野臺繫 來到第三屆,今年落腳台北大稻埕永樂市場前的廣場。啊,是戶外,正當我們擔心週六晚間會被凍死,一到現場卻是熱鬧滾滾,團隊成員忙進忙出,路過民眾好奇圍聚,如此人氣沸騰的地方怎麼會冷。
這場地真是好!不僅融入大稻埕街區的濃濃歷史感,也激起周圍行人的興趣並產生互動,讓這場在戶外用餐的活動真正成為一台戲,聯繫起人們—「野臺戲」亦為「野臺繫」。
這是我第三次參加野臺繫,今年的活動也是我認為最好吃最流暢的一次。場地固然有加分,菜色設計、菜單編排、出菜執行、飲品搭配比起往年更有過之。尤其,我有參加九月的試菜,當時還有點擔心,覺得許多菜色不論構成或是執行可以想得更清楚,正式登場時變得如此成熟穩健,團隊想必花了許多心思調整與因應。
#精彩菜色全都露
太多亮點值得畫線,這份菜單是 #職人與食材的集大成。由「Yuan 餐廳」的主廚蕭淳元和「D-Place」的主廚Dana設計的前菜中,「慢慢弄」的煙燻mozzarella起司,添上醬油凍與薑絲成了「鯊魚煙」,番茄微波蛋糕與鹹蛋黃、薑味番茄醬汁則是「番茄炒蛋」與「番茄切盤」的聯姻。阿元不忘端上他餐廳裡的招牌黑白切,以東北角鮑魚作為主角,和豆皮、海帶、豬血糕、筍滷得入味,妝飾上一點一點「Double V」創辦人Willson以糯米椒、朝天椒、葡萄酒醋製成的冰淇淋,味道就更有層次了。
「真的好海鮮餐聽」首次參加野臺繫,突破往年的西餐同溫層,台菜海鮮餐廳加入行列是美事一樁。副主廚陳偉榮端出一道蟲草花香菇雞湯,母雞與金華火腿的高湯一入喉就全身暖,抵禦了寒風。看起來像阿元名下的花園沙拉,其實出自「鳥苑地雞燒」主廚Tommy的手筆,沙拉葉先用昆布鹽與咖啡油拌了,山藥、玉米筍、番茄等蔬菜用火炙過,煙燻玉米泥和油封蛋黃增添軟嫩滑腴,煙燻玉米泥的酸味點亮味覺,幾種素材輪流吃頗討喜,餐盤更有來頭,是陶藝家林永勝老師後院的牛樟樹,散發木質清香。「Thomas Chien Restaurant」主廚邱宏訓則端出一道「蟹肉棒」,精緻版本的,用上真正的蟹肉與魚慕斯,點綴上炸藜麥與手指檸檬,脆脆酸酸嗶嗶波波的口感中,傳來紹興雞汁的陣陣酒香,風味組合相當好。
「Tairroir 態芮」的何順凱主廚與「Gēn Creative」的Eric、Han主廚聯手出主菜,以鴨為主題各自發揮。Gēn Creative從北京烤鴨包餅吃聯想到墨西哥塔可,他們用台灣的藍玉米粉與鴨油做餅皮,乾煎後再油炸成酥脆的tostada,夾入油封鴨腿絲、百香果醬汁與醃茭白筍,大口咬十分爽。呼應墨西哥主題,何順凱想到了墨西哥玉米粽(tamale),但他不用玉米粉,而是用台灣米,這樣又近似於客家粿粽,於是他把粿粽般的餡料填入鴨胸的肉與皮之間,皮抹上香料烤脆,旁邊襯上墨西哥混醬(mole),鴨肉的野味與孜然、花椒等等辛香極搭,鴨胸熟度精準。出自何順凱之手當然有一俏皮菜名:「技鴨群雄」!
結尾的澱粉,Gēn Creative的Han主廚做了一道家鄉味—韓式拌飯,越光米與芋頭同煮,佐以70度蛋黃、漬牛蒡、山菠菜、炸大麥、炸藜麥、紫米等等材料,用來調味的甜辣醬則有秘密武器— 雪碧汽水!
去年野臺繫一起做甜點的好搭檔:「態芮」甜點主廚Angela與「畬室」創辦人畬軒,今年再度攜手,改造燒仙草與鹹蛋苦瓜,二道甜點都很出色。仙草冰沙與紅豆鮮奶油espuma,味道太台太熟悉了,黑糖粉粿畫龍點睛,牛奶脆片與柳橙皮增添層次與細膩感,完成度很高;鹹蛋苦瓜做成甜點更是好,鹹蛋黃香緹伊奶油、鹹蛋黃奶酥,以及苦瓜泡泡、苦瓜冰沙、苦瓜脆片,鹹蛋苦瓜被拆解成這些元素,把他們兜攏起來的是另一樣台灣人很愛的甜食—蜂蜜蛋糕!甜點不能不甜,但鹹與苦的風味巧妙穿插,味覺變得立體,非常出色。
#飲品與麵包大放異彩
佐餐麵包也很精彩,「堂本麵包店」的阿洸師傅與「陳耀訓・麵包埠」的耀訓師傅強強聯手,前者以濃縮白蘆筍汁及Parmigiano-Reggiano起司開發出白蘆筍起司麵包,後者用南投山形玫瑰的玫瑰醬與帶有柑橘風味的台灣蜂蜜做出柑橘玫瑰麵包,餐會剛開始我就不小心吃太多;還沒完,尾聲的甜點時間還有阿洸師傅與「蜷尾家」創辦人李豫合作的「黑糖饅頭夾荷包蛋」,不是真的荷包蛋啦,而是鹹蛋冰淇淋的「蛋白」與蘭姆酒烤台南鹹鴨蛋的切片「蛋黃」,邊邊黏上脆餅來模擬煎蛋脆脆的外緣,果然鬼點子多。
飲品搭餐今年也做到一個新高度,酒精菜單與無酒精菜單都很精彩,老班底有詩人酒窖、啤酒頭、威石東、Bar TCRC、Simple Kaffa,新成員有陳千浩老師、Draft Land、蔡氏釀酒。台灣的釀酒工藝已然精進,宛如料理一般的「調酒」在本次野臺繫中也大放異彩,好比「Draft Land」創辦人Angus以Souvignon Blanc白酒、泥煤威士忌和琴酒調製的一款作品,初嚐的煙燻味和後續的礦物味和「蟹肉棒」那道菜很搭;無酒精飲品更展現細緻手筆,「Bar TCRC」創辦人阿翔做的一杯「偽香檳」,結合鹹楊桃湯、李鹹湯、情人果、煮熟番茄、刺蔥、檸檬,再以澄清法提煉出透明飲料,滋味百轉千迴,非常細緻;「Simple Kaffa」創辦人Berg的一杯冰咖啡飲,以濃縮咖啡為底,加入柚子汁與牛奶做澄清,再添入芳香萬壽菊與紫蘇的糖漿,果味酸甜香氣奔放,獲得一致好評。
「這是一個每一次都不知道會不會有下一次的活動。」餐會近尾聲,連續三年擔綱主持的「野臺繫吉祥物」、旅法美食家謝忠道老師如此感嘆。台灣餐飲職人很優秀,野臺繫已經完成大聲疾呼的任務,然而不能每每燃燒熱情,熱情會有燒完的一天。衷心祝福總召阿元與團隊可以設想出一個永續經營的方式,沒錢找錢、有力出力,讓大家持續投入心血、產出熱情。

禮拜二的 Taïrroir 態芮 理應熄燈休假,這一天卻人滿為患。我一走進去,吧台是滿的,座位區是滿的,廚房是滿的,還有燈架與白板與攝影機,場面有點大。
野臺繫正在如火如荼進行試菜。
邁入第三年的 #野臺繫,今年首度移師台北,12月7日、12月8日在大稻埕永樂廣場熱鬧辦桌。職人陣容有老朋友有新面孔,菜色與飲料花招百出,我不應該爆太多雷,畢竟菜單還會調整到最後一刻,不過今日一嚐,我認為飲品表現十分棒,成熟細膩又精準,Bar TCRC的阿翔做的無酒精飲、Draft Land的Angus做的酒精飲、Simple Kaffa的Berg做的咖啡飲,都讓人欣喜。
菜色方面,Gen Creative一道韓式拌飯(bibimbap)很涮嘴,脆脆鹹鹹香香,Han主廚特製的辣醬有意思,惹味卻清爽,秘密武器原來是雪碧!二道甜點非常棒,態芮的Angela主廚與畬室的畬軒的共同創作,一道仙草紅豆黑糖粉粿,一道鹹蛋苦瓜,風味組合驚喜又層次分明,已經可以放在餐廳的正式菜單上了。
料理職人則樂見「真的好海鮮餐廳」加入行列, 突破同溫層很棒!
然後還蹭了何順凱主廚準備的員工餐來吃,夾了炕肉但不敢添飯,因為還得吃整套野臺繫菜單,但是不小心多喝了幾口酸菜豬肚湯,除了醃漬的酸,還有漸漸深入的鮮,十分潤口。「我有很多小秘密,」何順凱一臉得意,明明想講得要命。(想被洩密的人請入內點圖。)

A good majority of the restaurants you go to in Japan will have these fake food replicas (called "samples" or サンプル/sanpuru in Japanese) displayed outside their front door so you can see exactly what their menu looks like before you go inside! I wish these were everywhere. :D
