艾蜜莉沒喫到的松露腰果
昨晚法國總統馬卡龍電視訪談前, 所有媒體都在大猜測, 法國政府要開始祭出甚麼措施來阻止快控制不住的疫情, 多數電視媒體都說, 總統要實施宵禁, 但是不會用”couvre-feu”這個詞.
據說這個詞是中古世紀就有的, couvrir是指”覆蓋”, feu是”火”, couvre-feu是說把火熄滅, 不要被敵人發現. 也因此多半是在戰爭期間才實行的.
現代當然不必”熄火”, couvre-feu就成了宵禁.
45分鐘的總統面對記者訪談, 重點是: 法國九座城市將從周六半夜起實行宵禁, 從晚上9點到凌晨6點沒有特別原因(工作, 醫護, 救急, 生小孩…)禁止在外自由活動. 私人與公共場所聚會人數盡可能不要超過6人.
(站長心聲: 天啊~ 難道我要寫宵夜版防疫日記嗎? 太令人崩潰了…)
馬克龍這個新措施是盆大冷水, 意味著餐廳酒吧晚上根本不用營業了, 八點才習慣上餐桌的法國人怎麼可能九點回家? 通常九點還在apéro, 菜都還沒上來呢.
簡單說, 巴黎越夜越美麗的夜生活沒了, 天氣又轉冷, 只能在家煲湯過日子了…
天氣轉冷就想到滑雪. 這一陣子一直收到今年滑雪旅館的促銷資訊, 可是在這種疫情訊息萬變的時刻, 真的沒人敢隨便訂旅館安排年底的滑雪假期. 何況今年初法國就是從滑雪村開始傳出第一個疫情的. 所有的滑雪村也對下一季非常悲觀.
我倒是想到在第一次滑雪旅館喫到一個讓人驚豔的小零食: 松露腰果. 那是在法國高級的奢華滑雪村Courchevel的白馬酒店, LV集團旗下的旅館.
那天下午搭火車到旅館時接近傍晚, 山裡的天色暗得快, 4, 5點已經只剩山頭的一點餘暉. 放了行李, 到lounge喝一杯. 剛下長途火車旅程之後, 當然是在燒火的壁爐旁來杯香檳, 欣賞外面的雪景, 讓自己身心進入阿爾卑斯山雪國的場景氛圍.
隨著香檳通常都會來個小零食. 在法國, 場所等級往往從這種小零嘴上看得出來, 尋常的就是爆米花, 花生, 薯片, 因為成本低. 高級的是所謂的小點canapé – 就是廚房製作的鹹食點心. 前者是雞肋, 我很少碰; 後者則常常被放置太久而不新鮮.
最好的其實是挑選優質的好零食.
白馬那次的零食是腰果, 我一入口馬上被電到: 黑松露口味腰果! 而且很明顯的不是人工香味的黑松露, 是味道純正自然的黑松露!
我從此對這個腰果情有獨鍾. 住高級飯店的好處之一就是: 這種零食絕對不小氣, 喫完了再要. 住旅館那幾天這款黑松露腰果絕對沒少喫…
我本就愛喫各種堅果(杏仁, 胡桃, 開心果…), 那次的經驗我就更留意黑松露堅果, 可是嘗過許多之後, 發現很多同類產品用的腰果品質不夠好, 或是為了省成本而使用人工香精.
花了一點時間, 總算找到當初提供白馬酒店黑松露腰果的製造工坊! Esprit Gourmand是個位在法國南部普羅旺斯近百年歷史的Najarian家族產業, 創立於1922年, 是法國歷史最久至今仍在運作的堅果烘烤工坊. 向來只提供高級飯店, 所以在一般美食超市是看不到的.
他們提供的宮殿旅館每個名字說出來都閃亮亮的: 巴黎的四季喬治五世Georges V Four Seasons, 麗池Ritz-Paris, 克里雍Le Crillon Rosewood Hotel, Le Meurice, Le Plaza-Athénée, La Réserve. 以及南部的Saint-Tropez的Le Byblos和滑雪村Courchevel的白馬酒店Le Cheval Blanc.
這次再度和巴黎逛逛街合作, 由Esprit Gourmand製作的堅果產品. 我嘗了8款從中挑出其中三款: 除了最愛的黑松露腰果, 還有鹽花-普羅旺斯迷迭香腰果兩款鹹口味, 以及款甜的芝麻五香長山胡桃Noix de pécan sésame 5 épices.
既然現在無法旅行, 那就讓好東西旅行到你家吧.

昨天早上不到八點鐘我就到了 Four Seasons George V 飯店,因為和甜點主廚 Maxime 約好為他的甜點與麵包作品拍照。從早上超過10種的維也納酥皮麵包與早餐麵包類,一直到整個旅館與三個米其林餐廳Le Cinq(三星)、L'Orangerie(一星)、Le George(一星)幾乎所有的甜點,包括最新的夏季創作。
為了這個project,我前一天買了一張新的記憶卡,並直接命名為「Maxime」? 最後拍了接近800張照片、還有好幾個影片。第一個剪輯出來的短片是 Maxime 主廚在我面前示範組裝他的招牌甜點「蛋白霜之花」( Fleur de Vacherin )。雖然已經看過這朵花非常多次,但我仍然為整個構思與需要高難度技巧才能完成的作品屏息。如果是我來做的話,應該會把大部分的蛋白霜花片折斷、而且在雪酪融化前都不可能完成。

I spent a wonderful day yesterday at Four Seasons Hotel George V, Paris with the chef Maxime Frédéric and his incredibly delicate pastries and desserts, thanks to the hard work and support of his team!
In this short video the chef demonstrates how his signature dessert "Meringue Flower" ("Fleur de Vacherin" in French) is made. The meringue petals are extremely fragile so it requires an extreme concentration and skill to assemble. Maxime has dedicated this creation to Rose, his grandmother, whom he always visited with the flowers of the same in his childhood.
This dessert is a "revisité" of "Vacherin", a classic French dessert made of a meringue container enveloping ice creams and sorbets. Maxime's Fleur de Vacherin, is made of anise sablé, raspberry juice and jam, raspberry sorbet, a mousse made "fromage blanc", a fresh cheese originated in northern France, and then finally the meringue petals that form a perfect flower.

Maxime Frédéric 主廚為 Four Seasons Hotel George V, Paris 飯店內一星義式餐廳 Le George 設計的「提拉米蘇」。用產自家鄉諾曼第的新鮮白乳酪製成外環,輕柔包裹海綿蛋糕薄片、提拉米蘇奶餡、咖啡冰淇淋、酥脆蕎麥、濃縮咖啡,頂端的牛奶慕斯如同卡布奇諾咖啡的奶泡,精彩重現義式經典。
"Tiramisu", an amazing revisit of the Italian classic created by Maxime Frédéric, executive pastry chef of Four Seasons Hotel George V. A fine ring made of "faisselle", a fresh French cheese from Normany softly enveloping the Annécien sponge cake, tiramisu cream, cold coffee infused milk ice-cream, crispy buckwheat, milk mousse, and coffee gel, it is for sure the most delicate tiramisu that you could find in Paris.
