世界上的語言有兩種——「無聲與有聲」。
無聲的語言,需要開啟心眼,用心感受傳遞,
有聲的語言,需要開啟想像,大膽努力練習。
做為一位外景主持人,我相信除了流暢的口條,更重要的是,用心去閱讀體會那藏在深邃眼裡、銀白髮髻、交織掌紋間的無聲語言。八年,兩千九百多個日子裡,我搜集了如繁星點點的故事與感動,閃閃亮晶晶地在我心中的小宇宙。默願著有那麼一天,我一定要站上世界的舞台,與大家分享這些亮光,分享台灣的美好。
我很感恩雖然沒有大紅大紫,但一路上滿滿是貴人與奇蹟。今年我接下了一個新節目,我將帶著五大洲12位外國朋友來認識台灣與客家文化,此時,有聲語言變得十二萬分重要,曾經短暫擔任過國小英文老師的我,用英語來表達並不陌生,但是要更精進絕對需要更有系統的學習,謝謝 TutorABC 為我開啟了新的學習大門,透過線上課程,我可以隨時隨地進入學習的情境中。
於是這天我來到美麗的北海岸邊,開始我的第一堂英文課,熱愛大自然的我,也能藉此忙裡偷閒,更重要的是,終於有這機會我能帶外國朋友看看台灣的美了!
Teacher Madison住在英國劍橋,透過螢幕鏡頭,我看見她教學的熱情與喜悅,我也藉著簡單的英文語句,跟她說此時我在這太平洋的寶島上,那海有多藍,那陽光的味緒多和煦,那礫石的觸感有多親膚,那男女老少有多熱情。
我選擇戶外活動的課程單元,課前TutorABC會先提供課程內容,讓我可以提早預習。上課過程中,Madison先帶我認識每個單字的解釋,再藉由生活經驗的分享,引導我自在地用英語來表達,最後的學習評鑑也順利地將我的學習進度完整紀錄!
我們說說笑笑,也用英文交換彼此眼前的美好景物,有幾度我眼眶紅紅,也許是橘紅夕陽映眼的關係吧,當她說起受教育的過程中,她一直都知道太平洋上有一個美麗的寶島,叫作「Formosa Taiwan」,而她也一直期待著有天能夠來台灣旅行,我們靜默了幾秒,同聲說——

“You opened my door to the world, and accompanied me on this global journey”
There are two kinds of languages; one is conveyed by sound while the other one is utterly silent. The “silent” language is perceived by an observant and open heart. On the other hand, a language with sound requires a wild imagination and relentless training.
As an outdoor TV host, I believe that what matters, besides speaking eloquently, is to read between the lines and to be aware of the stories in our elder’s eyes, silver hair buns, and intertwined fingerprints. During the past 8 years of my career, I collected a plethora of anecdotes, and they are just like sparkling stars in my little universe. I hope someday I can stand in front of a big crowd and show everyone these stars, which represent the gifts of Taiwan.
I am eternally grateful for those heroes and miracles along the way, even if I didn’t make it big. This year, I am hosting a new TV program. I will introduce Taiwanese and Hakka culture to twelve foreign friends from five continents. Because of this, my language skills are crucial to the success of the program. I am familiar with communicating in English since I have been an elementary school English teacher. However, in order to reach a higher level of proficiency, I need to learn in a more systematic and organized way. Thanks to TutorABC, I found a new gateway to learning, and through their online courses, I can always start learning regardless of time and space.
So, one day I came to the gorgeous northern coast, and started my first English class. As a nature lover, I can also release my stress from work. Not to mention, I finally had the chance to introduce my foreign friends to the beauty of Taiwan and its natural scenery.
Ms. Madison, my teacher, lives in Cambridge, United Kingdom. Via the camera of her computer screen, I saw her joy and enthusiasm in teaching English. With a few simple English sentences and phrases, I described the sight of this gifted island on the Pacific Ocean: the azure sea, the blazing sun, the textured rocks, and the elated people.
I chose the course related to outdoor activities. Before class, TutorABC will provide me with course material for previewing. During class, Ms. Madison will introduce the definition of the words, and encourage me to use those words to share my stories and experiences. Before the class ends, a learning assessment will be conducted to record my current progress.
We chatted, laughed, and used English to share the breathtaking view in front of us. Occasionally, my eyes were slightly red, probably due to the orange sunset that projected onto my eyes. Ms. Madison talked about her school years, and how she always knew that there is a beautiful island named “Formosa Taiwan” on the Pacific Ocean. She always looked forward to visiting Taiwan. After a few seconds of silence, we said to each other simultaneously, “So glad to meet you here today through TutorABC!”
Learning a new language can be very joyful and rewarding, if we are willing to forget all the excessive concerns and recollect the pure enthusiasm of learning our mother tongue from adults when we were still children. 2015四川協作訓,課程內容多樣,攀冰只是一小部分,只能説稍微玩了下,結果當年在吉爾吉斯坦爬山時就發生意外左腳癱瘓。
I join a mountaineering training in 2015. but ice climbing in this training is only little part.
And I get paralyzed my left leg by mountain accident in same year after the training.
2016年,用L型架子和繩子綁住無法控制的左腳,硬是要爬~但其實連走山路都很困難😅,更不要説能練習什麼了。
I tried to climbing ice by tie my left foot with an L-bracket. But it's too difficult for me even walk to ice wall... how can I practice will?
2017年雖然左腳依然無法控制得當,但至少不用在用架子撐起來,想說終於可以好好練習了,結果還沒爬幾次,隊友就出事收工了~😭
finally my foot don't need to use bracket for ice climbing in 2017. But we just climbed few roads and we back because my partner fall and seriously hurt.
所以今年,其實才算是真正的有訓練到阿!

"Through today's competition, I learned a little about how strongly (Uchimura) Kohei-san feels about team competition and the weight he carries (with the desire to win). When we placed 2nd in London (2012 Olympics), the me who was a national representative for the first time was just happy. Today we have achieved the same 2nd place but it feels completely different. Kohei-san has felt this so many times...really tough. For Kohei's sake as well, I will not feel down and do my very best next year!!"

(T/N: When the final results flashed on the scoreboard Team Japan looked so heartbroken, and Ryohei in particular couldn't contain his disappointment and frustration - it really showed. He just sat on the floor for a good few minutes. He looked really crestfallen in his interview with the Japanese media right after, so guess he received many messages, heh)

時々はクープを練習しないと、ますます出来なくなるので、練習も兼ねています^^
ミルクハースは深めにクープを入れるのでスライスするとめっちゃ美人になるパンで、野菜なんかと一緒にお皿に乗せると一気におうちカフェに気分に!
そのまま食べても良し、サンドイッチにも良しで優秀なパンです。
200gの強力粉で作るなら分割せずにそのままが楽ちんですが、クープが難しくなるのと巨大なまこかうり坊みたいになるので、2分割かもしくは4分割がおススメ^^

【Ingredients】
★200g Bread flour
★15g Sugar
★3g Salt
130g Milk
20g Sweetened condensed milk
3g Dry yeast
15g Unsalted butter(room temperature)
For Sprinkle:Bread flour(as needed)
The best milk temperature for the dough: About 30℃ for spring and autumn. About 10℃ for summer, and about 40℃ for winter.
【Directions】
①Combine the dry ingredients (★)and mix together with a whisk.
②Add dry yeast and milk,Sweetened condensed milk and Mix.
③Put it on the table and knead. (10mins)
④Add butter and knead more. (5mins)
*Near the end, pull the end of your dough with your thumb and fingers. Keep spreading the dough with your fingers, stretching the dough into thin translucent membrane.
This test is called Windowpane Test to see if the dough's gluten has been developed enough. If the dough tears, the gluten isn’t quite ready yet. Knead the dough for another few minutes and test again.
⑤Make it round, then leave it at a warm place until it gets twice as bigger. (primary fermentation)
⑥Degas the dough from ⑤, divide it into 2 pieces and make them round
⑦Cover them with a wet cloth and leave them for 10 mins. (bench time)
⑧Roll the dough out with a rolling pin about 13cm wide x 20cm long. Roll the long sides of the dough in towards the center and fold in.
⑨Fold the dough in half, seal closed and flip it over.
Place on a baking sheet lined with kitchen parchment paper.
⑩Cover them with plastic wrap or a wet cloth not to dry, leave it at a warm place until they get twice as bigger. (secondary fermentation)
⑪Preheat the oven to 374 °F/190℃. Dust the rolls with bread flour (not listed in the ingredient list) using a tea strainer.
⑫Using a paring knife,slash the top with 5 cuts.
⑬Bake at 374 °F/190℃ for 15min.
⑭ Place it on a wire rack to cool.

*Be careful not to let the dough dry out when you are letting it rise or rest.
*When the dough is too moist and sticky, powder the dough a little.
【材料】
★強力粉 200g
★砂糖 15g
★塩 3g
牛乳 130g
練乳 20g
ドライイースト 3g
無塩バター(室温) 15g
強力粉(分量外)
*仕込み水の適温:
春・秋は、約30℃、夏は、約10℃、冬は約40℃です。
真夏は冷水を使ってください。
【作り方】
①★の材料をボウルに入れて泡だて器で混ぜる。
②中央にイースト加えてそこへ牛乳、練乳を注ぎ、ヘラなどで混ぜる。
③台の上に生地を取りだして、10分こねる。
この時に生地がベトベトなら粉を足す、逆にまとまらず粉っ気が多いようなら水分を足してください。
④バターを加えてさらに5分ほどこねる。
(生地の端などを手で伸ばしてみて薄く伸びるようならグルテン膜が出来ているのでこねはOk、生地が伸びずに破けるようなら捏ねが足りないのでもう少し捏ねる)
⑤丸めてボウルに入れて、ラップなどを被せて大きさが約2倍になるまで暖かい場所に置いて一次発酵。
⑥生地のガス抜き後、二つに分割して丸める。
⑦乾燥させないように濡れ布巾などを被せ、10分ベンチタイム。
⑧生地をガス抜き麺棒で伸ばし(13cm x 20cm)真ん中に向かって両端から生地を折る。
⑨これを手でつまんで中央で綴じ、綴じ目を下にしてオーブンシートを敷いた天板に置く。
(この時にしっかりと綴じておかないと二次発酵後に綴じ目が外れて開いてしまうのでしっかりと生地をつまんで綴じてください)
⑩上から濡れた布巾などを被せて2倍の大きさになるまで暖かい場所などに置いて二次発酵させる。
⑪オーブンを190℃に温める。
茶こしを使ってパンに強力粉をふりかける。
⑫包丁などを使ってパンの表面にクープ(切り込み)を入れる。
⑬しっかりと温まった190℃のオーブンで15分焼く。
⑭焼き上がったらワイヤーラックなどの上で冷ます。
水切りヨーグルトや季節のジャムでお楽しみ下さい!
*発酵中やベンチタイム、成形時は生地が乾燥しないよう気を付けて下さい。
*クープは100均などのカミソリでもok!
(今回はペティナイフでやってみました、よく切れるなら問題なし、あとは慣れ!)
ドラッグストアーなどの女性用のカミソリよりも何もガードがついていないものの方がクープは入れやすいです。
刃先をペンチなどで挟んで少し引っ張って長めの刃先にすると使いやすくなります。
