((Usuyaki Tamago Egg Crepe Oranges))
1. Beat 1 egg + 1 egg yolk in a bowl and season with chicken stock powder and a bit of salt (a bit of salt and sugar is fine). Heat cooking oil in a Tamagoyaki Nabe (rectangular omelet pan) on low heat, pour the egg mixture in the pan and spread over the surface. Cook the egg until the edges begin to dry, then flip it over and cook the other side for about 10 seconds.
2. Roll up the egg while it's warm, wrap in plastic, and leave to cool to keep its shape.
3. Cut the egg into 2/3-inch pieces. Cut out the sliced cheddar cheese into small oval shapes. Then cut them diagonally. Attach them with bits of mayonnaise to look like orange pulp.
((Cinnamon Onigiri Rice Ball))
1. Blue Egg Crepe: Mix 1 egg white and purple potato powder until you reach your desired blue color (the blue color is produced by a chemical reaction). Strain the mixture with a strainer. Heat cooking oil in a Tamagoyaki Nabe (rectangular omelet pan) on low heat, pour the egg mixture in the pan and spread over the surface. Cook the egg until the edges begin to dry, then flip it over and cook the other side for about 10 seconds. Leave it to cool completely.
2. Put steamed rice in a bowl and mix a pinch of salt to taste. Use plastic wrap and form the rice to make the face and the ears of cinnamon. Cut out the blue sheet of egg to make cinnamon's eyes. Cut out a slice of ham to make cinnamon's cheeks. Use Nori Punch to cut out the mouth (you can also use scissors). Then attach them with bits of honey with tweezers.

This tutorial will show you how to make a fruit tart from scratch!
Great recipe to try when the strawberries are in season ;)
I used sugar substitute (to save calories) but you can of course use regular sugar.
---------------------------------
Easy Sugar-Free Fresh Strawberry Tart
Difficulty: Medium
Time: 3hrs
Number of servings: 6
Necessary Equipment:
16cm (6.3-inch) tart pan with a removable bottom
Ingredients:
((Crust))
60g (2.1oz.) unsalted butter (softened)
30g (1.0oz.) powder sugar (or sugar substitute)
1 egg yolk
100g (3.5oz.) cake flour
((Filling))
40g (1.4oz.) unsalted butter (softened)
30g (1.0oz.) powder sugar (or sugar substitute)
1 egg
1/2 tbsp. cornstarch
40g (1.4oz.) almond powder (ground almonds)
a few drops vanilla extract
((Syrup))
20g (0.7oz.) powder sugar (or sugar substitute)
20ml hot water
a bit of Kirschwasser (colorless fruit liquor) *optional
((Decoration))
80g (2.8oz.) sugar-free fresh apricot jelly, jam, or preserves
fresh strawberries
fresh mint leaves *optional
Directions:
((Crust))
1. Cream the butter in a large bowl with a wire whisk. Add sugar substitute or powder sugar, egg yolk, and mix well.
2. Sift in flour and fold in with a spatula. At the beginning, it becomes like Parmesan cheese. Then after a while, it comes together, so mix with patience.
3. Wrap in plastic wrap and refrigerate the crust for at least 1 hour to chill.
((Filling))
1. Cream the butter in a large bowl with a wire whisk. Add sugar substitute or powder sugar, egg, cornstarch, almond powder, Kirsch (if you like), and mix well.
2. Preheat the oven to 180C (350F).
3. Roll out crust between two pieces of plastic wrap to 4mm (just over 1/8") thick.
4. Transfer the crust to the tart pan with a removable bottom, press it evenly into the bottom and up the sides of the pan. Trim crust flush with the edges of the pan. Lightly prick the bottom of the crust with a fork.
5. Fill the almond filling (1.) and smooth the top. Bake at 180C (350F) for 25 minutes until lightly browned.
6. Place the tart pan on the wire rack to cool.
((Syrup))
1. Mix sugar substitute or granulated sugar, hot water, and Kirsch if you like.
((Decoration))
1. Strain fresh apricot jam to remove any large clumps.
2. Wash and hull strawberries, leave one strawberry whole and cut others into halves.
3. When the tart is completely cool, remove from the pan and gently brush the top with syrup and apricot jam.
4. Place the strawberry whole in the middle and arrange the strawberry halves around it.
5. Mix the remaining jam and a bit of syrup to thin down the jam. Using a pastry brush, coat strawberries with jam to give a shine. Garnish with mint leaves if you like.

We've wanted to try making Schneeballen for 20 years. For a long time we didn't know which country this pastry came from, but now we've learned for the first time that it can be eaten in Austria and Germany. Schneeballen seems to have the meaning of a snowball, so it's a pastry that is just right for this season. It might even be fun to take advantage of the cute round shape to decorate it in the style of a Christmas ornament. Because a specialty frying mold is expensive, we used a "ball-shaped strainer," normally used when you strain things like soup stock. It's a fried pastry, but the whole family praised it for not having a heavy flavor.
*Recipe* (Makes 3 round balls with a diameter of 6.5 cm)
1. Into your food processor (you can also knead by hand in a bowl), add 65g of all-purpose flour (if you don't have any, you can substitute half bread flour and half cake flour), 7g of powdered sugar (3/4 tbsp), and a pinch of salt. Mix ingredients together lightly, as if you're gently shaking it.
2. Add 3 medium-sized eggs (about 60g when they're still in the shell) and rum 5g (1 tsp) ,a small amount of vanilla extract, then knead.
3. Once you have finished kneading it, cut the dough (ours was 122g) into three equal pieces, and make them into balls.
4. Cover it with plastic wrap or something similar, and let it rest for 20 minutes.
5. Lightly cover the surface of the table with bread flour, then take the results from step #4 and stretch them thin using a rolling pin.
6. Cut them into slits with a roller cutter, about 1 cm wide. Try to make it so that they are not cut off completely from each other, but still have about 1 cm from the edge left over.
7. With your hand pick up every other piece, and then stretch and place them as in the video.
8. Take your thinly sliced parchment paper (33 cm long) and fold it in two. As shown in the video, tuck the parchment paper into the dough, then loosely form it into a round shape. The parchment paper is easy to take off after it's been fried, so tuck it in tightly.
9. Put the results of step #8 in the ball-shaped strainer, and close firmly.
10. Put the results of step #9 in a whisking machine, and make it so it does not move.
11. In oil heated to 180 degrees, stir the results of step #9 around, while frying for 2 minutes.
12. Remove the ball-shaped strainer from the whisking machine, and then remove the Schneeballen from the ball-shaped strainer. (It will be hot so please wear oven mitts.)
13. Once it has completely cooled, sprinkle it with powdered sugar.
14. Enjoy decorating it with a ribbon.
15. When you eat it, you can garnish it by whisking together a mixture with a ratio of 200 ml of fresh cream for each 20g of sugar.
Note: A ball-shaped strainer with a diameter of 6.5 cm (144 cubic cm) was just the right amount for 40g of the dough. Please adjust the amount of dough in accordance to the size of the ball-shaped strainer.
