This savoury, sour soup tastes great with the tender duck meat. The salty flavours from the preserved mustard greens are imparted to the duck during the cooking process. While sour plums and tomatoes give the soup a tangy kick. We also added ginger to mask the gamey flavours of duck meat.

蒜蓉豉汁蒸白鱔
材料:
白鱔1斤
蒜頭2粒
豆豉1湯匙
酸梅4粒
辣椒仔3隻
處理:
1. 白鱔,除去內臟,切開一舊舊。清水洗乾淨,擎乾水。
2. 蒜頭,拍鬆,切去頂部,去皮。
3. 辣椒仔,打直切開,去籽,洗乾淨。
4. 豆豉,沖洗乾淨,拍鬆,切碎,放入大碗中。
5. 酸梅,放入大碗中。
6. 蒜頭,拍鬆,刴碎,放入大碗中。
7. 在大碗內,加入調味料:
a. 鮑魚汁1茶匙
b. 糖1茶匙
c. 生粉1茶匙
d. 油1茶匙
8. 壓爛酸梅,攪勻調味料。
9. 放鱔入調味料,撈勻,放碟上。
10. 如果喜歡辣的話,加入辣椒粒。
烹調:
1. 大火煲滾1鑊水。
2. 放鱔落鑊。
3. 大火蒸8分鐘。
4. 蒸好,完成,可享用。

Ingredients:
Eel 1 catty
Garlics 2 Nos.
Preserved beans 1 tbsp
Sour plums 4 Nos.
Chili 3 Nos.
Preparation:
1. Eel, remove its intestines, cut into pieces. Rinse with tap water. Hang dry.
2. Garlics, beat well, cut one end in brown color, get it peeled.
3. Chili, cut vertically, remove seeds, rinse thoroughly.
4. Preserved beans, rinse thoroughly, beat and chop well. Put into a big bowl.
5. Sour plums, put in the big bowl.
6. Garlic, beat and chop well. Put in the big bowl.
7. Put seasoning in the big bowl:
a. Abalone sauce 1 tsp
b. Sugar 1 tsp
c. Tapioca starch 1 tsp
d. Oil 1 tsp
8. Squash the sour plums, mix with seasoning well.
9. Put eel into seasoning, mix well. Put on plate.
10. If you like spiciness, put chili cubes.
Steps:
1. Heat up a wok of water at high flame.
2. Put eel in wok.
3. Steam at high flame for 8 minutes.
4. Steam well. Complete. Serve.

酸梅麪豉炆豬手
材料:
急凍豬手粒3磅
酸梅2粒
麪豉2湯匙
冰糖6粒
辣椒仔2隻
處理:
1. 大火煲滾1鑊水,放豬手粒出水及解凍。
2. 加入紹興酒3湯匙,去除豬腥味。
3. 預備醬汁:
a. 鮑魚汁1湯匙
b. 蠔油2湯匙
c. 生抽1湯匙
d. 老抽1茶匙
4. 豬手已完全滾起,轉慢火,煲5分鐘。
5. 豬手已出水,倒去水分,逐件清水洗乾淨,擎乾水。
烹調:
1. 大火燒熱鑊。
2. 即時放豬手,白鑊烘走豬腥味。
3. 豬手有少許燒焦,轉慢火,加入調味料:
a. 冰糖(已洗淨)
b. 辣椒仔2隻
c. 酸梅2粒
d. 麪豉2湯匙
加入醬汁。
4. 轉大火,加入滾水,蓋過豬手面。
5. 豬手已滾起,轉中慢火,炆35分鐘。
6. 豬手已炆了35分鐘,用筷子試一試,可否戮穿豬手。如果可以,就可以上碟。如果不可以,要再炆多10分鐘左右。
7. 完成,上碟,可享用。
Braised pork knuckles with sour plums and soy bean sauce
Ingredients:
Frozen pork knuckles cubes 3 lbs
Sour plums 2 Nos.
Fermented soy bean 2 tbsp
Rock sugar 6 Nos.
Chili 2 Nos.
Preparation:
1. Heat up a wok of water at high flame. Soak the pork knuckles to defrost.
2. Put Shaoxing wine 3 tbsp to remove the unpleasant smells and tastes of the pork.
3. Prepare the sauce:
a. Abalone sauce 1 tbsp
b. Oyster 2 tbsp
c. Light soya sauce 1 tbsp
d. Dark soya sauce 1 tsp
4. Pork knuckles have been totally boiled up. Turn to low flame, boil for 5 minutes.
5. Pork knuckles have been soaked well. Pour away water. Rinse them one by one. Hang dry.
Steps:
1. Heat up the wok at high flame.
2. Put knuckles immediately. Fry them in plain wok to remove the unpleasant smells of the pork.
3. Pork has been a little bit burnt, turn to low flame. Put seasoning:
a. Rock sugar (rinsed)
b. Chili 2 Nos.
c. Sour plums 2 Nos.
d. Fermented soy bean 2 tbsp
Put the sauce.
4. Turn to high flame, add boiled~up water just cover up the knuckles.
5. Knuckles have been boiled up. Turn to medium~low flame, braise for 35 minutes.
6. Knuckles have been braised for 35 minutes. Use a pair of chopsticks see if they can be pinched through by the chopsticks. If they can, knuckles can be served. Otherwise, braise for 10 minutes more.
7. Complete. Put on plate. Serve.
