A classic dish known all around the world for its use of dried chillies. Our local version is slightly tangy, slightly sweet while staying true to its SPICY roots.
Kickstart the dish by Infusing the oil with peppercorns and dried chillies. This gives it the distinct kung pao chicken kick. Adding loads of aromatics like ginger, garlic and spring onions makes the dish even more appetizing, we chose chicken thighs over breast so that it stays juicy even when stir fried. Definitely a great dish to pair with piping hot rice!
Tip: Adjust the amount of dried chillies according to your preference, but do take note not to use less than 10 dried chillies. For those who loves some crunch, you can add cashew or peanuts to the dish.

四川名菜-宮保雞丁。這道菜的特點為肉質鮮嫩、酥脆的花生、辣而不燥、略帶甜酸味道。

宮保雞丁剛上桌香辣誘人,總讓人忍不住一口接著一口扒飯,今天來介紹這道料理的靈魂食材之一「花生」,採用炸製的方式,因此能帶出十足花生香氣,每百公克油炸花生約630大卡,蛋白質約26公克,脂肪約50公克,因為花生本身油脂含量高,也常作為榨油原料,榨取的花生油以不飽和脂肪酸占比高,會有一股獨特的古早味香氣。
依據「國人每日飲食指南」,花生在飲食指南中屬於油脂與堅果種子類,每日建議攝取一份,有益均衡飲食,一份油脂與堅果約10顆花生提供45大卡左右的熱量,提供不飽和脂肪酸、維生素E、微量礦物質…等攝取來源。
最後營養師貼心小叮嚀,花生對某些朋友是過敏原,會引起皮膚紅腫發癢、嘔吐、腹瀉、過敏性哮喘,嚴重者甚至會出現過敏性休克,需要特別注意喔!

200g chicken leg meat
1 egg
1 tsp of Shaoxing wine
1 tsp soy sauce
1 tsp sugar
1 tbsp Potato Starch
5 tbsp oil
3~4 Ginger slices
1 green onion
2g sichuan peppercorns
3 Dried chili
40g peanuts
1/2 tsp salt
2 tbsp of vinegar
a little white pepper
1 tbsp tomato sauce
1 tbsp sugar
1 clove of garlic
5~6 dried chili

食材:
雞腿肉200g
蒜頭1瓣
乾辣椒5~6條
加入花椒 1g
青蔥1根
花生粒40g
醃料:
蛋1顆
紹興酒1小匙
醬油1小匙
糖1小匙
太白粉1大匙
煉花椒油:
油5大匙
薑片3片
花椒粒2g
乾辣椒3條
醬汁食材:
鹽1/2小匙
烏醋2大匙
白胡椒少許
番茄醬1大匙
糖1大匙
太白粉1大匙
步驟:
煉花椒油:
1.加入花椒粒、 乾辣椒、蔥段,薑片至5大匙油鍋中燒熱至150度,煸出香氣後盛出備用
製作:
1.雞丁加入醃料,醃10分鐘入味
2.宮保雞丁的醬汁調好拌勻備用
3.鍋中加入花椒油2大匙,加入雞肉丁拌炒,加入辣椒,蔥白,花椒,薑片,蒜片,再加入炸過的花生,接著加入調配好的醬汁,拌炒均勻再放進蔥綠即可起鍋
