Isobel and Iman bakes Fudgy Brownies using a DIY Kit prepared by @Boxtivity. The idea behind Boxtivity began when head baker, Ima from Syzcake bakery Syzcake, spent time with her daughter Inara at home, during the Covid Lockdown.

一般蛋糕都使用了蛋奶,成為vegan後,原本最擔心的是可能無法再吃心愛的甜品了。可是當我真正作出改變後,才發現vegan的世界很大,很多事情是我過份擔憂了。因為怎麼可能有不愛吃甜品的vegan呢 XD?所以vegan蛋糕其實還挺常見的,而且吃了也不會有罪惡感,甚至自家製作也不是什麼難事呢!
Vegan lifestyle Passion 是我這幾年最常光顧的蛋糕店,店主Amy也是vegan,其蛋糕主打有機、純素、健康、美味,使用的食材都非常講究。Amy更常常開課教大家製作蛋糕,她的課除了可以學習蛋糕製作外,我覺得更像是上了一節營養課。因為身為健康教練的Amy,十分了解營養學,也很樂意分享。
今次,Amy為我們示範了一款「香蕉黑芝麻忌廉小蛋糕」,材料簡單、很容易找到,要留意的是,最好用「芝麻蕉 (熟蕉)」;而且Amy和我都很喜歡食忌廉,又剛好我們發現了 OraSì OraSi Hong Kong 有一款vegan淡忌廉,所以我們便順勢把它加在小蛋糕上!一起看影片做蛋糕吧~

Because Amy, a health coach, knows nutrition very well and is very happy to share it with people.
This time, Amy demonstrated a "Banana Black Sesame Cupcake w/ Cream" for us. The ingredients are simple and easy to find. 將可愛討喜的新鮮藍莓混入麵糊中做成鬆軟美味的Blueberry Muffins,潤濕又鬆軟,超好吃!早餐來一個就很有飽足感了。
These muffins are a clone of "The Famous Jordan Marsh Blueberry Muffins", touted as the best blueberry muffins in Boston. But they are so quick and easy to make!
What have I done differently?
1. I added zest from half a lemon to bring out the taste of the blueberries and it works. Don't skip the zest!
2. I also use brown sugar because I ran out of normal granulated sugar so the colour is a bit off, don’t learn from me!
3. I added milk much later (forgetful); also don’t learn from me, just follow the recipe.
Nonetheless, the muffins turned out to be perfect in terms of taste of texture. I’m going to double the ingredients and make 12 next time!
To make 6 muffins:
Ingredients:
60 gram softened butter
1/2 cups sugar
1 eggs
1 cup all purpose flour
zest from ½ lemon
1/4 teaspoon salt
1 teaspoons baking powder
60 ml milk
1 box blueberries (125-150g), washed. 1/3 smashed, 2/3 whole
1 teaspoons sugar and walnut for garnishing (optional)
Preparation:
1.Preheat the oven to 190 degree celcius.
2.Cream the butter and sugar until light.
3.Add the eggs, one at a time, beating well after each addition.
4.Sift together the flour, salt and baking powder, and add to the creamed mixture alternately with the milk.
5.Crush 1/3 blueberries with a fork, and mix into the batter. Fold in the remaining whole berries with lemon zest.
6.Line a 6 cup standard muffin tin with cupcake liners, and fill with batter then top with walnuts. Sprinkle the 1 teaspoon sugar over the tops of the 6 muffins, and bake for about 20-25 minutes. Use a toothpick to check if the muffin is cooked from the inner.
7.Remove muffins from tin and cool at least 30 minutes. Store, uncovered, or the muffins will be too moist the second day.

We made the perfect cupcakes for a hot summer! A sturdy, expanding batter was chosen for the cupcake. It was finished to match the flavor of an ice cream cone. The chocolate coating becomes easy to apply upon addition of something, and gives a nice melted feel of an ice cream. Even if the cupcakes comes out of the oven looking deformed, that could add to the melted feel of the ice cream, so don't worry!
*Recipe* (for 4 ice cream cones and ramekins)
Baking the cupcakes
1. Separate 2 eggs.
2. Place 35g of unsalted butter at room temperature into a bowl and mix.
3. Add 30g of sugar, and mix.
4. Add the separated egg yolk from 1, and mix.
5. Add 20g of room temperature milk, and mix. It may be hard to mix, so be patient.
6. Add the egg white from 1 to a separate bowl, and mix until bubbles form.
7. Add 10g sugar to 6, and form a stiff meringue.
8. Add a spoonful of 7 to 5, and mix well.
9. Add the remaining meringue, and mix without flattening the meringue.
10. Sift 50g of cake flour and 1g of baking powder to 9.
11. Fold to mix.
12. Place 11 into ice cream cones. Spread the batter to the edges of the cone, with slightly raised center.
13. Bake in a pre-heated 170 degree Celsius oven for 20-26 minutes.
14. Insert a toothpick and if it comes out clean, it is done.
Making the chocolate coating
15. Place 60g of white chocolate in a microwave safe bowl.
16. Heat in a 600w microwave for 40 seconds.
17. Mix.
18. Heat for an additional 20 seconds in the microwave.
19. Mix. If still not fully melted, try heating in 10 second intervals.
20. When the chocolate is completely melted, add 1 tsp of vegetable oil, and mix.
21. Transfer 20 to a dish that is about the same diameter as the cupcakes.
22. Dip 14 in 21, and coat thoroughly. If white chocolate is left over, try pouring it over the cupcakes.
23. Decorate the cupcakes with desired dragee. It is best to decorate as though the ice cream is melting!
24. Place it nonchalantly on a dining table. If your family notifies you that the "ice cream is melting!" - SUCCESS!
If you place the cupcake in the refrigerator, it will lose the melted feel of ice cream, and turn into a standard cupcake with chocolate coating. Eat them quickly because the ice cream cone will get soggy and lose the crunchiness.
暑い夏にぴったり!?のカップケーキ、作ってみました。カップケーキは割れづらく膨らむ生地をチョイス。そして、アイスクリームコーンにマッチする味に仕上げてみました。上にかけるチョコレートはあるものを足すとコーティングしやすく、アイスクリームの溶けた感?もでて、いい感じに仕上がります。カップケーキはいびつに焼き上がってもアイスクリームの溶けた感?につながっていくので、安心してください。
*レシピ*(ココットカップ型 アイスクリームコーン 4個分)
カップケーキを焼きます。
1.卵 2個を卵黄と卵白と白身に分ける。
2.ボウルに室温に戻した無塩バター 35gを入れ混ぜる。
3.砂糖 30gを入れ、混ぜる。
4.1の卵黄を加え、混ぜる。
5.室温にしておいた牛乳 20gを入れ混ぜる。混ざりづらいので根気よく。
6.ボウルに1の卵白を入れ、少し泡立つまで混ぜる。
7.6に砂糖 10gを加え、かたいメレンゲを作る。
8.5に7をひとすくい入れよく混ぜる。
9.残りのメレンゲを加え、泡を消さないように混ぜる。
10.9に薄力粉 50gとベーキングパウダー 1gをふるいながら入れる。
11.サックリと混ぜあわせる。
12.アイスクリームコーンに11を入れる。アイスクリームコーンのフチに近くまで生地を広げ、真ん中を少し盛り上げておく。
13.170度に予熱しておいたオーブンで20〜26分焼く。
14.竹串を刺して何もついてこなければ焼き上がり。
チョココーティングを作ります。
15.耐熱ボウルにホワイトチョコレート 60gを入れる。
16.600wの電子レンジに40秒かける。
17.ひと混ぜする。
18.600wの電子レンジでさらに20秒加熱する。
19.混ぜる。足りない場合は、電子レンジ10秒ずつ追加加熱。
20.完全に溶けたら、サラダ油 小さじ1を加え混ぜる。
21.カップケーキの直径ほどの器に20を移し替える。
22.14を21に付け、全体的にコーティングする。ホワイトチョコレートが余ったら上からかけてもいい。
23.好みのアラザンなどでデコする。アイスクリームが流れたようなデコにすると完璧!
24.ダイニングテーブルにさり気なく置く。「アイス溶けちゃってるよ〜!」と家族が叫んだら、完璧!
冷蔵庫に入れるとアイスクリームの溶けた感がなくなり、チョコレートコーティングされた、 ただのカップケーキになっちゃうので気をつけて!アイスクリームコーンがカップケーキ生地で湿気るとサックリ感がなくなりますが、それはそれでおいしいかも。

Easy&delicious recipe of healthy vegetable cake!
Not sweet, a little bit salty and lots of vegitables "cake salé" in a small cupcake pan.
It's best when it's freshly-baked, but it still tastes good on the next day if you cover it with foil and warm it in the oven.

「ケークサレ」をパウンドではなく、小さめのベーキングカップに入れて焼いてみました。
多くは、パウンド型で焼いて、スライスして食べると思いますが、小さめに焼くとそのままプレゼントにもいいし、なにより焼く時間が短いのがいいです^^
たまには甘くないケーキも◎焼きたてが美味しいですが、トースターでアルミホイルを被せて温めると翌日もとても美味しく食べることが出来ます♪

【Ingredients】7 (5cm/2inch) Baking cup
100g(3.5oz)Cake flour
3g(0.1oz) Baking powder
2 eggs
60g(2.1oz) Milk
60g(2.1oz)Vegetable Oil
1/4tsp salt
1/4tsp pepper
220g(7.8oz)Your favorite vegetables(including topping)
※Boil broccoli and asparagus when you use them.
Cut the vegitables into small pieces.
180g(6.3oz)bacon
30g(1oz)cheese
【Directions】
①Boil the vegitables and cut them into small pieces.
Slice the bacon into thin pieces and fry. Dice the cheese. (small)
②Crack an egg into a bowl and beat it with a whisk.
③Add milk, salad oil, salt and pepper and mix.
④Add shifted cake flour and baking powder, and mix lightly. (do not mix too much)
⑤Add the vegitables and the bacon to ④ and mix lightly.
(leave some vegitables and bacon for topping)
⑥Pour the mixture into the pans and put on the left vegitables and bacon for topping.
⑦Preheat the oven at 180°C and bake them for 12~14 min and serve!
memo
You can use any vegitables you like.
Cherry tomatoes and broccoli can make the cake colorful.
The bacon will taste better with salt.
(if you use strongly salted one, you don't need to add salt)
【材料】5cm位の大きさのベーキングカップなど7個分
薄力粉 100g
ベーキングパウダー 3g
卵(M)2個
牛乳 60g
サラダ油 60g
塩 小さじ1/4
胡椒 小さじ1/4
お好みの野菜など 220g
(トッピングも含む)
ベーコン 180g
プロセスチーズ 30g
【作り方】
①野菜を茹でて小さく切っておく。ベーコンは細く切って炒めておく。チーズは小さ目のサイコロ状に切る。
②ボウルに卵を割り入れ、ホイッパーで混ぜたら、そこに牛乳を加えて混ぜ、サラダ油も加えて良く混ぜる。
③塩、胡椒も加えて混ぜる。
④薄力粉とベーキングパウダーをふるって加えて、さっと混ぜる。(混ぜすぎないこと)
⑤ここに、トッピング用の野菜とベーコンを残して、残りを全部加えてさっと混ぜる。
⑥ベーキングカップに生地を入れたら、上に残しておいた野菜類をトッピングする。
⑦180℃に予熱したオーブンで12~14分ほど焼いて出来上がり。
●memo
野菜はお好みのものでどうぞ。
プチトマトやブロッコリーが入ると彩りよく出来ます。
ベーコンは加えたほうがより美味しい。塩分の強いベーコンの場合は塩は加えなくてもok。
