留住你一晚是運氣,留住你一世是學問,談戀愛如是,開餐廳亦如是。
曾經有個朋友的餐廳快將開業,嚷著要我去幫襯。
餐廳開業前不久的一個晚上,跟這個朋友在另一家餐廳吃飯,飯後甜點是糯米糍。
「好食喎,」他說,「係咩味呢?」
是開玩笑還是說真的,如此明顯的菠蘿香味也嚐不出來?
「黃黃哋色,係咪芒果,」原來他真的嚐不出來。連芒果和鳳梨都分不出來的食癡 (白癡個癡) 開餐廳,有人願意開盤的話,一定賭佢一年內執笠。
好彩冇賭,結果十二個半月後才結業。
沒有人說「識食」是一位餐廳老闆必須擁有的條件,但 common sense 真是萬萬不能缺少。
雄心壯志是應該有的,卻不能被雄心壯志矇住了視線,餐飲戰場上滿佈的屍骸是對任何一位準餐廳老闆的警惕;扣埋人工唔使蝕已經好叻,有幾多人投資了七位數字做飲食,最後二十萬賣得番出去已經開心到笑淚縱橫。
有位居於香港的台灣富豪是一家高檔飲食集團的主要股東之一,他曾經說,餐廳要做得住,先要做對市場,而要做對市場,便要做對主題。
來自什麼什麼國家的米芝蓮級大廚或品牌是主題,拉麵牛腩麵車仔麵冰室茶餐廳珍珠奶茶等等等等又是主題。
做哪個主題才好?富豪說,「做自己人生的主題。」
受教了。
有些餐廳老闆的人生主題,叫「重生」。
瑪利曼中學出產過很多女神,廚神卻沒有幾個,這位叫 Tiffany 的女生可能是唯一一人。
灣仔的 Jean May 在疫情下誕生,賣的是講心多過講金的 casual dining,但端上餐枱的菜色是馬會 Derby Room 都被比下去的星級水準;想在 Jean May 訂枱食飯,最快要等到今年九月。
很多傳媒都報導過,主廚 Tiffany 曾經在投資銀行高薪厚職,但就是因為腦內生了一個血管瘤,所以醒覺到不能一生做不喜歡的事,於是毅然轉行做廚師。
坐在距離廚房最近的位置,可以一邊享受美食,一邊望著這位 Tiffany 全情投入工作。看著她笑著慢煮鴨胸的樣子,不由妒忌起來——上天給予一個人最大的禮物,或許就是一個令你醒又唔會令你死的血管瘤了。
又有些餐廳老闆的人生主題,叫「自虐」。
富二代搞餐廳應該怎樣搞的?應該像某家小姐那樣,在什麼地方代理一個牛肉麵回來,在銅鑼灣租個靚位,在朋友圈中碌盡人情卡叫人過來光顧拍照,然後便沒有然後,好好好得閒嗰陣先落去兜個圈浦下頭。
同樣是在銅鑼灣的一家餐廳,這位富二代擺出的是另一種姿態。
有次跟朋友求其在銅鑼灣選了一個叫 Moo Moo+ 的地方喝酒,坐底不久,「呯」的一聲,有客人不小心摔跌了玻璃杯,一地碎片。有個 waiter 拿起了掃把準備收拾之際,一位身穿白恤衫的男生對那位 waiter 說:「你去落單,等我執。」
高大靚仔不在話下,還要渾身書卷氣,掃起地來竟然技巧純熟。「嘩,」我的朋友覺得這位年輕人面熟,「條友做兼職做到嚟呢度?我喺觀塘個 food hall 食晏成日見到佢㗎。」
之後才發現,原來觀塘的 food hall 和銅鑼灣這家餐廳都是他開的店;再經查證,這位叫 Wilson 的,其家族是某位行家的大客,身家數以十億計。
係咪癲咗,富二代喺餐廳掃玻璃碎。
滿身銅臭的我,自然不會放過任何一個巴結富二代的機會。「你咁有米,攞間 franchise 返嚟做仲好玩啦。」
他笑得很迷人,語氣卻非常認真:「香港人應該做番香港人嘅 brand 嘛,有一日外國人問番香港人攞個 franchise 嚟做,你話幾威。」
還有些餐廳老闆的人生主題,叫「唯美」。
為同事慶生,餐廳我都選好了,壽星女卻問大家:「你哋介唔介意去旺角?」MK 是香港的一部份,當然願意到極點。
去到餐廳,打扮得一身仙氣的壽星女坐立不安似的;舉頭的時候左望右望,低頭的時候那濃濃的睫毛則在微微閃跳,明顯在等待什麼。
其實餐廳在太子,但看得出老闆還是竭力地希望擠出一些 MK 的味道,但 MK 得來又有點王家衛的 2046,牆上懸著的霓虹燈字體好像在某個失落的時空似曾相識;每一寸空間都有玩味,每一個細節都想吸睛,老闆應該是個唯美主義者。
餐廳的名字是張國榮的一首歌名——「芳華絕代」。
「喂,生日快樂。」突然有位長得像中田英壽的男生在壽星女的肩膊上拍了一下,她緊張的門牙幾乎把沙嗲的竹籤都要切斷了。
原來他就是芳華絕代的老闆,原來他就是那位唯美主義者,原來他就是她一直在等的人。
他叫 Norman。
還有更多「原來」。
原來 Norman 是港大畢業的 architect,原來餐廳由他負責設計。
原來同事與 Norman 在港大認識,原來同事一直暗戀他 (這個是我猜的)。
「係呀,我哋嗰陣好有緣,」Norman 回憶著,「大家唔同 faculty,但我成日都見到佢。」
「你成日見到佢,」我看透世事了,「咪即係佢成日吊住你尾囉。」
話音剛落,壽星女在枱底狠狠的踩了我一腳,眼神仍然帶著仙氣。
然後,有另一股仙氣突然飄了過來,有對白滑的玉手繞在 Norman 的肩膊上。同事看到這個女的,極度不自然的 hi 了一句;這一句 hi,像一壺滾水倒進冰桶內,響起了噼哩啪啦的碎裂之聲,應該是心碎的回音。
故事最後的「原來」,是原來 Norman 有女朋友。
自虐、重生、唯美,其實是人生一步一步的必經階段,希望最終可以做到芳華絕代。
所謂「芳華絕代」,就如黃偉文寫的歌詞一樣。
「顛倒眾生,吹灰不費,」人只要有自己的主題,就算再微不足道,都可以「艷與天齊」。

まんまるのモンスターボールパン作りました。
中にポケモンは・・・いません。
* Recipe *
Knead bread dough .
1.Mix roughly 95g bread flour , 2g dry yeast , and 5g skim milk .
2.Put in teaspoons 1/4 (1g) salt. Add 10g sugar into the place away from salt.
3.Pour 65g water on sugar , and knead.
4.After you make it one unit, put 10g unsalted butter that was returned to room temperature, and knead further.
5.After kneading up smoothly, divide into a half , and color one by a red edible food color.
6.Round it and turn down the seam . Put into the bowl which coated with vegetable oil lightly. Wrap it , and carry out primary fermentation for 50 minutes at a warm place.
Make cookie dough.
7.Put 20g sugar in 15g unsalted butter that was returned to room temperature, and mix until it is whitish.
8.Add 10g egg in 2 steps , and mix.
9.Put in teaspoons 1/2 (3g) milk and mix.
10.Sift 40g cake flour and teaspoon 2(5g) black cocoa powder , and put in.
11.Mix it lightly.Make it a bundle. Wrap and make it rest in a refrigerator .
12.Prepare the bread dough (6) which finished primary fermentation.
White Dough:
Make two chunks of 5g. Make the remainder two division into equal parts.
Red Dough:
Make it two division into equal parts.
Round it carrying out degassing.
Take 15 minutes bench time over a wet washcloth that you squeezed firmly.
13.Combine white dough and red .
14.Stretch (11) to a thickness of 5 mm , and cut into 5 mm wide.
15.Put (14) on 13.
16.Add (15) to the mold lightly-oiled. Carry out secondary fermentation at a warm place for 30 minutes.
Don't open the lid of the mold .
17.Bake for 22 minutes in the oven preheated at 170 ℃.
18.After baking up , take out such as on a soft cloth etc.
19.ITADAKIMASU!(Eat with thanks.)

パン生地を捏ねます。
1.強力粉95g、ドライイースト2g、スキムミルク5gを
ザッと混ぜあわせる。
2.塩 小さじ1/4(1g)、塩と離れたところに砂糖10gを入れる。
3.水65gを砂糖の上から流し入れ捏ねる。
4.ひとまとまりになったら、室温に戻した
無塩バター10gを入れてさらに捏ねる。
5.なめらかに捏ね上がったら、半分に分割し、
一つを赤の食用色素で着色する。
6.丸めトジメを下にして、薄くサラダ油を塗ったボウルに入れ、
ラップをし、暖かい場所で50分、一次発酵させる。
クッキー生地を作ります。
7.室温に戻した 無塩バター15gに砂糖20gを入れ、
白っぽくなるまで混ぜる。
8.卵10gを2回に分けて加え混ぜる。
9.牛乳 小さじ1/2(3g)も入れ、混ぜる。
10.薄力粉40g、ブラックココアパウダー5g(小さじ2)を
ふるい入れる。
11.サックリと混ぜ、ひとまとまりにして、
ラップに包んで冷蔵庫で休ませておく。
12.一次発酵の終わった6のパン生地を
白生地は5gを2個、それ以外を2等分に。
赤生地は2等分にしガス抜きしながら丸め、
固く絞った濡れフキンを掛け15分ベンチタイムをとる。
13.白と赤生地を綴じ合わせる。
14.11を5ミリの厚さに伸ばし、5ミリ幅に切り分ける。
15.14を13に付ける。
中の黒い丸は型抜きなどを使って作り、付ける。
16.薄く油を塗った型に15を入れ、
暖かい場所で30分、二次発酵させる。
型のフタは開けない。
17.170度に予熱したオーブンで22分焼く。
18.焼き上ったら柔らかい布の上などに取り出す。
19.いただきます。
