Hokkien Mee Recipe
Preparation Time: ~ 10 minutes
Cooking Time: ~ 50 minutes
Total Duration: ~ 1 hour
Serving Size: 3-4 Pax
Ingredients Quantity
1) Prawn shells – 200g, pounded
2) Medium prawns – 100g
3) Squid – 60g, cut into rings
4) Water – 4 cups
5) Garlic – 8 tbs, chopped
6) OKI Premium Soya Bean Oil – 11 tbs
7) Eggs – 3
8) Seafood sauce – 3 tbs
9) Pork belly – 160g, sliced into bite-sized pieces
10) Cai xin – 200g, washed
11) Beansprouts – 100g, washed
12) Plain flour – 250g
Noodles prep:
1) Add plain flour into Philips Noodle Maker.
2) Crack an egg and mix in water until its 95ml.
3) Pour egg mixture slowly into Philips Noodle Maker.
4) Let it mix for 5 minutes. Once ready, noodles will start to come out.
Pork belly prep: Stir-fry pork belly with 2 tablespoons of chopped garlic and 1 cup of water, till there’s no water left.
Broth prep:
1) Add prawn shells to M. Maison non-stick wok and fry till shells are dry.
2) Add 2 tablespoons of OKI Premium Soya Bean Oil and fry till prawn shells are cooked/dry.
3) Add 1.5 cups of water. Cover and let it boil for 10 minutes under low heat.
4) Strain prawn stock from shells and set aside.
Hokkien Mee recipe:
1) Pour 2 tablespoons of OKI Premium Soya Bean Oil into M. Maison non-stick wok and add 3 tablespoons of chopped garlic. Sauté till brown.
2) To make seafood broth, add 1 cup of prawn stock. Cover and let it boil until it’s bubbling. Add prawns, squid and 1 cup of water. Cover and let it boil for 3 minutes. Stir occasionally. Once cooked, set it aside.
3) To cook the noodles, boil 1 big bowl of water. Once water starts boiling, add 2-3 drops of OKI Premium Soya Bean Oil to water and add noodles in. Cook the noodles for 6-7minutes. Once cooked, strain noodles and set it aside.
4) To make the ‘sauce’, add 2 tablespoons of OKI Premium Soya Bean Oil to M. Maison non-stick wok and add 1 tablespoon of chopped garlic. Sauté till brown. Add seafood sauce and 4-5 tablespoons of seafood broth. Set it aside once it starts bubbling.
5) Add 2 tablespoons of OKI Premium Soya Bean Oil to M. Maison non-stick wok and 2 tablespoons of chopped garlic. Sauté till brown.
6) Crack 2 eggs into the wok and beat it slightly.
7) Add noodles, cai xin, beansprouts and 1 cup of seafood broth. Mix well.
8) Cover and let it cook for 3-4 minutes.
9) Add fried pork belly and 3 tablespoons of ‘sauce’. Mix well.
10) Garnish with chopped red chilli, calamansi lime and sambal chilli to taste.

Traditional Kampong Fried Rice Recipe
Preparation Time: ~ 7 minutes
Cooking Time: ~ 15 minutes
Total Duration: ~ 22 minutes
Serving Size: 5-6 Pax
Ingredients Quantity
1) Long beans – 200g
2) Eggs – 3
5) Garlic – 2 tbsp.
4) Corn Flour – ½ tbsp.
5) Light Soy Sauce – 1 ½ tbsp.
6) Overnight rice – 3 cups, cooked.
7) White pepper – ½ tbsp.
8) Hot water – 2 tbsp.
9) Oil – 4 tbsp.
Prep:
1) Pluck both ends of long beans and chop them into small pieces.
2) Crush the garlic and chop them.
3) Crack 3 eggs into a mixing bowl, add half tbsp. of corn flour and half tbsp. of light soy sauce and mix well.
4) Add 2 tbsp. of hot water into overnight rice to loosen it.
Cooking:
1) Pour 2 tbsp. of oil into non-stick wok and fry the eggs till slightly brown.
2) Shred the cooked eggs into smaller pieces and set it aside.
3) Add 2 tbsp. of oil into the wok and 2tbsp. of chopped garlic. Sauté till brown.
4) Add long beans to the wok and stir fry till slightly cooked.
5) Add overnight rice and stir fry together with garlic and long beans.
6) Add ½ tbsp. of pepper to the rice and 1 tbsp. of light soy sauce to the sides of the wok. This will help make the dish more fragrant.
7) Fry the rice for 4-5 minutes.
8) Add the shredded eggs to the rice.

色々バリエーションはありますが今回は乾燥きのこを使うのがポイント
めちゃ濃厚なきのこのクリームパスタです
今回は5種キノコを使いましたがお好みの種類をお使いください
4種にすると「クワトロフンギのクリームパスタ」というかっこいい名前を名乗れます…笑
【材料】
・オリーブオイル 小さじ2
・マッシュルーム 1/2パック
・舞茸 1/2パック
・エリンギ 1/2パック
・薄力粉or強力粉 5g
・干し椎茸の戻し汁 200ml
・オリーブオイル 小さじ2
・にんにく 1かけ
・生クリーム 50ml
・牛乳or豆乳 50ml
・干し椎茸 2個
・塩 ひとつまみ~
・バター 5g
・粉チーズ、黒胡椒 お好み
【準備】
・干し椎茸を300mlくらいで戻し、細切りにする(戻し汁も取っておく)
・キノコを適当にスライスするか割く
・にんにくをスライスする
【作り方】
1. フライパンにオリーブオイル小さじ2を入れきのこ類(干し椎茸以外)を中火で炒める
2. じっくり香ばしい焼き色を付けて旨みを凝縮したら小麦粉5gを加えて粉っぽさがなくなるまで炒める
3. 干し椎茸の戻し汁200mlを入れて、フライパンをゴムベラでこそいでこびりついたキノコの旨みを溶かす
4. たまに混ぜながら煮詰め、煮汁が1/3くらいになってとろみがついたら置いておく
5. 別のフライパンにオリーブオイル小さじ2・にんにくを入れて火にかけ、軽く色づくまで弱火で炒める
6. ↑に煮詰めたきのこ・戻した干し椎茸、生クリーム50ml・牛乳or豆乳50ml・塩ひとつまみを加えて混ぜる
7. 塩分濃度1%の沸騰したお湯でパスタを表示時間通りか少し短めに茹でる
8. パスタが茹で上がる直前にバター5gを加え、ソースを温めつつ溶かし混ぜ、茹で上がったパスタを合わせる
9. 絡めて茹で汁で濃度、味をみて塩で調整し、お皿に盛って粉チーズや黒胡椒をかけて出来上がり

[Material]
・2 tsp olive oil
・1/2 pack of mushrooms
・1/2 pack of maitake mushrooms
・King oyster mushroom 1/2 pack
・Cake flour or extra-strength flour 5g
・200 ml of the soaking liquid from the dried shiitake mushrooms
・2 tsp olive oil
・1 clove of garlic
・Heavy cream 50 ml
・Milk or soy milk 50 ml
・Dried shiitake mushrooms 2 pieces
・A pinch of salt ~
・5g butter
・Grated cheese and black pepper to taste
[preparation]
・Rehydrate the dried shiitake mushrooms in about 300 ml, then cut into thin strips (Remove the soaking liquid too.).
・Slice or crack the mushrooms.
・Slice the garlic.
[How to make]
1.Add 2 teaspoons of olive oil in a pan and stir-fry the mushrooms (Other than dried shiitake mushrooms) over medium-heat.
2.Slowly brown it and add 5g of flour when the flavor condenses. Stir-fry it until the powdery feel is gone.
3.Add 200 ml of the soaking liquid from the dried shiitake mushrooms and use a rubber spatula to melt the savory taste of the mushrooms in the frying pan.
4.Boil it down while occasionally mixing it. Leave it when the broth becomes around 1/3 and thickens.
5.Add 2 teaspoons of olive oil and garlic in a different frying pan and heat it. Stir-fry it over low-heat until it lightly browns.
6.Add boiled down mushrooms, rehydrated dried shiitake mushrooms, 50 ml of fresh cream, milk or 50 ml of soy milk and a pinch of salt to ↑ and mix.
7.Boil the pasta in boiling water with 1% salt concentration according to the listed time or slightly shorter.
8.Add 5g of butter right before the pasta finishes boiling. Melt and mix it while warming the sauce. Mix it with the boiled pasta.
9.Mix it with the water used to boil it. Check the taste and adjust it with salt. Plate it and sprinkle grated cheese or black pepper and it will be complete.
