫其餘三個季節呢?是這樣的,吾之因爲寫夏天的健康譜,那是因爲吾撰寫此文章時,正值夏天。另一個原因是因爲本國位處赤道,熱總多過於涼。或許不說妳你不知,我們的陽氣在夏天時,會由內向外拓展,這時若無善加調理「虛邪賊風」容易招惹,身體就易出現違和(生病)。請大家謹記於心,這是非常重要的保健,與養生之道,價值非凡啊!若妳你想把一輩子辛苦的積蓄,全部送給醫生的話,那就隨妳你。(一笑)

Every season comes with its unique beauty and goodness. Spring brings about warm and comfortable breezes, ushering in the new year and inspiring new aspirations with new beginnings. In Summer, people goes crazy over durians and other tropical fruits such as longan, mangosteen, rambutan, lychee, mango, etc.
And we have the Mid-Autumn Festival comes Autumn As the Chinese saying goes, “The longing of our kin exacerbates during the festive season. The moon on Mid Autumn is especially clear and pristine. Eating moon cakes and appreciating the full moon bring wondrous delights in life.” So do carrying lanterns and appreciating the sights of maple leaves. In Winter, we have round dumplings and spicy hotpot! Wow, isn't this wonderful. Of course, I only mentioned the good side of things. In this material world, there is always duality.
Yes, every season, not just Summer, comes with its health boosting guide. Why do you think I only write the guide for summer, and not the other 3 seasons? The main reason is we are in summer now as I write this article. Secondly, since we are in the tropics, and very near to the equator, we will experience more hot weather than cold. You may not know this, but during summer, the Yang energy in our body radiates outwards, and if we do not take care of our health, "evil winds" (a term used in Traditional Chinese Medicine) will invade our body and cause us to be sick. Please remember this valuable point by heart. If you wish to "gift" your life savings to the doctor, be my guest! Ha ha ha!
What kind of common ailments are usually seen in tropical countries and summer weather? Let me share with you. Medical issues concerning the heart, the lungs, the intestinal and stomach organs, female health, etc, are common place during the hot summer months. Therefore, please be very aware of your lifestyle and dietary habits. Don't overindulge in air-conditioning and think it is ok in this hot weather to consume a lot of ice cream! Likewise for cold drinks and other "cooling" food and drinks! I mentioned above that the Yang energy in our body disperses outwards, resulting in more Yin energy in our body in summer. Over-consumption of "cooling" food or drinks would only exacerbate this imbalance, resulting in sickness. Of course, do not go to the other end of the scale by over-eating on food that is fried, deep-fried, roasted, baked, smoked, etc.
In the last 1-2 years, I have been sending out words to those who have been suffering from ailments, despite seeing many doctors to come see me. Eradicating the sufferings of sentient beings is one of my aspirations. Besides my own Father who was a medical practitioner, I myself have the backing of the "King of Healing". Since I started on this path, I have provided remedies and reliefs for sickness such as skin diseases, cancer, female health issues, oral diseases, tonsils issues, prostate issues, thyroid issues, etc. Accomplished Metaphysics practitioners will know that the more developed a society is, the more urban diseases there will be. What are urban diseases? They are diseases that arise due to the fast adoption of science and urbanisation.

🍰 這兩年,#巴黎的甜點界與飲食地貌愈加國際化。不僅巴黎人對異國食物的接受程度越來越高、越來越多外國人在巴黎開店外,#許多法國主廚們也紛紛走入國際市場,將自己的作品帶出國境。英國的 Harrods 百貨公司從7月19日開始,邀請包括 Pierre Hermé Paris、Angelo Musa、Yann Couvreur 與 Cedric Grolet(8月30日至9月8日)等四位高知名度的法國甜點主廚,在 Harrods 的茶沙龍與 Roastery & Bake Hall 美食街販賣他們代表作品。現在更有法國主廚選擇在英國開始自己的第一家店。

Paris pastry industry and the Parisian food landscape have become more internationalised in recent years. Exotic food has gained popularity, more expats have opened their own shops, and Parisian chefs have started to set their foot abroad. For example, this year from July till September, Harrods invites 4 famous French pastry chefs including Pierre Hermé, Angelo Musa, Yann Couvreur, and Cédric Grolet to come to London and share their signature pastries and desserts with the British. Now there’s a French pastry chef decided to open her very first shop in the UK rather than in her own country.
Nina Métayer, the 31-year-old young pastry chef is one of the most talented and expected in her generation. She was in charge of the sweet creations at Café Pouchkine in Paris. “Matriochka”, her signature, is a mousse cake in shape of Russian dolls, echoing the Russian heritage of the pastry shop and herself. She was selected as “Pastry chef of the year” in 2016 and 2017 by the prestigious magazine “Le Chef” and Gault & Millau guide respectively. Before taking over the pastry kitchen of Café Pouchkine, she was the pastry chef of Grand Restaurant by Jean-François Piège (a Michelin 2-star restaurant) and of Hotel Raphael. Her debut was at Le Meurice, headed by Yannick Alleno and Camille Lesecq.
Her “Île Flottante Exotique” created at Hotel Raphael is the dessert that made her known to the industry. It was credited as one of the “best dessert of the year 2014” by Atabula. She participated the 3rd season of “Qui sera le prochain grand pâtissier?”, a famous French baking competition TV show featuring professional pastry chefs, and got the 3rd place, and then was scouted and recruited by the chef Jean-François Piège. She helped the opening of Grand Restaurant and the latter got its two Michelin stars in the following year. The world has been eager to know her next step after she left Café Pouchkine earlier this year, but she’s been quite discrete until last week. She shared in her Instagram story videos of her new project, a “nice surprise” for her followers. She showed a visit to a huge space and hinted that this could be where she’s going to settle.
The Chef magazine has just confirmed that Nina’s going to open her own shop, however in London, which might have broken the hearts of some of her fans. Situated in Mercato Metropolitano, a street food hall and the first sustainable and inclusive community market in Elephant and Castle, London, Nina’s shop is going to offer fresh bread (produced by her own bakery), viennoiseries, and cakes. Mercato Metropolitano started from a pilot project realised during the 2015 World Expo in Milan. The team has brought back in life an unused railway station which has retained the original appearance of the site and nurtured local communities. The concept was then extended to London and their first site was opened in 2016. Two other sites will be opened soon (both in London) and Nina’s shop will be extended in both sites.

I LOVEEEEEEE Din Tai Fung 鼎泰豐. Their food is soooo yummy. Thanks to BreadTalk, we are lucky to have DTF here in Singapore so we can eat this anytime we want. Every time I pass by one of their restaurants, I will always have an urge to dine in there. Some of my must-order dishes in Din Tai Fung include fried rice with five-spice pork cutlet, xiao long bao as well as this crispy golden prawn pancake. While Roland is still trying to replicate the taste of their fried rice, he's pretty good in replicating this dish which is really easy to make.

350g or 18 pieces of prawns
1 piece of beancurd skin (wipe clean and cut into 4 pieces)
1/3 of carrot chopped
1 teaspoon of cornflour or tapioca flour
2 - 3 stalks of chinese coriander
1 tablespoon of light soya sauce

When you travel to Vietnam and to any major city including Saigon, Hanoi, and Da Nang you should visit a local park. Find the largest park with the most trees and open space. There, you might find locals fishing, eating, drinking, doing light sports activities or just relaxing after work. In Saigon's District 10, I visit Le Thi Rieng Park. A famous and iconic place among Saigon's hustle and bustle. It's an oasis from the rest of the city. Even before entering the park, there's street food right outside. You can go fishing here or you can bring your roller blades and skate around with kids. Badminton is also popular here. Group aerobic exercises is common in the afternoon. Mini cyclos can be rented as well. But the best thing about Le Thi Rieng Park has to be the assortment of little cute snack stands serving ice cream, cakes, and drinks. We even tried some durian in a tortilla. Lastly, there are crafts and street artists near the parking lot entrance, so I recommend checking them out too if you have time. Get a tattoo or get a picture of yourself sketched out.

A visit to Indonesia and Jakarta should also include a trip to any of the islands on Thousand Islands. The original plan was to visit Putri Island, but I got sea sick and had to stop on the first island from Jakarta called Pari, where only local Indonesian tourists go. On this particular day, it seemed like I had the whole island to myself. For the next six hours I enjoyed some jaw dropping beach and mangrove views. I also spent time eating bakso beef noodle soup for the first time, as well as delicious Batagor fried dumpling and tofu. I also snacked on Otak Otak fish cakes. This was such an amazing day.
