又到聖誕又到聖誕，食酒店自助餐是很多港人的指定聖誕節目。雖然新冠肺炎疫情下，2020年聖誕食肆晚市堂食無望，但仍打算來個酒店staycation套餐，食一輪早、午市自助餐來慶祝的你，不妨聽聽兩位前酒店員工分享，酒店自助餐的中伏位及奇趣。
說到自助餐的回本食物，飲食業年資達30年、曾任職不同等級酒店餐廳經理的一條哥說：「回本首選一定是刺身生蠔，熱食的話便是蒸魚。另外，好一點的酒店會提供燉湯，例如螺頭雞片湯甚至燕窩，當然不是叫你去喝番茄忌廉湯。」但一條哥補充，一分錢一分貨，三四星級酒店一定會將貨就價。曾任職酒店廚房10年的光頭仔，對回本焦點海鮮凍盤便有所保留，因為蟹腳生蠔也有平貴之分，而酒店自助餐大部份也是用冰鮮海鮮：「冰鮮的要解凍，人手問題為求速度，有些廚房的做法是直接放在水中融雪，或放在室溫閑置半天，一定會留有雪藏味。」像芝士焗龍蝦便是用重重的芝士和芥辣味，去掩蓋雪藏龍蝦不新鮮的味道，一條哥說：「通常三四星級酒店便會這樣，掩眼法般令你食得下去，還有飽肚感。雪藏海鮮是沒有鮮甜味的，如果是新鮮貨會清蒸或白烚，不用這種做法。」
