จ๋าเป็นคนไม่ชอบกินซุปแครอทเลย เพราะรู้สึกว่ารสชาติมันหวานแบนๆ จนจ๋าได้กินซุปแครอทที่ร้าน Kings Road Cafe บนถนน Beverly ในแอลเอค่ะ เค้าทำเป็น Carrot Ginger Soup แล้วจ๋ารู้สึกว่าเฮ้ย!!! รสชาติมันมีมิติมาก ก็เลยชอบจากนั้นมา จ๋าชอบกินแกงกะหรี่อินเดียและแครอทก็ดูจะไปกันได้ จ๋าก็เลยทำซุปแครอทแบบมีกลิ่นแกงกะหรี่เข้ามาด้วย มันช่วยให้แครอทไม่น่าเบื่อนะคะ
เริ่มจากแครอทที่ดีที่สุด 🥕🧅จ๋าใช้แค่หนึ่งหัวกับหัวหอมครึ่งหัวค่ะ หั่นให้ชิ้นเท่ากันเพื่อที่มันจะได้สุกพร้อมกันและเท่ากันค่ะ จ๋าใช้เนยสดกับน้ำมันมะกอกแบบจางตั้งไฟกลางๆ แล้วผัดหอมกับแครอทจนมันนุ่มแต่ไม่เปลี่ยนสี เติมเกลือ พริกป่นค่ะ ไม่ใช้พริกไทยดำเพราะไม่อยากได้เกล็ดดำในซุปนะคะ เติมน้ำสะอาดเพื่อให้ผักนุ่ม แล้วรูดใบ Thyme ลงไป ผัดต่ออีกนิดทีนี้จ๋าจะตุ๋นผักเอารสชาติละ จ๋าใส่กะทิลงไปนิดนึงค่ะให้หอมมัน ตามด้วยขิงขูด ผิวมะนาวและผงกะหรี่ นิดเดียวนะ ทำซุปแครอทนะ ไม่ใช่แกงกะหรี่ ท่องก่อนใส่ ตุ๋นปิดฝาไปเลยทีนี้ แครอทจะได้นุ่มและรสชาติทุกอย่างเข้ากันค่ะ
ช่วงรอก็แว้บไปเตรียมน้ำสลัด 🥬🥗จ๋าใช้วัตถุดิบเดียวกันกับซุปแหละ บอกแล้วว่าทำอาหารอย่าสะเปะสะปะ ร้อยเรียงเรื่องราวให้มันเข้ากันดีกว่าค่ะ
กลับมาที่ซุป เปิดฝามาแครอทน่าจะตุ๋นจนเข้าที่พอดี ให้เติมนมสดลงไปค่ะ ใครไม่ชอบนมก็ใช้น้ำซุปหรือน้ำสะอาด ใครกิน Plant-based ใช้กะทิผสมกับน้ำสะอาดได้ค่ะ ปิดไฟ คนให้ไม่ร้อนจัด แล้วเอามาปั่นให้เนียนค่ะ ถ้าปั่นตอนร้อนจัดก็เตรียมเช็ดผนังบ้านได้เลย ระเบิดดีๆนี่เอง จ๋าปั่นค่อนข้างนานจนเกิดฟองอากาศ ได้อย่างใจชอบแล้วเอากลับมาตั้งไฟอีกครั้ง เติมน้ำจนได้ความข้นของซุปที่ถูกต้องค่ะ ปรับรสชาติตามชอบ ปิดไฟแล้วยกลงให้ไม่เดือดจัดจนลวกปากนะคะ รสชาติซุปจะเปลี่ยนตามอุณหภูมินิดหน่อย อย่ารีบปรุงค่ะ
จ๋าจะแต่งหน้าอาหารจากสิ่งที่มีอยู่ในอาหารถ้าทำได้ ทำไงคะ ตีครีมค่ะ ใส่ผงกะหรี่ลงไปหน่อยแล้วตีจ้ะ!!! เอาครีมโปะหน้าซุปมันจะช่วยเพิ่มความ frothy ของซุปเข้าไปอีก พริกป่นโป๊ะโปะ แล้วอ่ะ จบก็ได้!

- 4 Review of red onion
- belacan as big as a mother
- Scar Coconut Rm1
- Coconut Milk Rm1
- fist shrimp (I mixed with yellow and orange)

How to:
Punch Cilipadi, big chili, belacan, seulas red onion and grated coconut, Gaul all the ingredients with mangoes, Brazilian Spinach (Brazilian spinach if you want to slice it for small also can) shrimp fist, red onion and coconut milk... taste it with salt Aji sugar... no need to put asam because we have mangoes, Brazilian spinach doesn't need to be deep we make raw to taste the crispy.... easy not 😄... hopefully it will be useful for all 😘😘😘

20g coriander
10g ginger
8 cloves of garlic (40g)
1 tsp coriander seeds
1 tsp cumin seeds
5 - 6 kaffir lime leaves
2 tsp salt
2 cans of coconut milk (800ml)
400ml water
2 tbsp palm sugar
4 tbsp soy sauce
200g egg plant
100g green beans
100g shimeji mushroom
300g deep fried tofu
some basil leaves
Instructions:
1. blend all the ingredients for the green curry paste with a blender until smooth.
2. pour a can of coconut milk into a pan or a pot. add green curry paste as well.
3. bring to a boil on medium heat.
4. add all the rest of the ingredients except for tofu and basil leaves. keep simmering until all the vegetables are cooked.
5. add deep fried tofu and basil.
6. Enjoy!
