材料Ingredients(八個份量/8 buns):
三百克高筋麵粉 300g bread flour
七十毫升清水(湯種用的)70ml water (For yudane mix)
八十毫升清水(撈麵份的)80ml water (For flour mix)
一隻雞蛋 (打發好)1 egg
七克 即溶酵母 7g instant yeast
二十克奶粉 20g milk powder
八克吉士粉 8g custard powder
四十五克白砂糖 45g sugar
六分一茶匙鹽 1/6tsp salt
二十克室溫無鹽牛油 20g unsalted butter
以下是菠蘿皮的材料 Ingredient for the topping:
一百零五克低筋麵粉 105g all purpose flour
半隻蛋黃,大約十二克 1/2 egg (12g)
四分一茶匙梳打食粉 1/4tsp baking soda
四分一茶匙氨粉(臭粉)1/4tsp food grade ammonia bicarbonate
五十五克無鹽牛油 55g unsalted butter
一湯匙鮮奶 1tbsp milk
六十克白砂糖 60g sugar
半茶匙清水(氨粉用) 1/2tsp water
