合掌瓜蓮子百合梭羅魚湯:
材料:
梭羅魚1斤
合掌瓜2個
蓮蓬1個
蓮子2湯匙
鮮百合1包
粟米芯1包
薑片5塊
處理:
1. 梭羅魚粗鹽乸2分鐘,清水沖洗乾淨,洗2次,擎乾水。
2. 中火在鑊中燒熱油2湯匙,爆香薑片,加入魚煎香。另一邊煲滾水1.5升,加入魚中,冚蓋,繼續滾湯。
3. 蓮子,去皮去芯。
4. 合掌,去皮去芯,1開4。
5. 所有材料,沖洗乾淨。
6. 合掌瓜,蓮蓬,放入煲。
7. 魚湯已滾好,隔去材料,湯倒入煲內。
烹調:
1. 大火煲滾魚湯。
2. 滾起後,轉中火,再煲15分鐘。
3. 煲了15分鐘,完成,可享用。
Lilly fish soup with chayote and lotus seeds:
Ingredients:
Ambassis gymnocephalus 1 catty
Chayote 2 Nos.
Seedpod of lotus 1 No.
Lotus seeds 2 tbsp
Fresh lilly 1 pack
Corn cob 1 pack
Ginger 5 slices
Preparation:
1. Season the fish with cooking salt for 2 minutes. Rinse with tap water thoroughly for 2 times. Hang dry.
2. Heat up oil 2 tbsps at medium flame in wok. Fry the ginger slices, put fish in wok. Boil up a wok of water 1.5L at high flame on the other side. Pour into the fish. Cover up the wok. Continue to cook the soup.
3. Lotus seeds, remove the skin and cores.
4. Chayote, get them peeled and remove the cores. Divide a chayote into 4 shares.
5. All the ingredients have to be rinsed thoroughly.
6. Put chayote and seedpod of lotus into pot.
7. Fish soup has been cooked well. Filter the fish soup into a pot.
Steps:
1. Heat up the fish soup at high flame.
2. Turn to medium flame after boils up. Boil for 15 minutes more.
3. Have already boiled for 15 minutes. Complete. Serve.
