「儘管我有著東方面孔,但我不是台灣人,家族根源也不在台灣。一直到我念大學時 (美國麻薩諸塞州的威廉斯學院,非常棒的學校),我才透過普林斯頓北京中文培訓班的機會,真正到東亞來闖蕩。
大學畢業之後,我埋首於數字和表格之間,精釀啤酒陪我撐過了這段辛苦的歲月。我的職涯始於紐約,但後來輾轉來到亞洲 (名義上是去新加坡,但主要是在印尼、緬甸和馬來西亞)。
在數字間打轉從來不是我的夢想。身為一個負責任且典型的千禧世代,我一直很想獨立開創自己的事業,如果能將個人興趣和創業機會相結合,那就太完美了。而精釀啤酒就是那完美的交集點!精釀工藝的精神我深有同感,這是一種對未來可能性充滿嚮往、不盲目接受現狀的精神;同時也代表著與一群優秀的人才,一起開發令人驚喜的產品,並打造屬於自己的社群。
成立臺虎精釀的契機出現之後,我立刻想到台灣。之所以選擇這裡,不是因為台灣文化很吸引人 (雖然確實是),不是因為台灣有著厚實的文化傳統 (雖然確實有),更不是因為台灣的好山好水。
我選擇台灣的主要原因是這裡遇到的人。很多人會說,人生中有兩個家庭,一個是你的原生家庭,另一個是你自己選擇的家庭。對我來說,那個我自己選擇的家庭,似乎就在台灣。
臺虎精釀的商標 (由台灣傑出設計師Jess Lee設計) 由老虎、啤酒花和葫蘆三個元素組成,葫蘆是古代盛酒的容器。
葫蘆就不需要多加解釋了,但啤酒花是當代精釀啤酒的基石,代表著創新創意的精神。事實上,我們使用的絕大多數啤酒花都來自美國,畢竟美國是精釀啤酒的中心 (過去20年一直都是)。美國的啤酒花產業 (還有麥芽產業) 可以說是世界之最,也難怪經典IPA啤酒中最受歡迎的啤酒花都來自美國。
商標中的老虎是為了向早期台灣作為「亞洲四虎」(亞洲四小龍) 的年代致敬。當年台灣經濟快速起飛,產業朝氣蓬勃,民眾無不對未來充滿樂觀和期待。
老虎代表的正是那樣的生機勃勃、神采煥發。臺虎167名員工幾乎都是台灣人。我們認為,與其說臺虎是一個釀酒廠,不如說臺虎是讓台灣年輕人才發光發熱、實踐夢想的平台。

“Despite appearances, I’m neither Taiwanese nor have roots here. It took college (Williams College in Massachusetts – phenomenal place), to really bring me out to East Asia via Princeton’s immersion program in Beijing.
Post-graduation, I paid my dues shuffling numbers around in a spreadsheet. Craft beer made it bearable-ish. Working life began in New York, but ultimately landed me in Asia (nominally Singapore, primarily Indonesia, Myanmar, Malaysia).
Shuffling numbers was not the dream. So, as a responsibly stereotypical millennial, I had an urge to venture out on my own. Ideally, to try something at the intersection of opportunity and interest. Craft beer! The craft movement itself struck a chord - a yearning for what could be, rather than blind acceptance of what is. It is about building communities around delightful products and, critically, wonderful people.
When the opportunity to start Taihu appeared, my mind immediately went to Taiwan. Not necessarily because the culture is fantastic (though it is), nor because it has a strong cultural heritage (though it does), and not even because the island itself is a magical composition of mountains meeting oceans.
Ultimately, I chose Taiwan because of the people I met here. There’s a tired trope that you get two families in life, the one you’re born into and the one you choose. For me, that chosen family, well, it seemed like it could be in Taiwan.
Taihu Brewing’s logo (designed by brilliant local artist, Jess Lee) is comprised of a tiger and hops within a hulu (traditional Chinese alcohol vessel).
The hulu needs no explanation, but hops are the cornerstone of modern craft beer. They represent the innovation inherent in the space. In fact, the vast majority of the hops that we use are from the United States. Since the US is the epicenter of craft brewing (and has been over the last twenty years), the American hop industry (malt too, actually) is arguably the best in the world. It is for good reason that the most popular hops in category-defining IPAs are American.
The tiger is a nod to an earlier era when Taiwan was one of the “Four Asian Tigers.” Taiwan’s meteoric economic rise was accompanied by deterministic optimism, vibrancy, and general excitement about the future.
The tiger represents that energy. That sense of opportunity, positivity, and hope. Taihu’s 167 employees are almost entirely Taiwanese. Internally, we think of Taihu as more of a platform for young Taiwanese talent than as a brewery, a medium for that energy to express itself.
Our goal to attract and develop talent with the ultimate goal of developing the burgeoning entrepreneurial ecosystem here in Taiwan. One of our earliest team members, Sway, came on board as a bartender -- a fantastic bartender. At a small company, you do what you can, where you can, and Sway ended up taking up some of the slack in our logistics. Now she runs all of Taihu’s international supply chain (no small feat).

ผู้ก่อตั้งร้านอาหารหัวปลาช่องนนทรี คือ คุณแป๋ว ลิมป์รัตนกาญจน์ ซึ่งชีวิตในวัยเด็กของเธอค่อนข้างยากลำบาก พ่อมีอาชีพขับรถ 3 ล้อ ส่วนแม่นั้นเป็นแม่ค้าหาบของขายในตลาด
แน่นอนว่า นอกจากเวลาเรียนแล้วคุณแป๋วก็ต้องไปช่วยแม่หาบของขายในตลาดเช่นกัน ตั้งแต่อายุ 6 ขวบ ซึ่งคุณแป๋วเล่าว่า ปกติแล้วขายได้เงินวันละประมาณ 10 บาท
คุณแป๋ว เรียนจนถึงแค่ชั้น ป.2 ก็ต้องออกจากโรงเรียนมาขายของแทนคุณแม่ เนื่องจากคุณแม่ป่วย ซึ่งเงินที่ค้าขายนั้น รวมกับรายได้จากการถีบรถ 3 ล้อของคุณพ่อ ก็เอามาใช้ในการรักษาคุณแม่ของเธอ จนคุณแม่ค่อยๆ หายและกลับมาค้าขายได้อีกครั้ง
เมื่อคุณแป๋วอายุ 16 ปี เธอขอคุณแม่กลับไปเรียนภาคค่ำ เนื่องจากอยากอ่านหนังสือออก และหลังเลิกเรียนก็ยังมาช่วยทำงานหาเงินต่อ
แต่แล้วแม่ของเธอล้มป่วยอีกครั้ง คุณแป๋วต้องหยุดเรียน และทำงานหนักมากขึ้นเพื่อหาเงินมารักษาคุณแม่
จนเมื่อคุณแม่ของเธอเสีย ตอนนั้นครอบครัวยังมีหนี้สินมาก คุณพ่อก็เอารถ 3 ล้อไปจำนอง
ส่วนคุณแป๋วก็ทำงานต่อไปหาเงินมาใช้หนี้ อีกประมาณ 3 ปี เธอจึงสามารถสะสางหนี้สินของครอบครัวหมด
ต่อมาคุณแป๋วได้แต่งงานกับคุณกฤช ซึ่งเปิดร้านทำหน้าต่างและประตูเหล็ก คุณแป๋วจึงออกมาเป็นแม่บ้าน และไม่ได้ค้าขายที่ตลาด
อย่างไรก็ตาม ธุรกิจของคุณกฤชนั้นมีรายได้ไม่แน่นอน แถมต้องให้เครดิตแก่ลูกค้า ทำให้หลายครั้งธุรกิจจึงขาดสภาพคล่อง
ทั้งคู่เลยตัดสินใจมาขายของกิน เนื่องจากจะมีเงินสดมาหมุนเวียนมากกว่า โดยเริ่มจากเปิดร้านข้าวต้มปลาเล็กๆ เป็นเพิงในตอนเย็นเพื่อหารายได้อีกทาง ช่วงแรกร้านของทั้งคู่มีโต๊ะนั่งเพียง 3 โต๊ะเท่านั้น
เวลาผ่านไปร้านข้าวต้มเริ่มขายดี เจ้าของที่ที่ทั้งคู่เช่าอยู่ เลยอยากให้ทั้งคู่ขยายร้านเพิ่ม การขยายร้านนอกจากจะทำให้มีจำนวนลูกค้ามากขึ้น ยังทำให้เมนูอาหารเพิ่มขึ้นตามไปด้วย
หลังจากนั้นเมื่อเวลาผ่านไปกิจการก็ค่อยๆ ขยายสาขา จนกลายเป็น อาณาจักรหัวปลาช่องนนทรี ในปัจจุบัน
ตอนนี้ ร้านหัวปลาช่องนนทรี มีทั้งแบบสแตนด์อโลนจำนวน 6 สาขา โดยอยู่ในกรุงเทพฯ และปริมณฑล 5 สาขาและต่างจังหวัด 1 สาขา รวมทั้งยังมีสาขาในห้าง 3 สาขา ที่เซ็นทรัลเวิลด์ เมกาบางนา และเทอร์มินอล 21 (โคราช)
รายได้ บริษัท หัวปลาช่องนนทรี จำกัด
ปี 2559 รายได้ 122 ล้านบาท
ปี 2560 รายได้ 190 ล้านบาท
ปี 2561 รายได้ 271 ล้านบาท
ในส่วนของชื่อร้านนั้นคุณแป๋วและคุณกฤชเล่าว่า จริงๆ แล้วชื่อร้านมาจากลูกค้า ซึ่งเกิดจากเวลาที่ลูกค้านัดเจอกัน มักจะพูดว่า “ไปเจอกันที่ร้านหัวปลาแถวช่องนนทรี”
พอเรื่องเป็นแบบนี้
ทางคุณแป๋วและคุณกฤช จึงนำมาใช้ตั้งชื่อร้านจนถึงทุกวันนี้นั่นเอง
ขณะที่ปัจจุบัน ร้านอาหารหัวปลาช่องนนทรีบริหารงานโดยผู้บริหารรุ่นที่ 2 คือ คุณวิทยา ลิมป์รัตนกาญจน์ ซึ่งเป็นทายาทของคุณแป๋วและคุณกฤช
จากอดีตที่มีเพียงร้านข้าวต้มปลา ปัจจุบัน ร้านอาหารหัวปลาช่องนนทรีวางตำแหน่งร้านให้มีทั้งอาหารไทย อาหารจีน และอาหารทะเล
นอกจากนี้ ถ้าเราสังเกตร้านหัวปลาช่องนนทรีจะตั้งอยู่ติดถนนใหญ่ที่คนสัญจรไปมาเยอะ ซึ่งเป็นกลยุทธ์การเลือกที่ตั้งร้านที่ผู้บริหารให้ความสำคัญมาตลอด ทั้งนี้ ก็เพื่อดึงดูดให้ลูกค้าเข้าร้านและยังเป็นการประชาสัมพันธ์แบรนด์ของธุรกิจให้คนจดจำไปด้วย
เรื่องนี้ให้แง่คิดกับเราอย่างหนึ่งว่า
คนที่จะประสบความสำเร็จได้ บางทีก็ไม่จำเป็นต้องมีต้นทุนชีวิตที่ดีเสมอไป
กรณีของคุณแป๋วก็เช่นกันที่ต้องช่วยแม่ค้าขายตั้งแต่อายุ 6 ขวบ เพื่อช่วยหารายได้ให้ครอบครัว รวมทั้งออกจากโรงเรียนช่วงที่คุณแม่ป่วยเพื่อมาค้าขายแทนคุณแม่
จนสุดท้ายเมื่อมีโอกาสมาเปิดร้านอาหาร แม้ว่าจะเริ่มจากร้านเล็กๆ เป็นเพิง ไม่ได้ใหญ่โตหรูหรา เหมือนร้านอาหารอื่น แต่ด้วยความตั้งใจของคุณแป๋วที่ตั้งใจทำมันออกมาให้ดีที่สุด ร้านหัวปลาช่องนนทรี จึงประสบความสำเร็จได้อย่างที่เห็นทุกวันนี้
ถ้าวันนี้เราอยากเริ่มกิจการอะไรสักอย่าง แล้วไม่มั่นใจว่าจะเริ่มจากศูนย์ได้หรือไม่

[HOW WOULD YOU ESCAPE NORTH KOREA? (THE 7 CHOICES)]
If you were living in North Korea right now - trying to survive on a diet of rats, grass, soil and tree bark, quenching your thirst by drinking out of mud puddles in the ground - what would you do?
There's also the conceivable chance of being sent to a political prison camp for years on end just because you innocently thought out loud one day to a bunch of friends (North Korean propaganda is strong), where you are then beaten, tortured, and left so hungry that you are forced to dig and consume the grains out of faeces, or the maggots from dead bodies just so you have the energy to perhaps last one more day.
You'd probably wanna escape. But how?
The North Korean government in Pyongyang refuses to let its citizens leave, a clear violation of the International Covenant on Civil and Political Rights, viewing North Korean defectors as traitorous criminals. Captured North Koreans would be subject to unimaginable torture and often public executions.
If they are successful in their escape, then three to four generations of their family back home would be sent to North Korean prison camps to rot ....or worse. This is a strong deterrent.
But this still doesn't stop desperate North Koreans from tempting fate. In this video, I'll go over the seven ways to escape the DPRK, including the most dangerous, the most unforgiving, the most unique, and the most unexpected.
The North Korean border on the south side (ie. South Korean border / Korean DMZ) is the shortest distance to travel for safety and stability but as a result, the regime makes it dangerously hard. A North Korean escapee can be shot down by North Korean soldiers (border guards) or step on the many landmines in the area.
The northern border to China has it's own set of challenges. Most North Korean refugees escape through this way, usually crossing the Tumen River border (like the famous North Korean defector Hyeonseo Lee). Once in China, the nightmare doesn't end there.
There are also other, more unconventional ways you can try to escape such as through North Korean labor camps.
Even if you make it to safety and resettle in a stable country, the North Korean regime will still try to hunt you down, so you're never truly safe. Especially if you're an outspoken critic or a threat to Kim Jong-un's power - just ask his half brother, Kim Jong-nam.

I focus on making videos about my friends and Vietnamese people all over the world and my life. Use logic and make your own decision based off of how many great videos, all the people i've helped, , and inspired to visit their motherland through videos I've produced and the hundreds of good people I've featured on my channel and not some false accusations.
When people are jealous of you, they can find a million reasons to hate on you from a single word to your years of work. Don't be fooled by slander, lies, and exaggerations about Kyle Le and Yevato from people with agendas to grow their own channel. The depth, quality, and quantity of our current videos should paint a picture of who we are, not rumors and attempted hit pieces from people who never met us or don't even know us personally. It's easy to hate when you don't understand the whole picture and use only your own narrow bitterness and resentment of people better than you because they worked harder to make more and better content than you.

I graduated with a degree in history and moved to Vietnam to teach high-school history because I've always had a passion to teach, wanted to explore the motherland, and to share a global language to my people. I only had 1,000 dollars and a ton of student debt to my name when I moved over right after graduating university. Fortunately, I met my friend and room mate John of many years who first allowed me to stay in his kitchen for three months. When I worked more I was able to afford my own place (with other roommates) After a year I was ready to go home, but then I met Yevato OldBoy who gave me an opportunity to work more. Then, I started working 14-15 hour days 6-7 days a week- sometimes going without a day off for months. (Videos were filmed during holidays and vacations and released months later. I grinded hard for years to have a better life for myself and kept making YouTube videos to share my experiences. When more opportunities came through YT, I decided to lessen my teaching load to focus more on videos. Everything I do is for YouTube. From shoes to walk to film, to new cameras to make better videos, to investing in a quiet and safe place to live to edit videos. If you think around 1500USD (earnings vary every month depending on ad views) is enough for Vietnam, you're not wrong, but it's not enough to produce content from all over VN and Asia. And not enough for a stable life . Traveling is expensive, Travel for videos is even more expensive. Videos do not make themselves. This is why there has never been another YouTube channel as in-depth as this one about Vietnam and Viet Kieu featuring Vietnamese people from all over the world. This is a business and I'm investing myself and my money into it. I have nice things because I worked for them. Also, Patreon has been helpful to the growth and quality of videos. More money = more travel = more videos.
Many years ago my mechanic hit a young girl who ran out into the streets. It was not his fault nor was it my fault. I was saving up money to buy a better bike for myself and I was upset that I had to pay almost 1000 dollars for something I had nothing to do with. I still paid even though I was worried about getting scammed. There was no cover up. I blogged about it. If I wanted to hide it, why would I publicly post it? I also blogged about helping them and paying for her medical bills just a few posts later and why wasn't that mentioned in the hit piece against me?
I was a very angry and bitter person when I was younger. I always looked at the world as if it was against me. My jokes and satire were immature and at times distasteful. But I evolved and grew up and spending more time with OldBoy and his family allowed me to become a more positive person. It improved my videos, my networking, and my life. The 22-25 year old me is not the 27 year old me. Actions, words, jokes, comments in the past don't reflect the current me or my views on Vietnamese people or Vietnamese women. That video was taken down quickly after it was uploaded because I realized my immaturity. It is no longer online or on my channel Again, my early views and ignorance new to Vietnam do not reflect who I am today.
