It’s easy to get personal, hurt and offended when people deem you and your job as #nonessential. Artistes fall into the broader category of #artists, which refer to people whose work are involved with the arts. To come up tops with an overwhelming 70% is not a mean feat to begin with in the non-essential awards poll, albeit it being a generalised and simplified one in very testing times by the coronavirus! 😅 Not surprising, considering we need more scientists for the vaccine and mathematicians for the statistics, and we probably don’t need artists to paint a nicer picture for us now right? 😂
Simply put, you’re not top of the food chain, nor do you form the base of the pyramid, no problem with that. And one should not let one’s vanity and self-importance get in the way of the realisation that no one is indispensable in this world! 😨 Well, on a lighter note, it just means you’re put into the same group as #bubbletea, dramas and soap operas, cafes, holidays, as opposed to #toiletpaper, supermarkets, sanitisers and masks (in these times). You’re not common staple and basic daily necessities, you’re perhaps another level, you’re #luxurygoods (if that makes you feel any better about yourself). 🤣
Let us not take away the focus of the article which essentially, is to highlight the importance of and to show our appreciation to our #frontlineworkers in this time of the pandemic. 😊
Health, money, food, love, happiness, laughter, well-being. Can you say which is essential and which is non-essential? You could probably rate which is perhaps more or less essential but yet it’s subjective to person, time and place. A developed and mature society will begin to realise and appreciate the importance of #culture and #character, that it starts from #within and forms its very #basis. There’s #survival and livelihood, the bread and butter, day to day. And there’s also #life — the growth, meaning, significance, the #soul and #beauty of it. One cannot be devoid of the other. 😘

【 白 盒 子 裡 頭 的 早 餐 】
在日本,用餐結束的時候習慣合掌,說一句:ご馳走様でした。身為台灣人的我沒有這個習慣,但當地工作久了,也就胡里胡塗地照做了。ご馳走,指的是東奔西走的意思。除了吃完飯總說的這一句以外很少用到,我也從未想過這句話的真意。
擺在面前的盒子如同一本白色封面的書,書封貼著一張貼紙:招財進寶,還微微飄著冰凍過的寒氣。
鶴宮寓的早餐放在冰箱裡。我起得晚了,十點多餐廳只剩下我一人,和這個剛從冰箱裡拿出的白盒子。
輕啟盒蓋,小缽小杯排列盒中,正中央餐巾用麻繩綁起打了個結,像書卷似的頗具玩心。盒裡有吐司,奶油,奶酪,果醬,蛋糕,另外不知是否為我加菜,還有一碗水果優格。這些小點似的健康食物再配上一瓶放在試管瓶裡的豆漿。
一份出乎意料的早餐(因為官網訂房送的),對於平日早餐只喝一杯咖啡的我,已過於豐盛。
原來餐巾捲成的書卷裡頭抱著餐具,湯匙與抺醬刀,我喜歡冰透了的抹醬刀沁涼的手感,炎熱的高雄什麼都是涼的好。
吐司當然要烤,烤得焦焦脆脆的,奶油放上去不一會兒就消融了,把果醬抹上,甜甜的原來是地瓜醬,一片腰果增添三種口感,酥脆、細緻與和果醬融合的滑嫰。一口接著一口,胃都醒來了,只想吃更多。
嚐一口奶酪,又嚐一口水果優格,奶酪不甜優格卻甜。優格裡頭的兩瓣橙子甜得好乾淨,像在白色的畫布只灑上兩片淡雅的澄黃。
我的胃袋每個早晨都經過咖啡洗禮當然無礙,但我確信這是最脆弱敏感的腸胃在一早也能服用的溫柔美味。
看似蛋糕的一片原來是英式司康,司康是種硬糕點,一般無味,適合沾蜂蜜楓糖等再搭咖啡食用。拆開包裝時司康的表面閃亮亮的,不知加了什麼。
我從吐司、奶酪、優格一路吃來的順序看來是對的了,嘴裡的香味漸進漸濃直到咬下一口司康,恰巧是板前壽司或法式餐點上餐的概念----開胃後讓敏銳的味覺集中於主菜之上。此時司康鹹鹹甜甜的,配上無糖豆漿剛好。
早餐盒中還附了一張紙,用簡潔的印刷字體寫明食材的各個產地,都來自於南部近郊的農田。敘述的語氣平淡地像是理所當然一般。關於這白色的盒子裡,四個小缽和兩樣主菜與一瓶豆漿。
料理不過就是各種食材的重製組合,有什麼難的。真是如此嗎?
我一邊吃著一邊想像各個小缽裡恰如其分的料理的來歷,地瓜果醬需要地瓜、腰果、也許一點糖,橙子優格需要優格、柑橙,而這個橙子看來是新鮮現切的,無糖豆漿需要黃豆,還需要一台磨豆機來磨…....
腦海浮現一個東奔西跑的身影。
為了晚起的一個住客與書本大的小盒裡頭的料理,某人奔走了許多地方將食材集合,再一一處理,切片,揉捏,磨碎,攪拌,包裝。眼前的一餐需要多少「馳走」呢?
四個小缽空了,吐司和司康也空了,就著瓶口把無糖豆漿喝完時我不自覺滿足地嘆了口氣。一盒令人難忘的手作早餐,一間令人印象深刻的旅館。
我合掌,默默地說了一句:ご馳走様でした。
In Japan when finishing a meal, we always say “gochisosama deshita,” which literally translates as “thanks for your going everywhere.” Although I’ve stayed in Japan for a long time, I never truly understand the meaning of it.
In front of me was a white box. Because I woke up late, I was the only one in the kitchen, with this white box, which was the breakfast Hok House prepared for me.
I opened the box. Inside were a number of small plates and containers. Toast, butter, jam, cake, a bowl of yogurt and a bottle of soy milk were delicately arranged—such big breakfast was something quite unexpected for a man who only drinks black coffee for breakfast every day.
I spread the butter on the toast and then some jam…except it wasn’t jam, but mashed sweet potatoes with cashews. And the yogurt wasn’t yogurt, but part of a tangerine yogurt salad. And the cake wasn’t cake, but a homemade scone.
There was a card in the box specifying the origins of each and every ingredient—they were all from the suburbs and had been taken good care of by dedicated farmers.
An image began to emerge in my head as if I could see a person who didn’t bother going here and there, trying to collect all the ingredients just to make one box of breakfast.
“Gochisosama deshita, ” I said, with respect.

Kasutera (Castella) is a very popular Japanese sponge cake made from a few ingredients.
It is a very typical Oyatsu (snack) in Japan :)
I am going to bake it in a rice cooker, but of course you can bake it in an oven!
I don't recommend baking any kind of cake in a really good rice cooker (it can damage your pot), so please try if you don't mind it!!!

Now a specialty of Nagasaki, Kasutera was brought by way of Portuguese merchants in the 16th century. The name is derived from Portuguese Pão de Castela, meaning "bread from Castile". Castella cake is usually sold in long boxes, with the cake inside being approximately 27 cm long. It is somewhat similar to Madeira cake, also associated with Portugal, but its closest relative is pão-de-ló, also a Portuguese cake.
There are similar types of sponge cakes named after the same fashion, in French: Pain d'Espagne, in Italian: Pan di Spagna, in Portuguese: Pão de Espanha, in Romanian: Pandişpan, in Bulgarian: пандишпан, in Greek: Pantespani, in Turkish: Pandispanya (Castile is a former kingdom of Spain comprising its central provinces, thus Pain d'Espagne and other variants are quasi-synonymous to "bread from Castile").

Kasutera
Difficulty: Very Easy
Time: 2hrs (incl. cooking time)
Number of servings: N/A
Ingredients:
3 eggs
90g (3.2oz.) sugar
45g (1.6oz.) cake flour*
45g (1.6oz.) bread flour (strong flour)*
2 tbsp. milk
1 tbsp. honey
butter
*you can use 90g (3.2oz.) all purpose flour instead
Directions:
1. Warm the milk in a saucepan. Add honey and mix well.
2. Place the eggs and sugar in a large bowl. Beat them with an electric mixer until white and fluffy.
3. Add 1 in 2. Place the bowl over a pan of hot water. Mix until the batter continuously drips back into the bowl like a ribbon when you scoop it up.
4. Sift in flour and gently cut through the mixture with a spatula until combined.
5. Butter the pot of the rice cooker and pour in the mixture. Drop the pot lightly on the counter to raise the air bubbles out of the batter. Place the pot in the rice cooker, close the rice cooker, then press the button to start. *When it is half-baked, press the button to start (cook) once again.
6. When it's done, let cool on a wire rack until warm. Then place it in a plastic bag (to keep it moist) to cool completely. It tastes even better the next day after the flavors have settled!
How to bake in the oven:
Bake in an oven at 170C (338F) for 10 minutes. Then turn down to 140C (284F) and bake for 40-45 minutes.

Hi, everyone. :) Today we'll show you how to make a terrific Classic BLT Sandwich!
BLT is the most famous Sandwich in US and UK, the name “BLT” comes from the initials of its primary ingredients, they are Bacon, Lettuce and Tomato. It’s the basic sandwich, but can be created and mixed up different ingredients to be more variety. Like add avocado, it’s BLAT, add cheese to be BLCT. Also you can use chicken instead of bacon to make a Club Sandwich.
The basic ingredients of BLT sandwich are bacon, tomatoes, lettuce and mayonnaise between two slices of toasted bread. You can use any kind of bread or toast you like. This recipe will share with you a simple way to make a classic BLT. Of course includes many yummy tips. Hope you like. Happy cooking! :)

Classic BLT Sandwich Recipe
✎ Ingredients
bread 2 slices
bacon 3 strips
lettuce 1-2 pieces
tomato 2 slices (8~10mm thick)
black pepper a pinch
butter 10g
mayonnaise 20g
ketchup 10g
dijon mustard 5g
✎ Instructions
1. Preheat the oven to 200°C. Line a parchment and rack on baking sheet.
2. Place the bacon strips in a single layer and bake for 12-15 minutes until the bacon is crispy.
3. Soak up the extra bacon grease, and season with some black pepper.
4. Cut the tomato into 1cm slice, then place them on a paper towel, use another paper to remove the extra juice. Set aside.
5. Combine the mayonnaise, ketchup and dijon mustard, mix well.
6. Add a little butter in the frying pan, swirl it to coat the bottom. Put 2 slices of bread in the pan, and toast them on each side until golden brown.
7. To assemble the sandwiches, spread a thin butter layer on one side of two breads, then layer the bacon strips, tomato slices, mayo dressing and folding lettuce. Top with the remaining slice of bread.
8. Cut the sandwich in half and serve, enjoy.
