This tutorial will show you how to make EASY Japanese Baked Cheesecake since I received a lot of request for it. Like New York Cheesecake, people call it "Japanese" Cheesecake!? I hope you love it!!!
I made the crust with vanilla wafers (not the biscuits). It tastes very crispy and delicious, so try it out!!!
My darling is not a sweets person but he loved it! Also, my mom said it was really good :P hehe

Japanese Baked Cheesecake
Difficulty: easy
Time: 40min + 2-3 hours refrigeration time
Number of servings: 12 cheesecake bars
Necessary Equipment:
6-inch square brownie pan
(9-inch square brownie pan makes 18 flatter cheesecake bars)
Ingredients:
((Crust))
120g (4.2oz.) vanilla wafers
40g (1.4oz.) butter (softened)
((Cheesecake))
200g (7oz.) cream cheese (softened)
60g (2.1oz.) sugar
2 egg
150cc fresh cream (or whipping cream is okay)
1 tbsp. lemon juice
3 tbsp. flour
20g (0.7oz.) butter
Directions:
((Crust))
1. Line the brownie pan with waxed paper or parchment paper.
2. Smash vanilla wafers in a Ziploc bag, add butter (softened), and mix well. Press firmly into the brownie pan. Chill until set.
((Cheesecake))
1. Preheat the oven to 180C (350F).
2. Beat cream cheese with wire whisk. Add sugar, beaten eggs (little by little), fresh cream, lemon juice, flour (sift in), and melted butter, and mix until smooth.
3. Pour the cream cheese mixture into the brownie pan and bake at 180C (350F) for 35-40 minutes.
4. Allow to cool to the room temperature and refrigerate for 2-3 hours. Cut into bars.
The best way to cut a cheesecake is to use a long knife that has been warmed in hot water. Dip the knife in hot water, wipe, and cut. Repeat this each time you cut!

How to Make Hot Cake (Japanese Pancake) Recipe
Difficulty: Easy
Time: 20min
Number of servings: 3
Ingredients:
1 egg
100cc milk
1 Morinaga Hot Cake Mix (flour)
1 maple syrup
a piece of butter
Directions:
1. Put egg and milk in a bowl and mix well. *Make sure you mix them together before you add the Hot Cake Mix!
2. Add Hot Cake Mix and gently cut through the mixture until somewhat combined. *Do NOT mix in a circular motion and DO NOT mix too much!
3. Heat a pan over medium heat (if you are using steel pan, oil the pan lightly), and place the pan on a wet towel to cool down the pan a little bit.
4. On low heat, pour 1/3 of the batter from heights of 11 inches (30 cm) onto the pan, and cook for 3 minutes until bubbles appear on the surface. *Use cooking timer to time.
5. Flip with a spatula, cover and cook for 2 minutes until browned on the other side.
6. Place a piece of butter on top and pour some maple syrup.
You can wrap in a plastic wrap and freeze to eat later.
Microwave for a minute and you can enjoy fresh and fluffy pancake :)

Roll Cake is a type of sponge cake roll. In Japan, we call it "Roll Cake" but in some other countries people call it Swiss roll or jelly roll.
I used to make it every week when I first knew that I can make it at home. But now I haven't made it for a long while... maybe for more than 5 years! LoL

Japanese Roll Cake
Difficulty: medium
Time: 60min
Number of servings: 8 pieces
Necessary Equipment:
9-inch square brownie pan
electric mixer
Ingredients:
((Sponge Cake))
2 egg
50g (1.8oz.) superfine sugar
35g (1.2oz.) cake flour
20g (0.7oz.) milk (room temperature)
((Filling))
200ml fresh cream (heavy whipping cream)
1 tbsp. granulated sugar
some fruits of your choice: strawberry, kiwi, canned fruits are okay!
Directions:
((Sponge Cake))
1. Line the brownie pan with waxed paper or parchment paper. Preheat the oven to 180C (350F).
2. Beat eggs and sugar with wire whisk in a metal bowl. Placed it over the pan of hot water and melt the sugar and warm them up to 40C (104F).
3. Then with an electric mixer, beat the batter on high speed for about 5 minutes until white and fluffy. Then on low speed, beat for about 2 minutes to set the texture.
4. Sift in flour and fold together with spatula for about 10 times.
5. Add milk and fold together with spatula for about 50 times until combined.
6. Spread the batter in the brownie pan and drop the pan lightly on the counter to raise the air bubbles out of the batter.
7. Bake at 180C (350F) for 11-12 minutes till lightly brown. (Depending on the heat of the oven, cooking time may differ, so please watch out.)
8. When it's done, drop the pan lightly to prevent shrinking. Remove the sponge cake from the pan by lifting the wax paper and place it on a wire rack to cool.
9. When it's cool enough, remove the parchment paper and place the sponge cake on the parchment paper with the brown side up.
((Filling))
1. Combine fresh cream and granulated sugar in a dry, clean bowl. Float the bottom of the bowl in ice water, whisk the cream until it forms a soft peak.
2. Dice the fruits of your choice.
3. Coat the surface of the sponge cake evenly with the cream. Place the fruits over the creamed surface (leave an inch at both ends).
4. Wrap the cake in the parchment paper and put in a fridge for 30 minutes to set.
5. Cut into round pieces! The best way to cut the cake is to use a knife that has been warmed in hot water. Dip the knife in hot water, wipe, and cut. Repeat this each time you cut!

嗨!大家好,我是 Cassandre,這集的『食,不相瞞』,我們來考一盤美式經典:酥皮軟芯的巧克力布朗尼(Fudgy Brownies)。
巧克力布朗尼是很多朋友的最愛喔,而軟芯的布朗尼,更是有廣大的鐵粉支持,他的作法非常簡單,材料也不複雜,基本上就是一個料理盆,把材料往裡面加加加、攪攪攪,從頭做到底,然後拿去烤就完成了,很適合在家動手作。

軟芯布朗尼(Fudgy Brownies)怎麼作呢?
下面是巧克力布朗尼的作法與食譜:
☞ 份量為18*18*5cm的方形小烤模(可切出九塊6*6公分的布朗尼)。
📌 烤模尺寸換算方式:

✎ 材料 / Ingredients
* 無鹽奶油 85克 / unsalted butter 85 g
* 苦甜巧克力 100克 / bittersweet chocolate 100 g
* 無糖可可粉 15克 / cocoa powder 15 g
* 細砂糖 100克 / granulated sugar 100 g
* 黑糖(或二砂/黃砂糖) 50克 / brown sugar 50 g
* 香草精 8克 / vanilla extract 8 g
* 鹽 1/2茶匙 / salt 1/2 tsp
* 蛋 2顆 / eggs 2
* 中筋麵粉 40克 / all-purpose flour 40 g

✎ 做法/Instructions
1. 先將巧克力分成兩部分切碎,60g 做甘納許,40g拌入麵糊
2. 將奶油以中火加熱融化,然後趁熱淋在60g的巧克力碎塊上,靜置兩分鐘,接著攪拌至完全融合滑順(巧克力奶油甘納許)。
3. 起一中大型的料理盆,打入兩顆雞蛋,加入白糖和黑糖(黑糖可以用二砂/黃砂糖替代),以打蛋器打發。
4. 蛋糊要打發到膨鬆顏色變白。
5. 加入鹽與香草精,拌勻。
6. 加入巧克力甘納許,拌勻。
7. 篩入麵粉和可可粉,輕拌(Fold)到看不見乾粉即可,不要過度攪拌。
8. 最後將40g的巧克力碎塊拌入,麵糊即完成了。
9. 將烤模底部與四面抹上Butter,鋪上烘焙紙,同時烘焙紙的底部也要抹上Butter(這樣布朗尼就不會沾黏)。
10. 烤箱預熱 180° C,烤20分鐘。
11. 烤好後,把布朗尼留在烤盤上完全放涼,即可切片收工囉 ^^
