#摩艾石像鳳梨酥 ⭐米做的鳳梨酥❗ /無麩質、無蛋/
看到大家都很認真練習我之前分享的芋頭酥、豹紋粉彩酥、四喜酥、可愛蛋黃酥...,覺得好棒棒啊!😍中秋節熱門的鳳梨酥當然也不能缺席!今年我沒打算做我的招牌花兒鳳梨酥,想分享新創作 #米鳳梨酥,是因為身邊朋友有不能吃麵粉點心的寶貝,希望她也能開心吃鳳梨酥。除了低敏配方,還絞盡腦汁用了特殊小撇步,做出可愛摩艾石像造型,我自己好喜歡!而且我本來以為小小孩不愛鳳梨酥,沒想到這個意外受歡迎!搶食畫面又上演啦😆😁
#摩艾石像米鳳梨酥食譜
1.無鹽奶油50克+糖粉15克打發至泛白
2.加入在來米粉80克+奶粉5克+牛奶15克,攪拌均勻成團(牛奶可以視吸水狀況增加)。
在來米粉英文是Rice flour, or long grain rice flour ,拿來做蘿蔔糕的那種。也稱作粘米粉/沾米粉。不是糯米粉喔 Not Glutinous rice flour
3.加入少許竹炭粉,混合均勻成灰色
4.我用的模型:一個鳳梨酥約18克麵糰,包入5克鳳梨餡。包好滾圓後壓入模型裡,冷凍至定型
5.取出,烤箱180度烤12-15分鐘

實在太想吃了!禁足令之前,我時不時會去中國城,巷弄內的河粉廠購買,算算一月底之後我再也沒踏進中國城。
第一次!我直接嘗試用一般超市即可取得,方便又便宜的 British Radish 替代白蘿蔔,甚至不用削皮,非常方便!
阿美嫂爆香時,從鍋內飄出混合了香菇、紅蔥頭的香氣,那一刻,讓我想到已經過世的奶奶。
蘿蔔糕絕對是她的拿手菜,以前過年,團圓飯桌上,最熱銷的一道,沾著伴著蔥末的辣椒醬油膏,我希望重現那股幸福的 #舌尖上的家鄉味。

同場加應,我是使用美善品料理,我把食譜跟做法放上來分享:
⭕️8人份食材:
100克 豬絞肉
2大匙 醬油
2大匙 油
30克 蝦米,泡軟瀝乾(我沒有,覺得少一味)
20克 油蔥酥
8朵乾香菇,泡軟切絲
🔥400克在來米,浸泡2小時以上(我泡了一晚)(⚠️如果沒有再來米,請看照片我買的是Long Grain Rice )
1200克白蘿蔔,去皮、切塊(用British Radish 替代)
1/2茶匙 鹽
1/4茶匙 黑胡椒粉
1/4茶匙 白胡椒粉
⭕️作法:我照著美善品流程。如果沒有機器,應該一樣就是先爆香,炒肉末,打米漿,然後混合放模型蒸熟。(模型建議抹點油好脫模)
⚠️剛蒸完要放涼,然後倒扣,冰過後再切才會美,不然太軟會散!
⭕️氣炸鍋:180°C 10分鐘。再200°C 5分鐘。(我喜歡口感煎的恰一點)(台語)

Tip:
1.隔夜飯因為澱粉老化比較沒黏性,所以鬆而好炒。
2.長米比圓米黏性更低,所以長米比較好
3.隔夜米會結成糰,只要加點水抓均勻,這樣比較濕潤而好炒。
Tip:
1. Due to the break-down of starch in day-old rice, the rice is less sticky and easier to use for fried-rice.
2. Long-grain rice is less sticky than round-grain rice, so long-grain rice is more suitable for fried-rice.
3. Day-old rice often forms clumps, so before use, moisten with a little bit of water to loosen the clumps to make them easier to cook with.
做法:
1.蔥花直接倒在未炒的飯上面,加點黑胡椒與鹽調味,可以把熟食材如火腿等先加入,如要加入生的肉絲或其他生的材料必須先弄熟再加入,這樣在炒的時候才不會因為手忙腳亂而忘記加。
2.準備兩顆蛋打勻,鍋子先燒熱再把蛋加入攪勻,隨後加入先前配料的飯,火不要太小,比較不會沾鍋
炒時用壓的方式飯比較容易散開,將飯持續的翻炒,讓米粒的溫度均勻。
3.翻炒到聞到飯香或聽見米粒爆開的聲音就可以了,倒入盤中能發現米粒分明,這樣就完成好吃的炒飯。
Preparation Method:
1. Add the chopped scallions directly to the rice before making the fried rice, also add some black pepper and salt to season the rice. Cooked ingredients such as ham can also be added to the rice first. For uncooked ingredients like meat strips, cook first before making the fried rice to prevent them from being left out of the cooking process.
2. Beat two eggs, heat the pan first before adding the egg batter, then add in all the prepared ingredients, cook over medium heat to prevent ingredients from sticking to the pan.
When stir-frying, use a pressing motion to help the rice break apart. Mix continuously to make sure the rice is warmed up evenly.
3. Stir-fry until the rice smells fragrant or when the rice starts to pop open. Pour the fried-rice onto a plate and you will see that the rice grains are all separate. This is how you make tasty fried-rice.

【楊桃美食網】南瓜糕 Pumpkin Cake
材料:
A.南瓜200克、紅蔥頭40克、水500CC、沙拉油2大匙
B.再來米粉200克、太白粉50克、鹽1茶匙、細糖2茶匙、白胡椒粉1/4茶匙、水 400CC
Ingredients:
A. Pumpkin 200g, shallots 40g, water 500CC, cooking oil 2 tablespoons
B. Long grain rice flour 200g, corn starch 50g, salt 1 teaspoon, powdered sugar 2 teaspoons, powdered white pepper 1/4 teaspoon, water 400CC
做法
1.南瓜刨絲,紅蔥頭切細片備用。
2.熱鍋下沙拉油,小火爆香紅蔥頭後加入南瓜絲略炒後加入500CC的水一起煮開。
3.調粉漿:將材料B一起放入大碗中調勻成粉漿備用。
4.將煮開的南瓜絲倒入做法3的粉漿中拌勻成糊。
5.取一模型,用少許沙拉油抹勻,舖上一層不沾紙以防沾黏,再將粉糊倒入舖平。
6.入蒸籠蒸40分鐘後取出即可
Preparation Method
1. Grate the pumpkin, finely slice the shallots and set aside.
2. Heat the pan and add cooking oil, lightly stir-fry the shallots on low heat then add the grated pumpkin. Quickly stir-fry the mixture then add water, 500CC, and cook until it boils.
3. Batter preparation: put ingredients B into a large bowl and mix evenly to form a batter, set aside.
4. Pour the cooked grated pumpkin into the batter from step 3 and mix evenly.
5. Grease a baking mold with a little bit of cooking oil, cover the bottom and sides with a layer of baking parchment paper to prevent sticking, then pour in the pumpkin batter and spread out evenly.
6. Put the baking mold into a steamer and steam the mixture for 40 minutes.
