煎餃子 鍋貼 Pot Stickers Guotie dumplings. With the fanned out Layerings, in Japan they are better known as an almost poetic #羽根つき餃子 , which refers to its looks to spanned Bird feathers! But the interesting side to this story, is that many Hyatt Hotels in Asia or China actually carry a pedigree, especially with purchasing ingredients or recipes... Believe it or not, I have actually been to an array of them including Beijing 長安壹號 Made in China, all 4 of the Hyatts in Shanghai 🙈, Andaz Shanghai, 崇明島 Hyatt which is amazing. Obviously I just posted about the highly rated Grand Hyatt in Shenzhen too, and sometimes my numerous times to the ones in Hong Kong (Currently 4 hotels) & Macau, plus for some reason I have been visiting their other China Hyatt restaurants over the years.

So back to the point.. This 煎鍋貼 is actually a famous Staple food in their lineage of shops if u did noticed. Hyatt on the Bund Xindalu 新大陸 in Shanghai made the best version for me, and Grand Hyatt Shenzhen 1881 & also Macau's Grand Hyatt 滿堂彩 Beijing Kitchen also made good ones. Hong Kong's Shatin 18 is equally famous for this dish, and in fact I thought that this visit was the Best I have ever experienced here. (There was a Period when they also did a Sakura Prawns 桜海老 version too, Photo 3, but it is no longer on the menu as that was deemed to be difficult to Fry consistently by the kitchen after around 2017, and some of us foodies miss it). 【Rauchfangkehrer】Trio variation of local Beef, Lamb & Veal Carpaccios, with Roasted Pumpkin Seeds & Rucola €15,90. I actually researched upon this place using ‘Recipes’ I desired to eat as is usual these days, coz it works more efficient than trusting or filtering all reviews. Turned out it was one of the best memorable meals we have eaten recently... It’s cooked so accurately, even the bread was super ace, so were the famous local Austrian Wines. I kept joking than Vienna is called Wien, but wine is called Wein. Somehow you think it’s the same meaning .. 😜 Also turned out this place has a #Michelin #BibGourmand . 叉燒200克 200g Char Siu (Barbequed Pork)
叉燒醬一湯匙 1tbsp Char siu sauce
蠔油一湯匙 1 tbsp Oyster sauce
老抽一湯匙 1 tbsp Dark soy sauce
清水320毫升 320 ml Water
白砂糖一湯匙 1tbsp sugar
鹽1/4茶匙 1/4tsp Salt
薑片20克 20g Sliced ginger
紅蔥頭30克 30g Shallots
八角一粒 1 Star anise
胡椒粉1/4茶匙 1/4tsp Grounded pepper
五香粉1/4茶匙 1/4tsp Five spice powder
小茴粉1/4茶匙 1/4tsp Grounded cumin
麻油一茶匙 1tsp Sesame oil
芡的材料 Sauce for the filling:
麵粉20克 20g Plain flour
生粉10克 10g Potato starch
清水60毫升 60ml Water
麪種材料 Starter dough:
低筋麵粉200克 200g Cake flour
清水110毫升 110ml Water
酵母三克 3g Yeast
糖兩克 2g Sugar
麵包皮材料 Dough:
低筋麵粉140克 140g Cake flour
糖粉130克 130g Powdered sugar
食用阿摩尼亞粉(臭粉)2克 2g Baking ammonia carbonate
泡打粉10克 10g Baking powder
白醋半茶匙 1/2tsp White vinegar
豬油20克 20g Lard
