我明,我真係明,款頭改一改,接受程度係會唔同咗,例如我自己唔食茄子,但係當佢個形態變成魚香茄子,我又真係會食架喎。

粟米牛蒡湯
材料:
牛蒡2支
南瓜200克
粟米1條
南杏20粒
無花果4粒
排骨頭450克
處理:
1. 大火在鑊中煲滾1鑊水,排骨出水2分鐘,清洗乾淨。
2. 南瓜,去皮去籽,洗乾淨,切一舊舊,放入煲。
粟米,去皮,洗淨,切一舊舊,放入煲。
南杏,清水浸5分鐘,洗淨,放入煲。
無花果,洗淨,1開2,放入煲。
3. 牛蒡,開住水喉,用乾淨的百潔布輕手擦乾淨表皮,用生果刀背輕手刮乾淨表皮,清水洗乾淨,切細粒,放入煲。
4. 在煲內加入水4升。
烹調:
1. 大火煲滾。
2. 滾起後,轉中慢火,煲1小時半。
3. 完成,可享用。
Corn soup with burdock root & spare ribs
Ingredients:
Greater burdock 2 logs
Pumpkin 200g
Sweet corn 1 No.
South apricot kernels 20 Nos.
Dried figs 4 Nos.
Pork bones 450g
Preparation:
1. Heat up a wok of water at high flame. Soak the pork bones for 2 minutes. Rinse thoroughly.
2. The pumpkin, get it peeled and remove seeds. Rinse and dice it. Put into pot.
Sweet corn, remove skin. Rinse and dice it. Put into pot.
South apricot kernels, soak in tap water for 5 minutes. Rinse it. Put into pot.
Dried figs, rinse it, divide each fig into 2 shares. Put into pot.
3. Greater burdock, wash it with a scouring pad under running tap. Use a fruit knife turning up side down to scratch the skin of burdock lightly. Rinse and dice it. Put into pot.
4. Put water 4L into pot.
Steps:
1. Heat up at high flame.
2. Turn to medium~low flame after boils up. Boil for 1 5 hours.
3. Complete. Serve.

印度椰子栗子排骨湯
材料:
印度椰子1個
合掌瓜1個
栗子15粒
急凍排骨1磅半
粟米1支
無花果4粒
處理:
1. 急凍排骨,清水解凍。
2. 排骨解凍後,用粗鹽醃1小時以上,去除雪味、腥味及加入少許鹹味,放入雪櫃。
3. 排骨,大火在煲內煲滾水1升,出一出水。
4. 無花果及栗子,清水浸幾分鐘。
5. 粟米,去皮。
6. 粟米、合掌瓜及印度椰子,清水沖洗乾淨。
7. 印度椰子,用菜刀尖,小心1開2,聞一聞是否有香味,清水沖乾淨,切一片片。
8. 粟米,切細舊。
9. 合掌瓜,1開4,去芯。
10. 無花果及栗子,清水沖洗乾淨。
11. 排骨已出水,倒去水分,清水沖洗乾淨,擎乾水。
12. 洗乾淨煲。
烹調:
1. 所有材料,放入煲內。
2. 排骨,剪去肥膏,放入煲內。
3. 加入清水1.5升。
4. 放上爐,大火滾起。
5. 湯滾起後,轉中慢火,煲40分鐘。
6. 湯已煲了40分鐘,繼續用中慢火煲40分鐘。
7. 湯已煲好。
8. 完成,可享用。
Chestnut pork ribs soup with Indian coconut
Ingredients:
Indian coconut 1 No.
Chayote 1 No.
Chestnuts 15 Nos.
Frozen pork ribs 1.5 lb
Sweet corn 1 No.
Dried figs 4 Nos.
Preparation:
1. Frozen pork ribs, defrost with tap water.
2. Season the pork ribs with cooking salt for an hour after defrost, to remove unpleasant smells and tastes, and add some salty tastes. Put in refrigerator.
3. Pork ribs, heat up water 1L in pot, soak the pork ribs for 2 minutes.
4. Dried figs and chestnuts, soak in tap water for several minutes.
5. Sweet corn, get it peeled.
6. Sweet corn, chayote and Indian coconut, rinse with tap water.
7. Indian coconut, divide it into 2 shares with chopper carefully, check if it is fresh with your nose. Rinse with tap water, slice it.

11. Pork ribs have been soaked, pour away water, rinse with tap water. Hang dry.
12. Rinse a pot.
Steps:
1. Put all ingredients into pot.
2. Pork ribs, cut the fat, put into pot.
3. Put water 1.5L.
4. Heat up at high flame.
5. Soup has been boiled up, turn to medium ~low flame, boil for 40 minutes.
6. Soup has been boiled for 40 minutes, continue to boil for 40 minutes.
7. Soup has been boiled well.
8. Complete. Serve.

馬豆又名豌豆,跟我們常吃的豆苗屬同一株植物。
當豆苗生長時,我們先吃其嫩葉及豆莢,即荷蘭豆。
荷蘭豆老了,可從豆莢中剝出青豆;如讓荷蘭豆繼續生長,
便會長出綠豌豆,最後是黃豌豆,亦即馬豆。
馬豆的食療價值高,其高纖維含量能幫助防止餐後血糖迅速飆升,但有尿酸者則少吃為妙。
廣東人喜用馬豆做椰汁馬豆凍糕。
現今的椰汁馬豆糕,只有其形沒有其味,除了要買印度馬豆,優點是鬆化、易腍,價錢適中,另外,椰汁要買鮮榨,花奶(evaporated milk)要用三花牌全脂淡奶,奶味香濃。準備好馬豆,大家一起來做這個有復古味的椰汁馬豆糕吧!
材料(6人用):
1.印度馬豆 55克
2.粟粉 63克
3.三花牌全脂花奶 1/2杯
4.新鮮椰汁 270克
5.砂糖 75克
6.鹽 1/8茶匙
7.水 1 1/4 杯(開粟粉用)
8.水 7杯(烚馬豆用)
9.冰水 1杯(浸凍糕盤用)
做法:
1.用水浸馬豆3小時。
2.在一隻高身煲內放入7杯水,大火燒滾。
3.轉中火,放入馬豆,不要上蓋,烚馬豆50分鐘,熄火。
4.試吃馬豆,仍然太硬,多煲10分鐘。
5. 用凍開水沖洗馬豆,留在筲箕內盡量瀝水。
6.如新鮮椰汁已冷藏成冰,先用小火把椰汁煮開(切忌大火)。
7.在一隻深碗內放入粟粉,用1 1/4 杯水開粟粉,直至粟粉完全溶掉。
8.粟粉水以密篩過濾,以防有粉粒。
9.在一中型煲內,中小火煮溶砂糖、鹽及花奶,糖溶後加入椰汁,轉小火,攪勻。
10.這時倒入粟粉水,繼續用小火煮,並不停攪拌直至沒有粉粒,需時約7分鐘,吃起來才會細滑。
11.當糕漿開始滾時,繼續煮2分鐘,並不停攪拌粟粉漿,這樣馬豆糕做好後,便不會出水。
12.放入馬豆,繼續攪勻1分鐘後熄火。
13.將糕盤(7.6厘米乘20厘米)浸入冰水後拿出,不要抹乾。
14.將糕漿倒入糕盤裏,糕面掃平,待糕漿轉涼後,放入雪櫃3小時,便可食用。
