過年知道大家都好想我較蒸糕，今次教大家椰汁年糕，我依個版本同傳統有小小唔同， 想知點整就記得睇了，記得交功課呀😁

椰汁年糕
材料：
📌糯米粉225克
📌沾米粉37克
📌澄麵30克
📌片糖200克大约2片多小小(要弄碎些比较容易煮得溶)
📌水210克
📌椰奶120毫升
📌oil 30克
📌錫纸盆掃上油
📌鍚紙一張
📌紅棗一粒

做法：
1. 先用小火在210g 水中煮溶所有
片糖後, 待涼
2. 將三種麵粉全部一起過篩, 並可
混合在一起備用
3. 將(1)的糖水過篩, 如未涼攪幾下
来降温後才加入椰奶
4. 將(2)的麵粉中間整個洞, 將糖水
分多次慢慢加入及每次攪匀了再
加入另一次
5. 加油入粉漿内可用手動打蛋器或
攪拌機攪至粉漿平滑直至没有粉
粒
6. 讓攪匀的粉漿静止20分鐘(可以
幫助麵粉吸入水份)
7. 將粉漿再次撹匀,然後再過篩倒
入蒸盆, 蓋上錫紙
8. 用蒸爐100度蒸1至1.5小時視乎
粉漿厚度. 如用明火蒸, 大火滾
起後, 用中大火蒸. 注意⚠️不要
太猛火否則容易會有洞在年糕面
蒸完加一粒紅棗在中間, 完成!

Simplified Coconut Chinese New Year Cake (“Nian Gao”)
Flour Ingredients:
Glutinous rice flour - 225g
Wheat starch (“Teng Mein”) - 30g (or replace with cornflour)
Rice flour - 37g
These flours combination will not give you a sticky and hard texture. It will be soft, bouncy, and chewy the next day instead of hard and sticky.

If you wish the make the traditional version, just omit the wheat starch (“Teng Mein”) and rice flour from the recipe and the rest remain the same.

Sweetener ingredient:
Chinese dark brown sugar - 200g or about 2 slabs (break into small pieces so they melt faster)

Liquid ingredients:
Water - 210g
Coconut milk - 120g (for more intense coconut flavor you can use coconut cream)
Oil - 30g or about 2 ½ tbsp

Garnish ingredient:
Chinese red date

Other utensils:
Sifter
Spatula
Whisk
Stand mixer – optional
Balloon whisk - optional
Oiled steam proof pan for steaming
Toothpick
Foil paper or plate to cover the pan

Methods:
1. In a large mixing bowl, you MUST SIFT the glutinous flour, rice flour, wheat starch (“Teng Mein”) into the bowl and mix well. Make a hole in the center. Set aside. This is your flour mixture.

2. In a cooking pot, add in Chinese dark brown sugar pieces, water, and turn on LOW heat to melt the sugar. DO NOT use high heat because it will evaporate the water.

3. Once it starts to boil, TURN OFF the heat and keep stirring to speed up the melting process.

4. Pour the melted sugar through a sifter into a large bowl to make sure there are no hard lumps of sugar left and MUST let it stand to cool to room temperature before mixing with other ingredients. Keep stirring to speed up the cooling process.

5. Once it is almost cool, add in the coconut milk. Mix well. This is your liquid mixture.

6. Add ONLY about ¼ of a cup of the liquid mixture into the well of the flour mixture prepared in Step 1.

7. Mix well with a spatula until all the liquid is absorbed into the flour. Continue with the rest of the liquid mixture by adding about ¼ cup at a time into the flour mixture and mix well before adding the next ¼ cup of liquid mixture. Be patience. **DO NOT add all the liquid into the flour at once.**

8. Once all liquid mixture has been mixed in with the flour, give a final good mix with a whisk and making sure there is no dry flour left.

9. Add the oil and continue mixing with a whisk until the oil is well incorporated into the batter or you can use an electric stand mixer, attached with a balloon whisk, and mix until you get a smooth batter about 1 minute or so on low speed.

10. Leave the batter in the mixing bowl and let it sit and rest for about 20 minutes. This step is VERY IMPORTANT to let the flour absorbs all the liquid and moisture for even flavor and a better tasting cake. This step also replaces the traditional way of laborious kneading of the batter.

11. Preheat the steam oven to 100C (212F).

12. After 20 minutes, mix the batter again with a spatula because flour will fall to the bottom of the bowl again after a waiting period.

13. You MUST SIFT the batter again into a bowl. This will make sure you get a smooth cake after.

14. Pour the batter into an oiled steam proof pan. Flatten any bubbles on the top surface with a toothpick. Cover the pan with a foil paper or plate to prevent condensation drippings.

15. Steam for 1 hour to 1 ½ hour depending on the thickness of your batter in the pan. Prefer to over steam instead of under steam.

DO NOT steam on high heat to prevent bubbles formed on the top surface of your cake when done.

16. The cake is done when you stick a bamboo stick into the center of the cake and comes out clean.

17. Garnish with a red date by placing it in the center of the cake.

Hello my snowflakes,

I went Christmas Shopping last night and it was the perfect opportunity to film another 'Get ready with me video/tutorial'. Christmas time always makes me feel extra special so I wanted to look extra glamorous for shopping.

I've been loving the mulberry lip trend lately (again, must be a winter thing). Usually it's not something I would imagine myself pulling off but Winter always gives me extra confidence to wear bolder colours.

This look is easy and quick to create but gives such a strong impression of elegance and beauty. It's perfect for the Winter holidays because it's such a glam look. Even though this look has a very sophisticated high end feel, all the products I used in the video are drugstore products. Yey for affordable beauty.

I purposely matched my outfit to complement my makeup. I can't stop buying pieces in maroon and dark red. I can't get enough of it. I guess the warm red tones gives the overall outfit a hint of festiveness? Hehe.

Stay warm everybody! It's so easy to fall ill this season so wrap up and drink plenty of fluids. I think I've got Winter blues. I'M CONSTANTLY hungry and tired lol. It's cool. We're just building up body insulation lol. Ok I'm off to walk the doggies.

This time, the Knicks didn't lose their cool -- or the game.


Zach Randolph had 22 points and 17 rebounds, three other players scored more than 20 points, and New York erased a series of double-digit deficits to win 119-112 Tuesday night in the Denver Nuggets' first trip to Madison Square Garden since last year's brawl.

"Coming in, you knew it was a big game," Randolph said. "Last year and the incident, guys had a lot amped up and wanted to win."

Seemingly on the verge of being run off the floor in the same way they were before their meltdown 11 months ago, the Knicks instead blew by the Nuggets with a fourth-quarter rally, then held on behind huge plays from Randolph and Eddy Curry in their best outing since being paired together.

"I think that's what Isiah had in mind when he brought Zach in here," Curry said. "I had a lot of fun tonight. This is probably the most fun I had in a basketball game."

Jamal Crawford led the Knicks with 25 points and Curry added 24, nine in the fourth quarter. Stephon Marbury had 21 points and nine assists, and Renaldo Balkman led a spirited bench effort with 11 points.

"Our whole team, I like the tenacity that we played with. I like the intensity that we played with," Knicks coach Isiah Thomas said.

Allen Iverson scored 32 points and Carmelo Anthony had 24 for the Nuggets, who led by as many as 15 and were still ahead by 10 going to the fourth quarter before dropping their second straight.

"It's early in the season and we did a lot of good stuff, but not good enough to beat a team that was hungrier than us in the fourth quarter," Nuggets coach George Karl said.

Iverson briefly had to leave the floor after bloodying his lip defending Marbury with under 2 minutes left, but everything else about the game was clean -- unlike Denver's last trip here.

In that one, the Nuggets were 1:15 away from finishing up a 123-100 victory last Dec. 16 when Knicks reserve Mardy Collins took down J.R. Smith by the neck to stop a breakaway. Nate Robinson soon jumped in, and he and Smith tumbled into the front row while fighting. Anthony, leading the NBA in scoring at the time, dropped Collins with a punch and was suspended 15 games.

Seven players were suspended, each organization was fined $500,000, and the already cold relationship between Thomas and Karl grew even frostier after Thomas accused Karl of creating a dangerous situation by leaving his starters on the floor, and Karl fired back with a profane tirade.

There were no incidents this time, even when Smith had another breakaway late in the third quarter and Robinson was forced to foul to stop him.

Down 92-82 to start the fourth, the Knicks tied it at 102 on Curry's bucket with about 5 minutes left. After a final tie at 108, Marbury put New York ahead for good with two free throws with 2:32 remaining, then Curry blocked Marcus Camby's shot on the other end and the Knicks stayed ahead from there.

"We had this game and we just gave it away tonight," Anthony said. "We had it in our hands and we couldn't maintain the lead. That was a team that played hard every possession. Maybe we took a couple of possessions off and they capitalized off that."

New York outscored Denver 37-20 in the final 12 minutes.

Robinson and Smith entered during the same stoppage with 3:56 left in the first quarter, with Smith making his season debut to loud boos following a three-game team suspension for an incident at a nightclub.

The Knicks shot 70 percent in a fast-paced first quarter, and still trailed 37-32. Linas Kleiza made all five shots and scored 12 points, Iverson had 11 in his first action at Madison Square Garden since late in the 2005-06 season, and the Nuggets shot 67 percent.

The lead grew to 50-35 when Eduardo Najera dribbled the length of the floor for a layup, bringing out the first boos directed toward the Knicks at home this season. But New York fought back to tie it at 60 before Denver ran off the final six points of the half.

"Last year we would have lost this game by 15 points," Knicks reserve David Lee said.

The Nuggets quickly restored the double-digit lead in the third, and again back came the Knicks, tying it at 82 behind a flurry from Crawford during an 11-1 spurt. The Nuggets then scored 10 straight to take a 92-82 cushion into the final period.

Denver F Kenyon Martin sat out so he could play Wednesday at Boston. The Nuggets aren't using him in back-to-back games while he works his way back from knee surgery. ... For this video, I headed down to Popeyes to destroy a custom-made Spicy Chicken Sandwich platter! Popeyes is a fast-food chain that originated in Lousiana, specialising in Fried Chicken and Cajun-style cuisine, and located island-wide. Popeye’s famously popular Chicken Sandwich, which was introduced in August 2019 to much fanfare and demand, has finally come to Singapore for a limited period of time.

Assembled onto my platter were 5 Chicken Sandwiches, 5 pieces of Fried Chicken, 4 Buttermilk Biscuits, 1 large Mac ’n’ Cheese, 1 large Coleslaw, 1 large Mashed Potato and 1 large Fries, together with various condiments like Ranch and Cheese sauces. Unfortunately, I ordered Chicken Tenders and a few other sides that were not given to me, making this platter smaller than I planned.

The Chicken Sandwiches were a true treat and I finally understand how they were sold out within weeks in the USA. The Chicken Sandwich came simply constructed - a lightly toasted Brioche Bun, a thick piece of fried chicken thigh, spicy mayonnaise and pickles. However, the simplicity of it allowed each component to shine brightly. The chicken was crispy, moist, tender and on the spicy side. The mayo had a hint of spiciness to it as well, but it still helped cool down the heat from the chicken. There were only 2 pickles in the Chicken Sandwich, but they were refreshing and crunchy. As someone who does not fancy pickles, I actually would have preferred more in my Chicken Sandwich. Finally, the Brioche Bun added a pleasant sweetness to mitigate the spicy chicken and mayonnaise. All these came together to form a splendid Chicken Sandwich. My single criticism would be that having a slice of cheese would have elevated this Chicken Sandwich to even greater heights.

This was a relatively straightforward mukbang which I enjoyed. My only regret was speeding through the Chicken Sandwiches which made me unable to fully enjoy them. Do try Popeye’s Chicken Sandwich while it is available here in Singapore!
