普段 皆さんが食べるサーモンは、ノルウエーのアトランティックサーモンが多いと思われます。
アトランティックサーモンが日本に来て、消費者の口に入るまでに最低でも5日、宮崎県になると1週間以上も経っています。
サーモンはトロけるとか言いますが、これは熟成されて、繊維が崩れて柔らかくなったものです。
このアトランティックサーモンも綺麗な処理がされていますが、血はまだ残っています。
で、西米良サーモンでは世界初の血抜きをやってみました。
この西米良サーモンを一週間寝かせてみたいとおもいます。
サーモンの新しい物も、カンパチなどと同じでコリコリして、歯ごたえだけなんです。
やはり旨味は最低3日は寝かせないと出ないと思います。
動画の最初にナイロン袋に入れてますが、大型の魚はこのような袋に入れた方が安全です。
暴れてまな板やその周りを汚す事もありません。
神経絞めのシーンで、神経細長いを突っ込んだ時、糸状の白い物が出て来ましたが、これが脊髄の神経です。
これを普段は神経突き棒で押し潰して完全に麻痺させるのを【神経絞め】と言います。
今回はたまたま抜けてくれました。
