清蒸黃祥魚:
材料:
黃祥魚1條
蔥1條
薑1小舊
紅辣椒1隻
處理:
1. 刮淨魚鱗,去除魚血,清水沖乾淨,擎乾水,放碟上。
2. 蔥尾,切段,放魚下面。
蔥頭,切絲,上碟用。
3. 薑,切絲,放魚身上。
4. 辣椒,切粒。
烹調:
1. 煲滾一鑊水,大火蒸魚12分鐘。
2. 魚蒸好,倒去魚水。
3. 蔥及辣椒放上魚面。
4. 灒滾油在魚上。
5. 倒去碟上的水分。
6. 加入生抽。
7. 完成。
Steam scomberoides:
Ingredients:
Scombroides 1 No.
Green onion 1 No.
Ginger (small) 1 No.
Red chili 1 No.
Preparation:
1. Scale the fish. Remove the blood on fish. Rinse thoroughly and hang dry. Put on plate.
2. Divide the green onion into 2 equal lengths. The root end, get it shredded for serving purpose.
The rest of green onion, cut into lengths, to be put under the fish on plate for steaming.
3. Ginger, get it shredded to be put on fish.
4. Red chili, get it diced in cubes.
Steps:
1. Boil up a pot of water. Steam the fish at high flame for 12 minutes.
2. Pour away water on plate after steaming well.
3. Green onion and red chili are to be put on fish.
4. Pour hot oil onto fish.
5. Pour out the excess water on plate.
6. Put light soya sauce.
7. Complete. Serve.

蒜蓉蒸元貝
材料:
扇貝4隻
蒜頭1個
粉絲1札
芫荽1棵
辣椒仔1隻
處理:
1. 粉絲,清水浸軟。
2. 用小刀貼住殼邊起出元貝。
3. 元貝、裙邊及肉,輕手,清水洗乾淨。
4. 元貝殼,洗刷乾淨。
5. 蒜頭,去皮,洗乾淨。
6. 辣椒仔,洗乾淨,切去頂部,去籽,切碎。
7. 芫荽,洗淨,切碎。
8. 蒜頭,切碎,放碗中。
9. 大火在鑊中燒熱油2湯匙。
10. 蒜蓉內,加入調味料:
a. 糖少許
b. 鮑魚汁少許
11. 油已燒熱,灒油落蒜蓉。
12. 加入少許生粉,攪勻蒜蓉。
13. 剪碎粉絲。
14. 元貝殼,放好在碟上。
15. 放少量粉絲在殼上。
16. 裙邊及元貝,放回在殼內。
17. 蒜蓉及辣椒粒,放在元貝上。
烹調:
1. 大火煲滾1鑊水。
2. 大火蒸5分鐘。
3. 元貝已蒸好。
4. 完成,可享用。
Scallops with garlic sauce
Ingredients:
Scallops 4 Nos.
Garlics 1 No.
Vermicelli 1 No.
Coriander 1 No.
Chili 1 No.
Preparation:
1. Vermicelli, soften by soaking in tap water.
2. Use a small knife to take out scallop from shell.
3. Rinse scallops lightly.
4. Shell of scallops, brush it.
5. Garlics, get them peeled. Rinse them.
6. Chili, rinse it. Remove the seeds. Chop well.
7. Coriander, get it rinsed and chopped.
8. Garlics, chop well. Put in a bowl.
9. Heat up oil 2 tbsp at high flame in wok.
10. Put seasoning in garlics:
a. Sugar little
b. Abalone sauce little
11. Oil has been boiled up, pour on the garlics.
12. Put little tapioca starch on garlics, mix well.
13. Vermicelli, cut well.
14. Shell of scallops, put on plate.
15. Put little vermicelli on the shell.
16. Put scallop on shell.
17. Garlic sauce and chili cubes, put on top of scallops.
Steps:
1. Heat up a wok of water at high flame.
2. Steam scallops at high flame for 5 minutes.
3. Scallops have been steamed well.
4. Complete. Serve.
