Cheers! Our movie ‘Babi’ has been shortlisted by the Around International Film Festival and Thai Film Festival! Kop kun krap!🙏🙏🙏

To be frank, I have completed 2 films last year, one was ‘Nasi Lemak 1.0’ which was filmed above board and another film was ‘BABI’ which was filmed secretly. We never talked openly about this project because it is a banned film (Well, it’s pretty obvious even from the film title…) and we don’t want to get into unnecessary attention…

Due to the COVID-19 pandemic, the release date of ‘Nasi Lemak 1.0’ has been delayed indefinitely and it has caused quite a big deal to us… While we were amidst of the dark clouds, we found our silver linings! ‘BABI’ was selected in 2 internationally famed film festivals, the ARFF Berlin (Around International Film Festival Berlin) and the International Thai Film Festival! We were really really happy about it!

‘BABI’ is a film based on a real-life event, the movie sheds light on a massive school racial riot which took place in year 2000 in a small town somewhere Southern in Malaysia. During that time Malaysia was still under the authoritarian rule of one-dominant party, abuse of power and corruption were frequent, media and news were being stringently controlled and filtered. Thus, the incident was being ‘compromised’ by relevant authority, most of Malaysians doesn’t know about this incident.

The script was actually written 7 years ago, the main reason that the film was not in production that time was because nobody would ever consider to invest on a zero-profit, must-be banned film. The second reason was I had no idea whom should I ask for help, I believed after hearing the film title, everyone would be scared off... Yet in the end, I’m still managed to finish this film with a very very very tight budget. I want to thank all the people who have contributed greatly to the movie, especially the producer Joko Toh

We decided to put the 7-year-old script in production is to tell the truth behind the story but most importantly sending a message to all Malaysians that we must be more unified disregard of our ethnicity and race. In short, we shall always lend a helping hand to each others and communicate with our hearts and souls, therefore we won’t be exploited by politicians who incite racial sentiment to reach their end goal. Otherwise, more tragic like this will happens…

The idea of be able to screen this film in Malaysia has never crossed my mind before, that’s why we never tried to register the film after the production. Rightly next, I hope that this film can be seen elsewhere other than at Thailand’s or Germany’s film festival, I wish there are better methods in exposing the film and to reach out to everyone. Currently, we are still on our lofty quest but please do cheer for us! Happy Merdeka Day in advance! Malaysia Boleh!

Sebenarnya pada tahun lepas kami telahpun menghasilkan dua buah filem. Yang pertama adalah filem [Nasi Lemak 1.0] yang penggambarannya dijalankan dengan berani dan terang, satu lagi adalah filem [BABI] dimana proses penggambaran dijalankan dalam keadaan yang sulit dan rahsia. Kami tidak pernah membuat apa-apa pengumuman mengenai perkara ini, kerana khuathir filem ini akan menimbulkan kontroversi (lihat sajalah nama filemnya...) Kami tidak mahu memburukkan keadaan.

Disebabkan isu pandemik Covid-19, filem [Nasi Lemak 1.0] tidak dapat ditayangkan di pawagam dan telah membawa kerugian yang teruk pada kami. Walaubagaimanapun kami menerima berita baik berkenaan pemilihan filem [BABI] dalam dua festival filem antarabangsa yang berprestij iaitu ARFF Berlin (Around International Film Festival Berlin) serta International Thai Film Festival! Kami berasa amat gembira!

Filem [BABI] adalah lakonan semula sebuah rusuhan perkauman yang berlaku di sebuah sekolah menengah yang terletak di bahagian selatan Malaysia pada tahun 2000. Pada ketika itu Malaysia masih berada di bawah kepemimpinan parti yang dominan. Pemimpin-pemimpin menyalahgunakan kuasa dan pihak media dikawal sepenuhnya oleh kerajaan. Oleh yang demikian, tragedi ini akhirnya telah 'diselesaikan' oleh pihak tertentu dan rakyat Malaysia telah 'disekat' dari peristiwa tersebut.

Skrip asal untuk filem [BABI] telah saya tulis sejak 7 tahun yang lalu. Namun antara sebab utama saya tidak dapat menghasilkan filem ini adalah kerana isu modal, kerana tiada yang sudi mengeluarkan modal untuk sebuah filem yang mungkin akan diharamkan dan tidak akan ditayangkan di pawagam. Sebab kedua adalah kerana saya tidak tahu siapa yang akan sudi menghasilkan filem ini bersama saya kerana saya pasti, hanya dengan mendengar namanya saja sudah tentu tiada yang akan ingin mengambil bahagian. Namun dengan segala daya usaha dari semua pihak yang sudi membantu dan menerusi modal yang teramat-amat rendah, kami akhirnya berjaya menghabiskan filem ini. Saya dengan ikhlas ingin berterima kasih pada semua krew, petugas, pelakon dan kakitangan belakang tabir yang terlibat dalam menjayakan filem ini, terutamanya penerbit Joko Toh

Tujuan utama kami merealisasikan skrip yang ditulis sejak 7 tahun yang lalu adalah untuk membongkar perkara sebenar seluruh peristiwa ini. Juga menerusi filem ini, kami ingin menyampaikan mesej betapa pentingnya perpaduan dan keharmonian diantara kaum supaya dielak dari dipergunakan oleh ahli politik demi untuk mencapai matlamat dan motif masing-masing. Jika tidak, kami percaya pasti pasti lebih banyak tragedi ngeri bakal berlalu...

Tak pernah terlintas dalam fikiran kami untuk menayangkan filem ini di Malaysia. Oleh yang demikian, kami tak pernah mohon dari mana-mana pihak berkenaan permohonan penayangan. Kami berharap selepas ini, filem ini bukan saja akan ditayangkan di festival filem Berlin dan Thailand, kami mahu supaya filem [BABI] dapat ditonton oleh lebih ramai penonton di seluruh dunia. Kami akan tetap berusaha, silalah berdoa dan sokong usaha kami! Selamat Hari Kemerdekaan untuk Malaysia! Malaysia Boleh!

其實去年我在馬來西亞完成了兩部電影拍攝，一部是光明正大在拍的叫【辣死你媽-續集】，而另一部電影則是秘密進行的，叫【BABI/你是豬】。這件事情從頭到尾我們都沒有公開過，因為這是一部禁片（看戲名就知道了），我們不想節外生枝...

【辣死你媽-續集】因為疫情的緣故沒辦法上映，造成了嚴重的虧損... 當我們在愁雲慘霧之際，卻收到了天大的好消息! 就是【BABI/你是豬】入圍了國際上著名的兩大影展 【ARFF環球國際電影節(柏林)】和【泰國國際電影節】! 真的很開心!

【BABI/你是豬】真人真事改編自一起大型校園種族暴動事件，發生在2000年馬來西亞南方小鎮的一所學校裡。當時的馬來西亞處在一黨獨大，濫權腐敗，媒體被嚴格控管及消息封鎖的階段。因此這起事件在當時已被相關單位“和諧”，在馬來西亞幾乎沒有人知道。

其實這是我七年前寫的劇本，我沒拍出來的第一個原因，當然是因為沒有人會願意把錢丟進一部即將被禁，賺不回本的電影裡。第二個原因則是我當時不知道要找誰幫我拍，相信聽到這個戲名，大家應該都怕了吧... 但最後我還是以很低很低成本的方式，拜託了很多人幫忙，才完成了這部電影。真的要謝謝參與電影拍攝的每一個台前幕後的人，尤其監製 Joko Toh。

我們決定要把這部七年前的劇本拍出來的目的，就是要揭露整起暴動事件的真相，也要藉此電影提醒馬來西亞人，種族之間必須更團結，互助，交流，才不會一直被政治人物利用，以操弄種族情緒而達到政治目的。否則將會發生更多類似的悲劇...

我從來都沒有想過這部電影能夠在馬來西亞上映，所以我們拍完了之後從來都沒有拿去申請過。接下來，希望這部電影不止在泰國和德國的影展能看到，期待以後能夠以更光明正大的方式讓所有人都能看到。我們還在努力中，請為我們加油吧！預祝馬來西亞獨立日快樂! Malaysia Boleh!

เอาจริง ๆ เรื่องนี้ก็ไม่เกี่ยวอะไรกับแอดตรง ๆ หรอก
เพราะว่ามันเกี่ยวกับ Youtube

แต่การเปลี่ยนแปลงใน Youtube ครั้งนี้จะส่งผลกระทบต่อ Caster หลายคนในบ้านเรา
แต่ก็ยังไม่มีการพูดถึงกันนัก
.
วันนี้จะพูดถึงเรื่องการเปลี่ยนแปลงที่จะทำให้ Creator ส่วนใหญ่ในบ้านเราเสียรายได้ไป 90 %
(ข้อมูลอาจไม่สมบูรณ์ถูกต้อง 100% เพราะแอดไม่ได้เรียนกฏหมาย ใครสนใจก็สามารถศึกษาข้อมูลและมาพูดคุยกันได้)

เรื่องมันเริ่มตั้งแต่ปี 1998
FTC หน่วยงานหลักที่บริหารควบคุมกิจกรรมต่างๆในพาณิชย์อิเลคโทรนิกส์
ที่มีหน้าที่หลักในการปกป้องผู้บริโภคใน สหรัฐอเมริกา
ได้ออกกฏหมายใหม่ชื่อย่อว่า COPPA
(The Children's Online Privacy Protection)
ซึ่งเป็นกฏหมายที่ปกป้องข้อมูลส่วนตัวของเด็กอายุต่ำกว่า 13 ปี
.
จุดประสงค์ของ COPPA คือป้องกันไม่ให้เด็กอายุต่ำกว่า 13 ปีเอาข้อมูลส่วนตัวต่าง ๆ เช่น ชื่อ ที่อยู่ เบอร์โทรศัพท์ ไปให้กับเว็บไซต์ต่าง ๆ โดยผู้ปกครองไม่ยินยอม
เพราะกลัวว่าข้อมูลเหล่านั้นจะถูกใช้ในทางผิดกฏหมาย

แต่ผ่านไป 15 ปี ในปี 2013
FTC เล็งเห็นว่าภัยที่แท้จริงไม่ใช่การที่เด็กจะเอาข้อมูลไปบอกเว็บต่าง ๆ หรอก
แต่เป็น Cookies ข้อมูลที่อยู่บนคอมพิวเตอร์/มือถือเรา
ที่มีข้อมูลส่วนตัวต่าง ๆ ทั้งที่อยู่ เบอร์โทร
ซึ่งเว็บไซต์ต่างมักเก็บข้อมูลจาก Cookies เราแล้วนำไปขาย ให้กับคนที่ลงโฆษณาออนไลน์ เพื่อที่จะสามารถแสดงโฆษณาได้ตรงกับที่แต่ละคนสนใจ
.
ซึ่งเว็บต่าง ๆ รวมทั้ง Youtube เองก็เก็บ Cookies และที่ FTC เล็งเห็นเว็บไซต์ต่าง ๆ เก็บ Cookies ที่สร้างโดยเด็กอายุต่ำกว่า 13 ปี จึงแก้กฏหมาย COPPA

โดยให้ รวม Cookies เป็นข้อมูลส่วนตัวที่ไม่สามารถเก็บได้หากถูกสร้างโดยเด็กที่มีอายุต่ำกว่า 13 ปี
ซึ่งหลาย ๆ เว็บก็ปรับตัวตามและเลิกเก็บ Cookies
แต่ว่า Youtube ไม่ปรับตามกฏแล้วอ้างว่า Youtube เป็นสื่อสำหรับคนที่อายุมากกว่า 13 ปีนะ ไม่ได้มีเด็กเป็นกลุ่มเป้าหมายหลัก

ซึ่ง FTC ก็เชื่อและปล่อย Youtube ไป

แต่ก็อย่างที่เรารู้กัน Youtube มันเก็บข้อมูลทุกอย่างจริง ๆ เพื่อเอาไปขายให้กับคนอยากยิงโฆษณา และ เอาโฆษณาลงตามคลิปกันเพียบเลย

โฆษณาที่มีเป้าหมายเฉพาะบุคคลนั้น ๆ เรียก Personalize Ads เป็นการเอาข้อมูลจากเราแต่ละคนไปดูว่าสนใจอะไรอยู่แล้วก็ยิงโฆษณาที่เราน่าจะสนใจมาให้เรา

Personalize Ads เนี่ยสามารถทำให้ลูกค้าซื้อสินค้าได้มากกว่าการโฆษณาแบบยิงสุ่ม ๆ ให้ทุกคนเห็น
มันจึงเป็นแหล่งเงินชั้นดีของ Youtube ซึ่ง Youtube ก็ได้แบ่งรายได้ส่วนนั้นให้กับ Creator Youtuber แคสเตอร์ต่าง ๆ เพื่อให้คนเหล่านี้ทำวีดีโอลงให้คนมาดูอีกเยอะ ๆ

แต่ในช่วงปีนี้ Youtube ก็เปลี่ยนนโยบายเรื่องความหยาบคาย
คือถ้าคลิปมีเนื้อหาผู้ใหญ่ เช่นเนื้อหาทางเพศ คำหยาบ การใช้คำรุนแรง มุข 18+ จะทำให้ไม่สามารถหารายได้จากคลิปนั้นได้

การเปลี่ยนนโยบายนี้สร้างความเปลี่ยนแปลงอย่างมาก เพราะมันทำให้ Youtuber ต่าง ๆ หันมาสร้างเนื้อหาที่สามารถให้เด็กดูได้เป็นหลักแทน ก็เพราะมันทำเงินได้

เนื้อหาที่เป้าหมายเป็นเด็กกลายเป็นเนื้อหาที่หารายได้มากที่สุดใน Youtube
ลองไปกดมาแรง หมวดเกมบน Youtube สิ
เกือบทั้งหมดเป็นเกมที่เด็ก ๆ ชอบเล่นทั้งนั้น Roblox Minecraft เกมที่เด็ก ๆ ชอบดู เห็นได้ชัดว่าเล็งกลุ่มเป้าหมายไปที่เด็ก

Youtuber ที่ทำเงินได้มากที่สุดในโลกก็คือช่อง
Ryan ToysReview ซึ่งก็เป็นช่องรีวิวของเล่นเด็ก

เห็นได้ชัดว่าเด็กกลายเป็นกลุ่มเป้าหมายหลักของ Youtube ไป

ในปี 2019 Youtube เลยโดนฟ้องเพราะไปโกหกหน้าตายว่าเด็กไม่ใช่กลุ่มเป้าหมายหลัก
แต่เห็น ๆ กันว่าใช่ แถมยังไปเก็บ Cookies มาทำโฆษณาให้เด็กดูอีก ผิดกฏหมาย COPPA เห็น ๆ

ซึ่งขอพูดกันตรง ๆ ว่าที่ Youtube แพ้เพราะปากตัวเองแท้ ๆ เลย ทั้ง ๆ ที่ในเงื่อนไขการใช้งาน Youtube ก็เขียนบอกว่าต้องอายุ 13 ปีขึ้นไป ใช่เด็กอาจจะโกหกอายุและมาแอบดู Youtube ได้ แต่ว่านั้นก็เป็นเพราะเด็กอยากดูเอง เพราะพ่อแม่ยอมให้เด็กเล่นเอง Youtube ไม่ได้ผิด
แต่ที่ Youtube ผิดก็เพราะดันไปเที่ยวป่าวประกาศว่า Youtube เป็นเว็บที่เด็กดูมากที่สุดให้กับผู้ลงโฆษณา ทั้งที่ก่อนหน้านี้บอกว่าให้ไม่ให้เด็กต่ำกว่า 13 ดู
ดูยังไงก็แพ้คดีแน่นอน

Youtube จึงโดนปรับเงิน 170,000,000 $ พร้อมกับทำข้อตกลงกับ FTC ในการจัดการกับเนื้อบน Youtube ในช่วงเดือนกันยายนที่ผ่านมา
ซึ่งบอกเลยว่าแย่มาก ๆ เพราะมันจะทำให้ Creator ขาดรายไปจนถึงช่องบินได้เลย

ตอนนี้ Youtube มีการตั้งค่าใหม่ให้กับผู้สร้างเนื้อบน Youtube ทุกคนว่า เนื้อหาของคุณเป็นเนื้อหา สำหรับเด็กหรือไม่ เพื่อปรับตามกฏหมาย COPPA โดย Youtube จะไม่เก็บข้อมูลจากคลิปคุณ และจะไม่ลงโฆษณาแบบ Personalize Ads ด้วย แปลว่าเนื้อหาคุณจะเสียรายได้ถึง 90% เลย

และถ้าคุณฝ่าฝืน หรือโกหกปรับไม่ตรงกับเนื้อหาของคุณ
เนื้อหาของคุณจะโดนลบ ช่องอาจโดนแบน และถ้าคุณอยู่สหรัฐอเมริกาคุณอาจโดนฟ้องโดย FTC และเสียค่าปรับ 40,000+ $

แล้วคุณจะรู้ได้ไงว่าเนื้อหาของคุณเข้าข่ายเนื้อหาเด็กหรือไม่
Youtube ก็ได้ให้กฏมาด้วยว่าเนื้อหาใดเข้าข่าย

ก็มีตั้งแต่แบบว่า เนื้อหาคุณมีเป้าหมายเป็นเด็กโดยตรงหรือไม่ซึ่งอันนี้คนที่รู้ดีที่สุดคือคนทำคลิป
เนื้อหาคุณมีตัวการ์ตูน Animation หรือไม่
มีของเล่น ขนมขบเคี้ยว อาหารเช้า Cereal หรือไม่
มีเด็กอยู่ในคลิปหรือไม่
มีกิจกรรมที่เด็กสนใจหรือไม่ เช่นการละเล่น วีดีโอเกม
มีภาษาวัยรุ่นที่เด็กสนใจหรือไม่
มีข้อความแสงสีดึงดูดเด็กหรือไม่
มีตัวการ์ตูนหรือคนดังที่เด็กชอบหรือไม่
และถ้าคุณไม่แน่ใจ Youtube ก็ให้คุณปรึกษานักกฏหมายเอานะจ๊ะ

ซึ่งฟังมาจากทั้งหมดแล้ว โคตรแย่
ใช่อยู่เนื้อหาสำหรับเด็กอย่างนิทานหรือการ์ตูน ต้องตีเป็นเนื้อหาเด็กอยู่แล้ว
แต่ว่าวีดีโอเกมละ
การที่คุณมีเนื้อหาเล่น วีดีโอเกม ก็สามารถถูกตีความเป็นเนื้อหาเด็กได้
เหล่าแคสเตอร์งานงอกเลย
โดยเฉพาะที่เล่น Roblox Minecraft
พี่เอกที่เล่น Planet Zoo ยังไม่รู้จะรอดมั้ย
แถมยังมีอีกหลาย ๆ ช่องที่รีวิวของเล่นต่าง ๆ
VRZO ก็มีภาษาวัยรุ่น และข้อความแสงสีไม่น้อย
ทั้ง ๆ ที่หลายช่องไม่ได้เล็งเป้าหมายหลักเป็นเด็ก แต่ถ้าตรงตามเงื่อนไขก็มีความเป็นไปได้ที่จะโดนด้วยเช่นกันจากคำนิยามด้านบน

ถ้าช่องเหล่านี้ถ้าถูกนับว่าเป็นเนื้อหาสำหรับเด็กจะถูกลดรายได้ถึง 90%!! หนักเอามาก ๆ

มิหนำซ้ำ เนื้อหาที่เป็นของเด็กยังตัด Features ไปเกือบหมด
คลิปจะไม่สามารถค้นหาได้ในช่องค้นหา
จะไม่เด้งเป็นแจ้งเตือนให้เห็น ไม่มีในช่องแนะนำด้านข้าง
ไม่สามารถแสดงความคิดเห็นได้
คือถ้าคุณอยากดูคลิปใหม่ คุณต้องกดเข้าไปใน Profile ช่องเท่านั้นอะ

หักเงินไม่พอ ยังลดคนดูอีกต่างหาก
.
และถ้าคุณไม่ยอมจำแนกว่าคลิปคุณเป็นคลิปเด็กหรือเปล่า Youtube จะใช้ Machine Learning มาจำแนกให้คุณ
ซึ่งบอกตามตรงว่าทำงานได้โคตรแย่จากประสบการณ์ที่ผ่านมา
เตรียมเจอ Happy Tree Friends และ South Park ตีเป็นเนื้อหาเด็กแน่นอน

ให้คนที่ไม่มีแม้กระทั่งโทรศัพท์มือถือ มาออกกฏหมายในยุค 2019

ไม่ Youtube บอกว่ากฏนี้มีผลใช้ทั่วโลก
แล้วเราจะทำอะไรได้บ้าง เรื่องนี้แอดไม่แน่ใจ
เพราะว่า FTC ยังเปิดรับฟังความเห็นเพื่อปรับแก้กฏหมายและข้อตกลงอยู่ แต่ไม่แน่ใจว่าเราในฐานะคนนอกสหรัฐอเมริกาจะสามารถทำอะไรได้บ้าง
แต่ถ้าสนใจก็ไปค้นหาเเพิ่มเติมได้

Youtube เป็นตัวร้ายเช่นกันในเรื่องนี้
เพราะ Youtube เป็นคนที่เก็บข้อมูลจากเด็กที่มีอายุต่ำกว่า 13 ปี
ทว่าพอตอนนี้กลับบอกว่า Youtuber ต้องมารับผิดชอบด้วยโดยตัดเงินโฆษณา ต้องบอกว่าเนื้อหาคุณเป็นเนื้อหาเด็ก และถ้าเนื้อหาคุณไม่ได้บอกว่ามีเป้าหมายเพื่อเด็ก แต่ FTC คิดว่ามันเป็น คุณก็มีโอกาสโดนฟ้อง โดนลบคลิปและปิดช่อง ทั้ง ๆ ที่สิ่งที่ Youtuber แค่ทำคลิปออกมา ซึ่งไม่ได้ผิดกฏหมาย COPPA เลย
Youtube เองต่างหากที่ผลักความรับผิดชอบในการจัดการเนื้อหามาให้ Youtuber เป็นหลัก

Youtube สามารถที่จะจัดการระบบโดยเคร่งครัดไม่ให้เด็กต่ำกว่า 13 ปี มาดูเนื้อหาบน Youtube ได้ไม่ยาก
แค่บังคับให้ทุกคนต้องมีบัญชีและต้องยืนยันว่าตนอายุ 13 ปีก็จบแล้ว

ไม่ Youtube ไม่ทำแบบนั้น
ที่จริงความผิดของ Youtube คือการเก็บข้อมูลจากเด็ก
แค่ Youtube ไม่เก็บก็จบ
ไม่เห็นจำเป็นต้อง ยกเลิกการหารายได้โดยการไม่ลงโฆษณา
ไม่จำเป็นต้องยกเลิกการแจ้งเตือน หรือทำให้คลิปถูกค้นหาไม่เจอเลย
สิ่งที่ Youtube ทำเหมือนบอกใบ้ให้พวก Creator เลิกทำเนื้อหาเด็กแบบอ้อม ๆ
ทำไมนะหรอ เพราะว่า Youtube ไม่สามารถเก็บข้อมูลเอาไปขายให้กับลูกค้าที่ลงโฆษณาได้ยังไงละ

หมายความว่าช่องเกมต่าง ๆ สามารถบอกว่าเนื้อหาเป็นสำหรับทุกเพศทุกวัย ก็สามารถที่จะหลีกเลี่ยงปัญหาทางกฏหมายได้แล้ว

แต่ Youtube กลับบีบบังคับให้คนแยกเลยว่าให้เด็กดู หรือ ไม่ให้เด็กดู ซึ่งเป็นการจำกัดเกินไป เช่น พี่เอก HRK ถึงจะเล่นเกมแต่วัยรุ่นผู้ใหญ่ก็ดูได้ เด็กหลายคนก็ชอบ แต่ถ้าทำตามกฏของ Youtube พี่เอกก็จะกลายเป็นเนื้อหาสำหรับเด็กและจะไม่แจ้งเตือน ให้ใครเห็นอีก
มันแย่นะ การเหมารวมเอาแบบนี้หมด

麵包材料
📌雞蛋2隻
📌提子麵包半個，方包3塊
📌乾提子適量
📌白砂糖70g
📌玉桂粉1/2茶匙
📌鮮奶1杯
📌牛油60g（已溶）
📌焗爐用的長盤
吉士醬材料
（建議用一半份量，除非想整多少少吉士醬另有用途。）
📌蛋黃4隻
📌鷹粟粉30 gram
📌 鮮奶390 ml
📌鮮奶100 ml
📌白砂糖35g
📌 白砂糖2湯匙
📌牛油2茶匙
麵包做法
1. 雞蛋2隻放入大碗用手動打蛋器打均，之後加入白砂糖一起再打均。再加入玉桂粉，鮮奶，牛油，打均。
2. 長盤底掃上牛油。
3. 把提子麵包，方包，乾提子，均勻地鋪滿長盤內。
4. 把已發均的蛋漿倒入長盤內。之後稍等片刻，讓麵包把蛋漿全吸索。
5. 放入焗爐，調較溫度180度，共35分鐘。
吉士醬做法
6. 倒入390 ml鮮奶在平底鑊，加入白砂糖35g，用細火慢慢煮滾至起泡。
7. 另一邊把蛋黃放入大碗內，加入2湯匙白砂糖，用手動打蛋器打均至起泡。
8. 加入鷹粟粉，再打均，再把100 ml鮮奶分2次加入，攪均。
9. 把步驟6的鮮奶離火稍為攤涼大約30秒，之後逐少逐少倒入蛋漿內，邊倒邊攪均。（不可以停止攪均動作）
10. 把步驟9已攪均的鮮奶蛋漿倒回入平底鑊，開細火，再不斷攪均直到杰身，再放入牛油熄，杰身可熄火。
11. 麵包焗好後，放自己喜歡的份量在碟上，再倒入適量已煮好的吉士醬，即成。（如麵包焗好後，吉士醬放涼後太杰身，可以加入少許鮮奶稍為煮熱，稀釋一下吉士醬。）
Bread Pudding with Custard Sauce

Ingredients:
Eggs - 2
Sugar - 70g
Cinnamon powder - ½ tsp
Milk - 1 cup
Melted butter - 60g
A bowl of mixed raisins and cranberries
Assorted breads - hand tear into small pieces
Custard Sauce ingredients: (suggest to use half portion)
Milk - 390ml
Sugar - 35g
Egg yolks - 4
Sugar - 2 tbsp
Corn flour - 30g
Milk - 100ml
Melted butter - 2 tbsp
Methods:
1. In a mixing bowl, add in 2 eggs and 70g sugar and beat until sugar has melted. Add in 1 tsp cinnamon powder, 1 cup milk, 60g melted butter and mix well. Set aside.
2. Grease a baking pan and add in bread pieces, scatter raisins and cranberries evenly over pan, and pour in batter prepared in Step 1.
3. Wait for batter to soak up by the bread pieces before baking it at 180C (356F) in the oven for about 30 minutes until golden brown.
4. To cook the custard sauce, in a cooking pot, add in 390ml milk, 35g sugar, and turn on LOW heat and cook until the sugar has melted and starting to bubble. Let it cool. Set aside.
5. In another mixing bowl, add in 4 egg yolks, 2 tbsp sugar, and beat until sugar has melted and frothy then add in 30g corn flour, and mix well. Add in 100ml milk in two portions and mix well. Slowly add in the milk batter prepared in Step 4 bit by bit and continue whisking to avoid cooking the egg yolks.
6. Pour the entire batter back to the cooking pot and cook on LOW heat until it has thickened by continuously whisking about 3 minutes and lastly add in 2tbsp of melted butter for the aroma and mix well. Set aside.
7. To serve, scoop couple of spoonful of baked bread on a serving plate. Add WARM custard sauce on top. Serve with ice cream, optional.
If the custard sauce is too thick, just mix in a bit of milk to thin it.

Goose liver - (defrost and slice into thick slices)
Pear - 1 (peeled and shredded)
White vinegar
Flour
Salt
Black pepper
Methods:
1. In a bowl, add in shredded pear and a bit of white vinegar. Set aside.
2. Coat the goose liver with a think layer of flour.
3. In a frying pan, DO NOT add oil. Turn on MEDIUM - LOW heat and add in goose livers and fry until both sides are golden brown. Transfer to a plate. Sprinkle salt and black pepper on top.
4. In the same frying pan, heat up the shredded pear and white vinegar. Transfer to a serving plate. Place a piece of fried goose liver on top. Serve.

調味料: 鹽胡椒粉五香粉
脆皮水: 白醋三湯匙，大紅淅醋二湯匙，一大湯匙麥芽糖
步驟:
1 雞捽洗乾淨，撕去肥膏，索乾水，雞身用胡椒粉，多些鹽塗勻，雞肚用鹽，胡椒粉半茶匙，五香粉大半茶匙塗勻醃20-30分鐘
2 雞頭先放滾水中淥10-20秒，手執雞頭用滾水淋雞身至雞皮轉色(不要浸)吊起
3全身塗上脆皮水(包括雞腋下)吹乾，6-8小時內重複以上步驟共三次
備註: 焗爐，氣炸鍋或燒烤爐都可以，時間約半小時
Hang-Dry Crispy Roasted Chicken

Ingredients:
Chicken - 1 whole (wash, remove excess fat, and pat VERY dry)
Marinate ingredients:
White pepper - ½ tsp
Salt - more than usual
Five spice powder - ½ tsp or more
Crispy glazing ingredients:
White vinegar - 3 tbsp
Chinese red vinegar - 2 tbsp
Maltose - 1 tbsp (for glossy crispy skin)
Methods:
1. Marinate the whole chicken with more salt than usual. Marinate only the cavity with five spice powder and white pepper. Let it stand for at least 20 to 30 minutes the most.
2. In a bowl, add in white and red vinegar, maltose, and warm up a bit in the microwave. Stir and mix well with a pastry brush. This is the crispy glazing liquid.
3. In a cooking pot, add water and bring to a boil. Add in the chicken head and neck first by grabbing the back of the chicken and cook for about 20 seconds. With a towel, cover the chicken head and hold tight with one hand over the cooking pot while pouring hot water over the chicken with a ladle with the other hand for about 20 seconds and until the skin turns light yellow.
For roasted duck, add peppercorn, star anise, bay leaf, and sugar to marinate and use the same method as above.
4. Hang the whole chicken for 6 – 8 hours. Place a tray underneath the chicken to collect the drippings. Brush a layer of the crispy glazing liquid over the entire chicken including corners of wings. Repeat this glazing process 3 times during the 6 – 8 hours of dry hanging the chicken.
5. Air fry or bake in the oven for first 20 minutes at 200C (392F) for it to brown then reduce heat and bake for further 10 minutes until cooked.

📌切達芝士 (cheddar cheese)
📌莫扎里拉芝士(mozzarella cheese)
📌蒜頭及乾蔥各一個🧄
📌麵粉
📌牛油
📌欖油
📌牛奶一杯
📌水
調味料：
📌鹽、蒜鹽
📌黑胡椒粉
📌雞粉或菇粉
做法：
1.煮之前先將雞胸浸在加了少許鹽的水中1 小時 (會令它煮後不會鞋)
2.在雞胸中間開一個洞做成一個好似口袋/荷包狀(pocket) *注意不要介斷或介得太深* 萬一荷包的開口介得太大; 可用牙籤連結補救*
3.用鹽或蒜鹽、少許胡椒粉淹雞胸. 因為是雪雞關係所以要放少許雞粉；或可用茹粉
4. 將牛油紙(用錫紙更好)搾一搾再塞入雞胸的荷包內幫助定型，待用
5.白蘑菇原個先放些麵粉炒一炒. 平均分放在盆的底部再加一匙多小小的麵粉撈勻, 另加些黑胡椒，蒜鹽及牛油分小塊平均放在菇面待用
6.用鑊中，加入欖油和牛油先煎雞胸，將雞胸放下定了荷包的型，然後放在盛了蘑菇的盆面上，待用
7.用同一隻煎完雞胸的鑊和油，加入切碎的乾葱及蒜頭各一粒炒香, 加入切碎的蘑菇, 然後再加二小匙麵粉炒幾下，另加入牛奶和少許水再炒熱，倒入荷包和盆內
8.焗之前在盆面放些碎的切達及莫扎里拉芝士（cheddar and mozzarella cheese）
9.將盆放入氣炸煱或焗爐用180度焗10分鐘後，拿出來再放多些芝士再焗5-8分鐘，再焗的時間視乎蘑菇有沒有排出水份
Baked Cheese Mushroom Stuffed Chicken Breast

Ingredients:
Chicken breast - 3 pieces (soaked overnight in salt water for tenderness, pat dry and slit a deep hole on the side to create a pocket)
Button mushrooms
Shallot - 1 clove (minced)
Garlic - 1 clove (minced)
Flour
Milk
Marinate ingredients:
White pepper - to taste
Garlic-salt - to taste
Chicken bouillon powder - a pinch (for more flavor for previously frozen poultry)
Black pepper - to taste
Topping ingredients:
Cheddar cheese
Mozzarella cheese
Methods:
1. Marinate chicken breasts with white pepper, garlic-salt, chicken bouillon powder and stuff a piece of parchment paper or aluminum foil paper in the pocket to mould the shape of each of the chicken breasts. Set aside.
2. In a baking pan, add in button mushrooms, flour to coat and mix well, and add in white pepper, garlic-salt, and black pepper to taste. Spread butter pieces on top. Set aside.
3. In a frying pan, add in olive oil, butter, chicken breast with the pocket side down including the parchment paper inside and fry briefly until the shape is formed and lightly fry on all sides then remove the parchment paper. Transfer to a plate and set aside.
4. In the same frying pan with leftover flavor, add in minced shallot and garlic, flour, milk, and cook until well incorporated. Set aside.
5. To assemble, stuff the chicken breast with some button mushrooms and place it on top of the baking pan in Step 2. Pour shallot and garlic sauce inside the pocket of the chicken breast and over the pan. Sprinkle cheese toppings on top.
6. Air fry for 12 minutes at 180C then add more cheese toppings on top and air fry for another minute or longer depending on the moisture from the mushrooms.
