夏日宜吃酸味水果
春天飲食宜甘不宜酸,來到夏天是時候調整飲食餐單了,夏天天氣炎熱,人體出汗多易耗氣傷津,應該適量食用酸味食物,因為酸性收斂,可預防流汗過多而耗氣傷陰,而吃酸味食物時口水分泌增加,又能達生津止渴、健胃消食的功效,所以在夏天可以多進食酸味水果,選擇時可留意水果的寒熱平屬性,以配合自己的體質,例如身體偏寒的人多選擇屬性溫熱的水果,身體偏熱的人多選擇屬性寒涼的水果,盡量令身體保持平衡狀態就是養生之道。
石榴 — 性熱,味甘酸,具生津止渴、澀腸止瀉、收歛固澀作用,適合口舌乾燥、時有乾咳、腹瀉者食用。惟感冒咳嗽、糖尿病患者不宜多吃。
番石榴-性溫,味酸,清熱止瀉,適合腹瀉、糖尿病患者食用。
檸檬 — 性微溫,味甘酸,能開胃消滯、生津止渴、消暑、安胎,能紓緩炎夏無胃口及消化不良情況,亦有潤膚及改善色斑等美顏功效。
菠蘿 — 性平,味甘酸澀,具有消暑解渴、消食止瀉的作用,尤其進食太多肉類和肥甘厚味的食物,吃菠蘿可以消滯、助消化及利尿。惟糖尿病患者不宜進食。
士多啤梨 — 性涼,味甘酸,能消暑清熱、生津止渴,能紓緩喉嚨乾、喉嚨痛或身體偏熱症狀。惟脾胃虛寒、容易胃痛、腹瀉者不宜多吃 。
奇異果 — 性寒,味甘酸,能清熱生津、健脾、利尿,紓緩無胃口、消化不良、欲吐、痔瘡等症狀。注意女士脾胃虛寒容易腹瀉、有寒性痛經不易多服。
山楂 — 性溫,味酸,能開胃助消化及降血脂,對於食滯及消化不良都非常有效。注意氣虛體質,又或是胃酸分泌較多的人,喝得太多反而會引起胃痛等症狀,所以最好還是在飯後、吃得太多肉後或是覺得有滯意時才食用。

Saliva secretion increases when you eat sour food, and it can achieve the effects of relieving thirst, strengthening the stomach and aiding digestion. For example, people with cold body types should choose fruits with warm and hot nature, and people with hot body type should choose fruits with cold and cool nature. Keeping the body in a balanced state is one way to keep healthy.
Pomegranate- hot in nature with a sour and sweet taste. Helps to promote fluid production and relieve thirst, and relieve diarrhea. Suitable for dry mouth and tongue, occasional coughing, and diarrhea. Not suitable for those suffering from flu and cough, or those with diabetes.
Guava- warm in nature with a sour taste, can clear heat and relieve diarrhea. Suitable for those with diarrhea or diabetes.
Lemon- slightly warm in nature with a sour taste, can stimulate appetite and aid digestion, promote fluid production and quench thirst, clear summer heat, and stabilise pregnancy. It alleviates summer heat related symptoms such as lack of appetite and indigestion, and it can also moisten skin and improve discoloration on skin.
Pineapple - mild in nature with a sweet, sour and astringent taste. It can clear summer heat, relieve thirst, aid digestion and relieve diarrhea, especially good for after consuming too much meat or oily and fatty food. Eating pineapple can relieve indigestion and promote diuresis. It is not suitable for diabetic patients.
Strawberry- cool in nature with a sour and sweet taste, can dispel summer heat and clear heat, promote fluid production and quench thirst. Eating strawberries can alleviate dry throat, sore throat or overall heat-related symptoms in the body. Those with asthenic cold stomach and spleen, prone to abdominal pain and diarrhea should eat less.
Kiwi- cold in nature with a sour and sweet taste, and can clear heat and promote fluid production, and quench thirst. It alleviates lack of appetite, indigestion, nausea, and hemorrhoids. Note that it is not suitable for ladies with asthenic spleen and stomach, prone to diarrhea and has cold type menstrual pain.
Chinese Hawthorn- warm in nature with a sour taste, and helps to stimulate appetite, aid digestion and lower blood lipids. It is especially effective for those with indigestion from overeating. Those with qi deficiency body type or those with too much gastric acid secretion may have abdominal pain if they have too much Chinese Hawthorne. It is best to eat it after meal, after eating a lot of meat or when you feel indigestion.

雖然未食「五月糉」,但也彷彿呼吸到炎夏的暑氣。天氣悶熱令人胃口變差,外出只想吃喝各式甜品、特飲,回家時又按捺不住從冰箱取出冰凍汽水大口大口地喝,這都是因為夏天出汗較多、易耗氣傷津,會出現口渴、口乾等症狀,為了解暑就容易一時吃太多生冷。中醫理論指出「汗為心之液」,所以初夏時節需要注意養心,也要避免滋膩食物。另外夏天亦容易引發皮膚病,可適量食用清熱利濕的食材,忌食發物。天氣再熱,都要每天按時進食三餐保護脾胃運作呢!
夏日宜適量進食:
夏季當造瓜果-冬瓜、西瓜、青瓜、菠蘿、節瓜、絲瓜
苦味食材-苦瓜、芹菜、萵筍、枸杞葉
酸味食材-菠蘿、奇異果、山楂、檸檬、百香果、芒果
養心食材-紅豆、草莓、紅葡萄、紅棗
寒性蔬菜- 芽菜、馬蹄、番茄、白菜、白蘿蔔、菠菜
夏日健脾胃養心餐單
早:烚番薯 / 瑤柱小米粥 / 番茄湯米粉
午:銀魚仔蒸肉餅 / 咕嚕魚塊 / 絲瓜豆腐泡飯
下午茶:一碗份量兩款水果,例如車厘茄、櫻桃、草莓、紅葡萄等等
晚:涼拌苦瓜 / 蒜蓉炒紅莧菜 / 粉葛紅蘿蔔綠豆湯
建議每天飲用米水,全日任何時候皆可飲用。有助消化、轉化並吸收營養、排出多餘水分!
Summer Diet Pointers
It may not quite be time to eat rice dumplings yet, but you can definitely feel the heat in the air. Hot weather may decrease your appetite. You might crave for desserts and specialty drinks while you are out, and head straight to the fridge for a cold soda when you are home. You are thirsty and have dry mouth because you sweat too much in summer, resulting in loss of qi and fluid. You might try to cool down by eating many cold/raw food. Chinese medicine believes that ‘sweat is the heart’s fluid’. So it is important to calm your mind and avoid nourishing food in early summer.
Otherwise, skin allergies are prone to act up in summer. Appropriately consume ingredients that can clear heat and promote diuresis as well as avoid stimulating foods. No matter how hot it is, remember to eat three meals on time to protect spleen and stomach.
Foods to eat appropriately in the summer:
Seasonal melons and fruits- winter melon, watermelon, cucumber, pineapple, hairy gourd, luffa
Bitter- bitter melon, celery, lettuce, wolfberry leaves
Sour- pineapple, kiwi, hawthorn, lemon, passion fruit, mango
Heart nourishing ingredients- red beans, strawberries, red grapes, red date
Cold in nature- sprouts, water chestnuts, tomato, bak choy, white radish, spinach
Summer menu to strengthen the spleen and stomach and calm the mind
Breakfast: steamed sweet potato / dried scallops millet porridge / tomato soup rice noodles
Lunch: steamed meatloaf with ice fish / sweet and sour fish / tofu soup rice with luffa
Afternoon Tea: two types of fruits in a bowl, such as cherry tomatoes, cherries, strawberries, red grapes, etc.
Dinner: cold bitter melon / fried red amaranth with garlic / mung beans soup with carrot and kudzu
It is recommended to drink rice water at any time in the day to improve digestion and relieve water retention.

材料:
紅茶葉2茶匙
烹調:

6. 舂檸檬10下。
7. 倒出檸檬汁。
8. 取出一個一公升容器。
9. 放檸檬汁入容器內。
10. 倒入紅茶。
11. 加冰及凍水,茶味濃度自己調校。
12. 加入糖漿。
13. 加入冰粒。
14. 加入檸檬片,放在檸檬茶上面。
15. 放長柄不鏽鋼羹及飲管,完成。
Iced lemon tea:
Ingredients:
Ceylon tea 2 tsps
Steps:
1. Put 500ml water into mug.
2. Microwave for 2 minutes.
3. Cool down Ceylon tea.
4. Slice the lemon.
5. Get a non~fragile container ready.
6. Squeeze lemon.
7. Pour out lemon juice
8. Prepare a 1L container.
9. Put lemon juice inside container .
10. Add Ceylon tea.
11. Add ice and cold boiled water according to personal favorite.
12. Add syrup.
13. Add ice cubes.
14. Put two lemon slices on top of tea.
15. Put a long~handled spoon and a straw in tea. Serve.

1 / 糖加水用細火煮溶,煮10分鐘成糖漿,待涼
2 / 檸檬切去其中一個尖位並留起尖位待用
3 / 檸檬去肉取汁,取100ml 檸檬汁隔篩拌入糖漿內
4 / 封上保鮮紙放入冰格雪三小時至半凝固狀,取出把冰粒打碎
5 / 蛋白打至企身,輕輕拌入檸檬碎冰內
6 / 封上保鮮紙放入冰格雪兩小時至半凝固狀,取出攪拌
7 / 雪葩放入檸檬內並蓋上檸檬蓋,雪至凝固即成
