This year was our first time trick or treating and doing Halloween activities. Every time we passed a house with pumpkins, I’d pop a treat in their bucket. Just like that, we started our first little traditions for Halloween. Nothing big, just something simple but more than enough to make the kids happy. I’m not gonna lie, I’ve never liked Halloween. I scare easily. I told myself I’ll kindaaaaaa go semi-out for this holiday and you know what? I went “barely-out” still but Isaac and Ayla had a blast. Isaac doesn’t like to dress up but this year he was happily his hero, Gecko from PJ masks. Ayla was Aurora (or Roawa) despite never watched Sleeping Beauty (fun fact: the only Disney movie I’m still afraid of still as an adult). I even threw on a costume on which was my Princess Peach costume I never ended up wearing for Isaac’s 2nd birthday. I’m glad it actually came in use. This month has been a heavy month for a lot of my loved ones and I’m thankful for this holiday lightening things up. I realise I prob never liked Halloween because I never did those little things growing up. It’s nice I can live them through Isaac and Ayla. 黑毛豬梅頭肉 ... 1.5磅
醃料:
叉燒醬 ... 60克
柱候醬 ... 10克
海鮮醬 ... 30克
芝麻醬 ... 15克
砂糖 ... 20克
雞粉 ... 1茶匙
玫瑰露酒 ... 10克
額外材料:
蜜糖 ... 適量
備用叉燒汁:
滾水 ... 25毫升
叉燒醬 ... 25克
燒烤蜜糖 ... 30克
食譜:
第一步 梅頭豬肉解凍後洗淨瀝乾水並切成扒狀
第二步 用叉將豬肉刺出一堆小洞
第三步 將所有醃料均勻塗在肉上及按摩
第四步 放入保鮮袋內,放入雪櫃醃制3小時至入味
第五步 焗爐預熱200°c,焗盤墊上兩層錫紙,放上烤架,把豬肉放上
第六步 以200°c加熱風對流焗15分鐘,中途取出間歇淋上醬汁,焗15分鐘後,翻轉另一邊淋上醬料,溫度調節180 °c再焗多5分鐘
第七步 焗完後,兩邊塗上燒烤蜜糖,再焗3分鐘
第八步 混合叉燒醬滾水以及燒烤蜜糖製成後備燒烤醬,切開叉燒並淋上後備燒烤醬即成

Seasoning:
Char Siu sauce ... 60g
Chu Hou Paste ... 10g
Hoisin Sauce ... 30g
Sesame Paste ... 15g
Sugar ... 20g
Chicken Powder ... 1tsp
Rose Liqueur ... 10g
Additional Ingredients:
Honey ... appropriate
Spare Char Siu Sauce :
Boiling water ... 25ml
Chinese Barbecue Sauce ... 25g
Barbecue Honey ... 30g
Recipe:
STEP 1 Slice into pieces and let dry after defrosting and rinsing the Pork
STEP 2 Poke holes into the meat
STEP 3 Massage the meat after topping all the seasoning
STEP 4 Wrap the meat with cling film and put into the fridge for 3 hours
STEP 5 Preheat oven to 200°C,Put the meat on the tray with tin foil cover
STEP 6 Bake for 15mins in 200°C convection mode,Bake 5 more mins in 180°C after flipping the meat and basting the sauce
STEP 7 Rub with barbecue Honey and bake for 3 more minutes
STEP 8 Mix the Char Siu sauce and barbecue honey into hot water as Spare Chinese barbecue sauce,Slice the pork and baste the spare barbecue sauce and finish

*Recipe*
As for baked meringue, it is common to bake thoroughly over about 90 minutes in the oven preheated at 100 ℃. However the minimum preset temperature of the oven of our home is 150℃. We made it in the oven in the state where the switch was turned off by its last resort.
1.Whip the egg white put into the bowl , while warming in hot water of about 50 ℃.If you have cream of tartar,put it in.
2.Add the powdered sugar of the amount of double of the egg white , and whip further.
Make firm meringue.
3.Mix an edible food color ,and make color meringue.
4.Put 3(the colored meringue) into a forcing bag ,and press out to the top plate which covered with the oven sheet.
5.Turn off the switch of the oven heated at 150 ℃ , and put 4 in.
Make it dry as it is for 2 hours.
6.Repeat 5.Finished.
7.Since the baking meringue becomes damp easily, please put it into the bottle etc. into which the drier was put and keep it.
At my home, the egg white which has remained in making sweets is frozen.
The frozen egg white was thawed and made this time also.
If it whips in the state of half-defrosting, the fine meringue which dresses up can be made.

*レシピ*
1.ボウルに入れた卵白を、熱めのお湯
(ちょっとだけ、手を浸けていられるくらい。
50度ってとこでしょうか。)で湯煎しながら泡立てる。
あれば、クリームターター(卵白1個およそ35gに対し
付属スプーン山盛り3杯)を入れる。
2.卵白の倍量の粉砂糖を加え、さらに泡立てる。
しっかりとしたメレンゲを作る。
3.メレンゲに食用色素を混ぜて、色メレンゲを作る。
4.3を絞り袋に入れ、オーブンシートを敷いた天板に絞り出す。
5.150度に温めたオーブンのスイッチを切り4を入れ
2時間そのまま乾燥させる。
6.再度オーブンを150度に温め、スイッチを切った状態の
オーブンに入れて2時間、乾燥させる。
7.できた焼きメレンゲは湿気りやすいので、
乾燥剤を入れたビンなどに入れて保管してください。
焼きメレンゲは、100度に予熱したオーブンで
90分ほどかけてじっくり焼くのが一般的です。
我が家のオーブンは最低設定温度が150度なので
苦肉の策で、スイッチを切った状態のオーブンで作ってみました。
工夫すれば、なんとかなるもんです。
我が家では、お菓子作りで余ってしまった卵白を冷凍しておきます。
今回のレシピも冷凍卵白を解凍して作りました。
半解凍状態で泡立てると
キメの細かいメレンゲを作ることができます。

材料:

麥芽糖
叉燒醬
玫瑰露酒
處理:
1. 梅頭豬扒用清水解凍。
2. 解凍,用鹽乸豬扒20分鐘,洗乾淨。
3. 廚紙索乾水。
4. 豬扒調味料:
●叉燒1湯匙
●豉油1湯匙
●鮑魚汁1茶匙
●玫瑰露1湯匙
攪勻,醃2小時以上。
烹調:
1. 氣炸鍋鋪上錫紙。
2. 預熱3分鐘。
3. 放叉燒在氣炸鍋內。
4. 用160度氣炸10分鐘。
5. 10分鐘,反轉。
6. 用160度氣炸5分鐘。
7. 過了5分鐘後,取出豬扒,加2湯匙叉燒醬攪勻。
8. 用200度,氣炸10分鐘。
9. 過了10分鐘,取出豬扒,塗上叉燒醬。
10. 用200度,氣炸5分鐘。
11. 過了5分鐘,塗上麥芽糖,放回氣炸鍋。
12. 氣炸5分鐘,反轉,再氣炸3分鐘,上碟。
13. 攤凍,斬好,完成。
Airfrying cha siu:
Ingredients:
Plumbhead 4 pcs
pork chop
Maltose
Cha siu sauce
Rose liqueur
Preparation:
1. Defrost the pork chop with tap water.
2. Season with salt for 20 minutes after defrosting.
3. Rinse thoroughly. Dry with kitchen towel.
4. Season the pork:
a. cha siu sauce 1 tbsp
b. light soya sauce 1 tbsp
c. abalone sauce 1 tsp
d. rose liqueur 1 tbsp
Mix well. Season for 2 hours or more.
Steps:
1. Put an aluminium foil on airfryer rack.
2. Preheat the airfryer for 3 minutes.
3. Put cha Siu in the airfryer.
4. Airfry at 160 C for 10 minutes.
5. Flip over after 10 minutes.
6. Airfry at 160 C for 5 minutes.
7. Take out pork chop after 5 minutes. Brush 2 tbsp cha siu sauce on it and mix well.
8. Airfry at 200 C for 10 minutes.
9. Brush cha siu sauce on pork chop after 10 minutes.
10. Airfry at 200 C for 5 minutes.
11. Brush maltose syrup on cha siu after 5 minutes. Then put it back into airfryer.
12. Flip over cha siu after airfrying 5 minutes, airfrying 3 minutes more, put cha siu on a plate.
13. Let cha siu cool down, then cut it to pieces. Serve.

Airfrying scallops with garlic salt sauce:
Ingredients:
Frozen scallops 4 Nos.
Coriander 1 No.
Red chili 1 No.
Seasoning:
Garlic sauce 1 tbsp
Tapioca starch 1/4 tbsp
Sugar 1/4 tbsp
Abalone sauce 1/3 tbsp
Preparation:
1. Defrost the scallops with tap water.
2. Dry with kitchen towel after defrosting.
3. Put scallops on plate.
4. Put garlic sauce, red chili cubes on top of scallops.
Steps:
1. Preheat the airfryer for 2 minutes.
3. Put the scallops into airfryer.
2. Brush little oil on scallops.
3. Put tapioca starch slightly on top of scallops.
6. Airfry scallops at 200 C for 5 minutes.
8. Complete. Put coriander on top. Serve.
