CÁNH GÀ TRÀ HUN KHÓI - TEA-SMOKED CHICKEN WINGS
ƯỚP CÁNH GÀ - MARINATED CHICKEN
- 10 cặp cánh gà - 10 pairs chicken wings
- 2 muỗng súp gừng - 2 tbsp ginger
- 3 muỗng súp tỏi - 3 tbsp garlic
- 2 muỗng súp mật ong - 2 tbsp honey
- 2 muỗng súp dầu hào - 2 tbsp oyster sauce
- 4 muỗng súp rượu trắng - 4 tbsp wine rice
- 3 muỗng súp nước tương - 3 tbsp soy sauce
- 1/2 muỗng súp hắc xì dầu - 1/2 tbsp dark soy sauce
THÀNH PHẦN HUN KHÓI - TEA-SMOKED INGREDIENTS
- 100 gr gạo - 100 gr rice
- 80 gr trà lài - 80 gr jasmine tea
- 60 gr đường vàng - 60 gram brown sugar
THỰC HIỆN
- Trộn đều tất cả các thành phần ướp cánh gà. Cho vào ngăn mát tủ lạnh ướp khoảng 4 tiếng.
- Lót 1 lớp giấy bạc dưới chảo và cho các thành phần hun khói vào trộn đều. Sử dụng 1 vỉ nướng giống như clip để cách với lớp hun khói.
- Sau đó, xếp cánh gà vào và đậy kín chảo bằng 1 tấm giấy bạc.
- Nấu ở lửa nhỏ 30 phút, sau đó tắt bếp và giữ yên giấy bạc trong 20 phút để hun khói.
- Ăn kèm với tương ớt, tương cà hoặc tương mận
METHOD

こんにちは、Facebookチームの北尾です。カレー特集のフィナーレを飾るのは、スペアリブが入ったボリューム満点のスープカレー!「黄金の味」で味付けした「黄金スペアリブ」をカレーの具に使って、特別感あふれる一品にしてみました(*^_^*)
濃厚な味わいのカレーは、レモンを絞ったごはんと一緒に食べるのがおすすめ♪レモンのさわやかさのおかげで、存在感のあるスペアリブもペロリと食べられちゃいますよ^^
<材料 4人分>
[黄金スペアリブ]
豚スペアリブ(骨付き) 約600g
エバラ黄金の味 1本(約360g)
ヨーグルト(プレーンタイプ) 50g
[スープカレー]
たまねぎ(みじん切り) 2個
じゃがいも 4個
トマト(2cm角) 2個
にんにく、しょうがのすりおろし 各2かけ分
ドライバジル 小さじ2
ローリエ 2枚
カレー粉 大さじ3
エバラ横濱舶来亭 カレーフレーク 80g
水 7カップ(1400ml)
ごはん 適量
レモンのくし形切り 4切れ
塩 適量
黒こしょう 適量
サラダ油 適量
<作り方>
[黄金スペアリブ]
【1】下ゆでしたスペアリブを「黄金の味」とヨーグルトに約20分漬け込みます。
【2】フライパンに油を熱し、【1】のスペアリブを焼き、中まで火が通ったら、できあがりです。
[スープカレー]
【1】じゃがいもは皮をむいて半分に切ります。
【2】フライパンに油を熱し、たまねぎを入れてサッと炒めたら、ふたをして5分ほど蒸し焼きにします。
【3】ふたを取り、たまねぎがあめ色になるまで炒めたら、にんにく、しょうがを加えて、香りが立つまで炒めます。
【4】【3】のフライパンにトマトを入れて炒め、塩と黒こしょうを振ります。
【5】【4】にドライバジル、ローリエ、カレー粉を入れて混ぜたら、水を7カップ加えます。
【6】【5】にスペアリブ、じゃがいも、塩小さじ1を加え、アクを取りながら約15分煮込みます。
【7】じゃがいもがやわらかくなったら「横濱舶来亭 カレーフレーク」を入れてよく混ぜ、弱火で約10分煮込みます。
【8】塩と黒こしょうで味を整え、器に盛り付けて完成です。
【9】ごはんにレモンを絞って、お召しあがりください。

茶巾絞り(4個)
1.カボチャ200gと牛乳25ml
2.バター25gと塩をひとつまみ
3.フォークの背でカボチャをつぶして全体を混ぜる
4.小さい器にラップを敷いてカボチャ1/4を入れる
5.ラップで包みながら丸める
6.口をひねりながら形成
7.冷蔵庫で冷やす
フライボール(12個)
1.カボチャ350gにバター30g
2.塩コショウ適量
3.パン粉に黒ゴマを適量
4.12等分して丸めたカボチャに小麦粉と卵
5.パン粉をまぶして170℃で転がしながら揚げる

Today, I will show you how to make basic curry rice. More curry rice recipes are coming, so don't miss them and I hope you enjoy!

Curry Rice (Vermont Curry)
Difficulty: Easy
Time: 30min
Number of servings: 6
Ingredients:
1/2 box = 119g (4.2oz.) House Vermont Curry Sauce Mix (Med Hot) *we call it "curry roux". you can choose mild or hot as well.
250g (8.8oz.) meat *chicken, pork, beef, etc...
2 medium (400g=14.1oz.) onions
1&1/2 medium (225g=7.9oz.) potatoes
1/2 medium (100g=3.5oz.) carrot
850ml water
1 tbsp. cooking oil or butter
6 servings cooked rice
Directions:
1. Cut meat of your choice into bite-size pieces. Cut the onions into bite-size pieces. Cut the potatoes and the carrot into bite-size pieces.
2. Heat the cooking oil in a large stew pot. Add onions, carrots, and potatoes, and stir-fry them until slightly coated with oil. Add meat and cook until no longer pink.
3. Add 850ml water, bring to a boil, remove the foam, and turn the heat down to low and cook for about 15 minutes.
4.Turn off the heat, break up the curry roux into the pot, and mix well until completely melted. *make sure you stop the heat when you add the curry roux, otherwise it won't blend well.
5. Then put on the heat and simmer for about 10 minutes until it thickens.
6. Serve curry on a hot bed of rice.
*for best results, don't use a lid while cooking.
*curry and rice is best eaten on the day it's made but if you have any leftover, store it in the fridge and finish it on the next day, but it is not recommended.
*if you have leftover curry roux, wrap in a plastic wrap and store it in the fridge and use within a week.

Before we go on, we would like to give special thanks to Shogun by La Gourmet for letting us try their super good and durable non-stick pan. The pan we're using in this video has a non-stick granite coating. We've been using this for slightly over a year now and it's still in brand new condition. Love it! Just a note to caring for your non-stick pan, please do not use olive oil in it because olive oil has low smoking point which will spoil the coating of the pan. Also do not use any metal stirrers in the pan because this will scratch up the surface of the pan and spoil it. When washing your non-stick pan, please use sponge - not those wired ones. This again will help to protect your non-stick surface.
