Hi guys! Sorry I haven’t written anything for so long. I’ve been on my Easter holidays and for the 3 weeks, I decided to detox from my laptop, which is why you haven’t heard from me for so long. I got inspired by the letter our Chief Master sent out to us, where she told us all her plans for the 3 weeks, including learning to make her own ice cream and experimenting with cooking out of her comfort zone - fun!
So aside from helping Mrs Mom and Mr Dad with our homeschool, I’ve decided to give Fatimah and Ali some French lessons too, so their normal routine is livened up by something they wouldn’t normally learn. I myself have taken on some new languages to keep myself busy - Swedish and Irish Gaelic. Well, more Swedish than Irish Gaelic, to be honest!
Plus, since we are in lockdown, I thought it would be a good idea to bring some of the outside into the house! So that’s why I’ve been keeping myself occupied with the makeshift indoor garden I’ve cobbled together in the living room! Even my friend has been inspired to start his own indoor garden in his bedroom! So far, he’s got a cactus and a sunflower to take care of. It’s actually quite relaxing and fun to take care of all of them - plus, it compensates for the fresh air we’re not getting coz we get fresh air from the plants too! Other than that, I’ve been working on some more writing projects of my own too…
Many of you have wanted to find out more about my distance learning experience. Well, like I said, I have been on my Easter holidays these past three weeks. As much as we all enjoy an extended holiday, me and my classmates have all been eager for the start of term. We’ve all been missing each other, and we’ve been looking forward for school to start again. But since term officially starts tomorrow, we’ll be able to talk to each other again (online, of course).
And plus, I’ll be able to share more about my online learning journey! So starting from tomorrow, I’ll be back in the routine of having live school lessons and working together with my friends - all from the comfort of my own home, Alhamdulillah! Stay tuned for more posts from me, coz I’ll definitely be updating more about my online learning experience for the students, teachers and everyone else who are curious to know more about my e-learning journey.

■Baskin Robbins 31 Ice Cream & Easter Egg Surprise

材料ingredient（可以做20個小的圓形馬卡龍 make 20 small macarons）：
Almond Meal 杏仁粉： 2 oz=57g
Powder Sugar 糖粉： 3.5 oz=100g
Egg White 蛋白：2 oz=57g
Sugar 糖： 1.75 oz=50g
Filling 餡料：mascarpone cheese
Tips:
1. 請選用磨細的杏仁粉，如果你買來的杏仁粉顆粒很大，那就需要用料理機把它打細再使用，用料理機打細的時候，要把杏仁粉和糖粉一起打，避免杏仁粉在攪打的時候出油。
2. 杏仁粉和糖粉一定要過篩，過篩的網不用選兩層或者三層那種很密的，用普通的一層的網就可以了。
3. 塔塔粉是酸性的，可以幫助蛋白打發，使蛋白更膨和加強韌性，這樣蛋白會更穩定。如果沒有也可以省略不加。
4. 蛋白是打到硬性發泡，也就是視頻裡面看到豎起來是有一個直立尖尖的角，我覺得打到豎起來10點到11點鐘是最好的。
5. 色素請選用Gel paste的那種比較濃稠的狀態的食用色素或者粉狀的色粉，不要用很稀的流水狀的色素，這樣比較不會影響蛋白糊的狀態。
6. 馬卡龍的成敗關鍵在面糊攪拌到最後的狀態，所以攪拌過程要有耐心，時不時把攪拌棒提起來檢查面糊滴下來的速度， 攪拌到面糊斷斷續續流下來就可以停止了，具體看視頻大圖。（寧可慢一點攪拌也不要一下子就很用力攪拌，一攪拌過頭就要重頭再來了）
7. 如果擠完馬卡龍，晾幹後仍然有尖角，可以用手沾一點水，然後輕輕的把尖角按下去。
8. 晾乾馬卡龍需要的時間，會根據你的居住地濕度，溫度有所不同。我的訣竅是把馬卡龍放在烤箱上面晾乾，這樣因為烤箱本身預熱了有熱度在，會幫助馬卡龍更快晾乾。 （我在洛杉磯，晾乾時間是15分鐘）當然如果你的烤箱有熱風的功能就更方便了，沒有熱風功能，也可以拿電吹風對著馬卡龍吹, 或者烤箱預熱到最低的溫度70C, 把馬卡龍放進去15分鐘。新加坡，馬來西亞的朋友，你們不孤單，有訂閱者反應他們需要2小時晾乾馬卡龍：）以上方法可以試試喔。
9. 烘烤馬卡龍的時間不是一定的，隨著馬卡龍的數量和大小也會不同。如果你的馬卡龍尺寸比較大，或者你一次做的比較多，相應的烘烤時間就要延長了。有的時候你的烤箱溫度不一定會准確，可以買一個烤箱溫度計放在裏面查看你的烤箱溫度。
對於想要烤白色的馬卡龍，怕顏色烤黃的朋友，我的建議是：烤箱140C, 馬卡龍放在最下層烤10分鐘, 降溫到130C, 把馬卡龍的烤盤轉180度烤7分鐘。這個時候測試馬卡龍是否烤熟，用手指輕輕敲馬卡龍的正中央，如果還是有點濕軟， 再把烤箱降溫到120C, 烤5分鐘。高溫是為了保證馬卡龍能穩定的長高以防空心，低溫是為了保證馬卡龍內部烤熟。
10. 剛烤完的馬卡龍是像餅幹一樣比較脆的，夾餡完吸收餡料的濕度才會變軟。如果不急著吃，也可以把馬卡龍放到密封的盒子裏放在冰箱裏保存，到想吃的時候再拿出來組裝夾餡。
11. 視頻裏的餡料是馬斯卡彭乳酪，我是完全沒有加糖，直接把乳酪當夾心，因爲馬卡龍本身就有一定的甜度了，對于我來說剛剛好。如果你喜歡吃很甜的話，也可以拌一些糖粉到乳酪裏攪拌均勻當做夾心。
12. 第一次做可以把份量減少，先試試手感，視頻內做的馬卡龍是比較小的圓形，大概20個。
补充一下晾乾馬卡龍的辅助方法：
1. 手持吹風機，保持吹風機離馬卡龍30cm左右，均勻的吹，不要距離太近，防止馬卡龍麵糊被吹歪哦。同理，也可以空調冷氣吹馬卡龍的表面，保持一定距離，用冷氣去晾乾，記得吹的時候調整180方向，讓馬卡龍360都有晾乾到。
2. 烤箱有熱風功能的話，打開熱風功能，可以調試溫度的話，選擇30度，吹熱風可以加快晾乾馬卡龍。吹5分鐘左右就可以檢查下了，用手碰馬卡龍的表面不粘手就可以烤了。
3. 沒有熱風的話，烤箱有上下火功能的，可以打開上火，溫度選擇40度，講馬卡龍放進去晾乾，利用上火的熱度把馬卡龍皮晾乾。
4. 如果不能選擇低於50度的烤箱，那麼烤箱預熱100度，然後關火，把馬卡龍放進去，不要關烤箱的門，保持半開的狀態，用烤箱的餘溫晾乾馬卡龍。大概五分鐘檢查一次是否不粘手了。

People asked me how to make chocolate flavored cookies using cocoa powder, so here is the recipe :)
I used no egg for the icing as well!

iPhone :-9 Chocolate Cookies
Difficulty: Super Easy
Time: 1 hr + a few days to dry out the icing
Number of servings: 3 phones
Ingredients:
((Chocolate Cookies))
50g (1.8oz.) butter *softened
100g (3.5oz.) cake flour *all purpose flour is okay
30g (1.0oz.) powdered sugar (confectioner's sugar)
1 tbsp. cocoa powder
((Glacé Icing))
powdered sugar (confectioner's sugar)
warm water with vanilla extract or fresh lemon juice
Wilton 12 Icing Colors Set
Directions:
((Chocolate Cookies))
1. Put all ingredients in a large Ziploc bag (make sure it is zipped). Then mix well. Roll out the dough in the Ziploc bag to 5mm (0.2 inch) thick. Refrigerate the dough for at least 1 hour to set and chill.
2. Preheat the oven to 170C (338F). Cut out the dough with iCookie Cutter. Place the cookies on a cookie sheet lined with parchment paper. Roll out scraps, and repeat.
3. Bake at 170C (338F) for 15 minutes. Cool the cookies on the cookie sheet or wire rack.
((Glacé Icing))
1. Put powdered sugar in a bowl. Add warm water with vanilla extract little by little, and stir together until smooth. If icing is too soggy, add more powdered sugar.
2. Divide it into small bowls, and add food colorings to each. Paint them with a brush or bamboo skewers.
3. Dry out the icing (it might take a day or more if you live in a hot and humid country like japan) then apply the next color on top.
