มื้อนี้เดี๊ยนขอเข้าครัวเสิร์ฟอาหารไทยมายั่งน้ำลายยามค่ำคืนบอกกับวิ่งที่เรียกว่า “แกงเขียวหวานน่องไก่” โอ้ยยยยความดีงามอยูตรงที่น่องไก่นี่แหละ เพราะ เดี๊ยนเลือกมาน่องโตๆ เนื้อแน่นๆ ตุ๋นจนเปื่อย ไหนจะความหอมเครื่องแกงอีกดีงามกว่านี้ไม่มีอีกแล้ว อย่ารอช้ารีบจดสูตรด่วนๆ
หม้อนี้เดี๊ยนใช้วัตถุดิบไม่เยอะเลย พริกแกงก็ไม่ต้องตำเองให้เสียเวลาไปซื้อตลาดเลยจบ จากนั้นนำไปผัดกับน้ำมันเติมหัวกะทิผัดจนแตกมัน จากนั้นก็ใส่น่องไก่และเลือดลงไปผัดต่อเติมหางกะทิลงไปจากนั้นก็ปิดฝารอจนเดือด แล้วปรุงรสด้วยน้ำตาลปี๊บ น้ำปลา
แล้วก็ใส่มะเขือ พริกชี้ฟ้า ใบมะกรูดฉัก ใบโหระพา ลงไปก็ปิดเตาตักใส่ถ้วยสวยๆ พร้อมเสิร์ฟได้แล้วค่า ความฟินมันอยู่ตรงไก่น่องใหญ่และความเข้มข้นหอมเครื่องแกงเขียวหวานนี่แหละ กินกันขนมจีนคือเริ่ดสุด
วัตถุดิบและส่วนผสม
-น่องไก่ 6 ชิ้น
-เลือดไก่ 1 ก้อน
-พริกแกงเขียวหวาน 2 ช้อนโต๊ะ
-หัวกะทิ 1 ถ้วย
-หางกะทิ 2 ถ้วย
-น้ำปลา 3 ช้อนโต๊ะ
-น้ำตาลปี๊บ 2 ช้อนชา
-ใบมะกรูดฉีก 20 กรัม
-มะเขือเปราะผ่าเสี้ยว
-มะเขือพวง
-พริกชี้ฟ้า
-ใบโหระพา

Chinese Fried Rice is a simple and yet difficult to master dish but once you get the hang of it, you can fry this super yummy easy meal anytime.
This is our Din Tai Fung inspired Shrimp Fried Rice. In case you haven't heard about Din Tai Fung, it is a chain of restaurants originating in Taiwan. Back in 1993, New York Times ranked them as the Top 10 Best Restaurants in the World. In 2010, the restaurant's first branch in Hong Kong at Tsim Sha Tsui was awarded one Michellin star and their second branch at Causeway Bay was also recommended by Michellin Guide. Although Din Tai Fung is known to specialise in xiao long bao (Chinese steamed dumplings), their egg fried rice with pork chop is also really popular amongst diners. Of course that includes us :). We actually stood outside DTF kitchen to figure out what ingredients were used. Opps - I hope we won’t be banned from Din Tai Fung because that’d be tragic. Whenever we dine at Din Tai Fung, fried rice is one of our must-order dishes but instead of ordering shrimp fried rice, we always go for their pork chop fried rice. OMG so good! I'll get Roland to show you how to prepare their pork chop next time.
Many different cuisines such as Indonesian, Malay, Japanese, Thai etc today all have their own version of fried rice but did you know that fried rice was actually first developed during the Sui Dynasty in China? This means that all variety of fried rice available in the market today can actually trace their origins back to Chinese Fried Rice.

1 kg pork belly rinsed and pat dry
***Mix #1 to marinate the meat***
1 tsp salt
2 tsp sugar
1 tsp five-spice powder
½ tsp pepper
1 tbsp hoisin sauce/ketchup, optional
***Mix #2 for the skin***

1 tsp white vinegar

FAQ: Why are there bubbling/fizzing effect when Helen mixed salt and vinegar together, but it did not happen with mine?
Answer: The salt Helen used accidentally has baking soda (NaHCO3) in it (This was apparently added by the manufacturer to avoid clumping). It reacts with acid acetic in the vinegar and releases CO2 which causes bubbling effect. However this does not affect the roast pork. Even if your mix does not bubble, the recipe still works with most salt & vinegar.
