去年八月，在某訪問時說被問到我的Bucket List(想完成的事)。我想了很久，娓娓道出：「我想在兩年內寫一本有關素食和LifeStyle的書。」想不到，不夠一年的時間就完成了心願。
在二十七歲的這一年，我寫下自己從決定素食開始，那些初心和經歷、成功與困難、身體及心靈上的點點過程—記錄我如何由選擇「食物」開始，過一個自己選擇的人生，一步步成為「更好的我」。
茹素三年，素食除了讓我發現食物可以如此多樣性，也讓我因此接觸到更多的人、更多我未曾想像過的事。沒有負擔的蔬食，不止於可以為身體帶來好的能量，感覺輕盈和舒適了，也影響了我的生活態度，甚至對生命的看法。
也許，從我的文字，能道出不少素食朋友的心底話，讓大家知道難免崎嶇的素食之路上有這麼一個素未謀面的知心人。更能讓未曾試過吃素的朋友多明白一點吃素到底是甚麼一回事，然後能和吃素的家人朋友相處得更好，甚至偶爾一起享受素食的滋味。
對我來說，「素」不只是吃，它能賞、能活。🦄
素食的日子、簡約的生活、直接的情感——是啟發，是美麗的開始，是愛。

這個系列很直接，就是想讓大家知道在家也可以輕鬆做素食！
純素、無麩質、無精製糖 的一人份甜品，這次是教人懷念的小點心——布丁。無雞蛋卻有淡淡的豆奶香氣⋯⋯吃完一個也不夠呢。

Vegan caramel vanilla pudding
Serve 1
Preparing time 15 minutes
Ingredients /
(Pudding)
220mL Unsweentened Soymilk
5g Arrowroot powder
1g Agar agar
15g Maple Syrup
1/2 tsp Pure vanilla extract
1/2 tsp Dark Rum
(Caramel sauce)
25g Organic coconut sugar
15g Water
Instructions /
1. Whisk together soymilk, arrowroot powder and agar agar until smooth.
2. Add maple syrup, pure vanilla extract and dark rum into the mixture. Mix well.
3. Heat the mixture until simmering. Let it boil for 1 minute.
4. Carefully pour the mixture into the mould. Cover it in clingfilm & place it into the fridge for at least 4 hours to set.
5. Make the sauce: Add the coconut sugar to a saucepan with the water. Melt until its golden.
6. Remove the pudding from the fridge and serve with the caramel sauce. Enjoy!

【純素焦糖雲呢嗱布丁】
1人份
準備時間：15分鐘
食材 /
(布丁)
220毫升 無糖豆乳
5克 葛粉
1克 寒天粉
15克 楓糖漿
1/2 茶匙 純雲呢嗱油
1/2 茶匙 蘭娒酒
(焦糖醬)
25克 有機椰糖
15克 水
做法 /
1. 將豆乳、葛粉和寒天粉放入鍋中，攪拌均勻。
2. 加入楓糖漿、純雲呢嗱油和蘭娒酒。
3. 以中火熬煮布丁的材料，煮滾一分鐘後熄火。
4. 將材料倒進布丁模具中，然後放進雪櫃，冷藏至少四小時至凝固。
5. 準備焦糖醬：將糖和水放進鍋中加熱，以小火煮至濃稠和金黃色。
6. 將焦糖醬淋在純素布丁上，即成！
