Banh Mi at Madam Khanh's is not just about food, it's the heart and soul that she puts in each sandwich to make sure your every bite is a true pleasure. Undoubtedly the BEST Banh Mi I've ever tasted. She is also the coolest granny ever. I used to spent hours chatting with her about food. She doesn't know what I do and I only go there like twice a year, but it never fails to surprise me how she can remember my face and greets me with "Where have you been?" everytime I drop by.

Because Anthony Bourdain deemed Banh Mi Phuong as “the best banh mi in Vietnam,” we went straight to try it the moment we reach Hoi An. The mixed pork version which has steamed pork belly, Vietnamese sausage, grilled pork, pork liver pâté, with a mixed salad of fresh tomator, cucumber slices, cilantro, pickled carrots & daikon, fried egg and a hearty mix of magical dressings that the Phuong sisters make from scratch. It's a fantastic crispy warmed baguette and a bursting flavours of tasty goodness stuffed inside!

Ingredients
1.5 tsp active dry yeast
180ml (3/4 cup) lukewarm water (at 40-46°C or 105-115°F)
250g (8,82 oz. - less than 2 cups) all-purpose flour (low-protein, unbleached)**
1 tsp salt
1 tbsp sugar (optional)

** I live in Germany and here they don't sell the equivalent of bread flour in the US. So I made this recipe with all-purpose flour (Gloria das Backstarke Weizenmehl Type 550 und Dr. Oetker Hefe). But you are free to try it with bread flour. I guess bread flour will generate better results. You can also try Gold Medal Unbleached All-purpose Flour^^

Akari is a Japanese girl who moved to Vietnam one year ago to learn Vietnamese after meeting a Vietnamese student in Japan who would later become her best friend. The morning started off with an Anthony Bourdain inspired banh mi visit at Banh Mi Phuong at 2B Phan Chau Trinh. This banh mi was so filling and meaty, Unfortunately for me, it wasn't the best in the world, but it was delicious nevertheless.

Then I met a street singer who along with his two friends sell personal toiletries like q tips and toothbrushes in the streets of Hoi An. Great street performance.

Afterwards we went over to Cua Dai Beach, the closes beach to Hoi An where I bought some fake sunglasses and flew a kite.
The airport in Da Nang was crowded as usual and our flight was delayed for about an hour. Arriving back into Saigon later than expected, I met up wtih some Canadian friends and we had a late lunch and I went home and crashed in exhaustion.
